This Italian Wine Cookie recipe was handed down through many generations. Thay are a crisp, not-too-sweet, EASY TO MAKE cookie that are great with coffee or tea.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
- Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.
- Bake at 350 degrees F (175 degrees C) for 25 minutes or until slightly brown. After cookies cool they should be hard and crisp.

- In a large bowl, whisk 1 cup sugar, oil, wine, aniseed and salt until blended. Gradually stir in enough flour to form a soft dough. Cover; let rest 1 hour., Preheat oven to 350°. Shape level tablespoons of dough into 6-in. ropes. Shape each into a ring, pinching ends together to seal. Dip tops of cookies into remaining sugar. Place 1 in. apart on greased baking sheets., Bake until golden brown, 20-25 minutes. Remove from pans to wire racks to cool.

- Preheat the oven to 375 degrees F (190 degrees C).
- Beat butter, white sugar, and brown sugar together in a bowl with an electric mixer until smooth, 2 to 3 minutes. Add egg and vanilla extract; beat until combined. This is a recipe my grandmother from Italy passed down. It is similar to other Italian Wine Cookie recipes.

- Warm the wine and oil over medium heat. Remove from heat and add 12 cups of flour. Stir in water, 1/2 cup at a time, until the dough comes together in a soft ball. Knead well.
- Roll the dough into a snake and cut into two inch pieces. Run each piece over a basket or use a fork to get ridges in the dough.
- Heat oil for frying in a large pot. Deep fry cookies until medium brown. Drain on paper towels.
- Warm honey in a frying pan until very liquid. Roll the cookies in the honey, and then place in a dish. Allow the honey to cool and serve.

- Preheat the oven to 375 degrees.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate larger bowl, whisk together the sugar and egg until well combined. Stir in the olive oil and wine. Slowly add the flour mixture until well combined, kneading slightly until the dough is easy to handle and medium-soft.
- On a clean surface, use your hands and roll the dough into 1/2-inch-thick, cigarlike rolls. Cut each cigar into 6-inch pieces, folding each piece into a loop-shape. Press the dough with fingers to seal together. Place on a parchment-lined rimmed baking sheet.
- Bake for 15 to 20 minutes or until slightly golden. Remove to a cooling rack and cool completely.
- If you wish to ice them, whisk 2 tablespoons of milk and 1 tablespoon of lemon juice into 1 cup confectioners' sugar. It should be the consistency of thick whipping cream. Dip one side of the cookie in the glaze and let dry.

- Preheat the oven to 350 degrees. Spray two baking sheets with cooking spray. Sift the flour, baking soda, cinnamon, ginger, cloves and salt together and set aside.
- In a deep bowl, cream the butter and the dark-brown sugar together, mashing and beating them against the sides of the bowl until they are thoroughly blended. Beat in the egg, then add the flour mixture 1/2 cup at a time, stirring well after each addition. Beat in the wine and chopped almonds.
- With your hands, vigorously knead the dough in the bowl until it can be gathered into a somewhat firm, compact ball. If the dough then seems too soft, knead in up to 1/4 cup more flour, adding it a tablespoon or so at a time.
- On a lightly floured surface, roll the dough into a rough circle about 1/4 inch thick. With a cookie cutter or the rim of a glass, cut it into 2-inch rounds. Arrange the rounds about 1 inch apart on the buttered baking sheets. Then gather the scraps of dough into a ball, roll it out into another circle, and cut out rounds as before.
- Press a blanched almond half lightly into the center of each Soetkoekie and brush the entire top surface of the cookie with the beaten egg white-and-water mixture.
- Bake the cookies in the middle of the oven for 15 minutes, or until they are crisp and firm to the tough. With a wide metal spatula, transfer the cookies to a rack to cool. The cookies will keep for up to two weeks in a tightly covered jar.

SAVOURY RED WINE COOKIES
A flavorful "cookie" to enjoy with that special glass of Wine. Recipe came from the magazine distributed at the liquor store. Great for making up a batch and giving to holiday hosts with a bottle of red. (recipe calls for 2 kinds of paprika, I only used regular paprika, old white cheddar cheese, hard margarine in place of butter, and an all-purpose gluten free flour blend) Dough and baked cookies both freeze well

- use hands, mixer or food processor to combine all ingredients except the tomatoes.
- Mix to blend and form into a supple dough.
- Remove the dough to counter and knead in tomatoes.
- Shape into a log and wrap tightly in foil or plastic wrap and chill at least 30 minutes.
- Preheat oven to 400°F
- Use a sharp, thin knife to slice the dough into 1/4' rounds.

WINE COOKIES
From Jo Ann Shirley's 1978 Cakes and Cookies cookbook. These use sweet wine to flavor the dough and are cut into little rounds. You could leave the nuts off the top if you want to cut down the preparation time or if you just don't like nuts.

- With electric mixer cream butter and sugar until light. Add egg yolks and anise extract. Mix until blended.
- On low, add flour and wine alternately and mix well. Mix in chopped almonds to form a soft dough.

- Place on a cookie sheet, leaving 2 inch space between. Press slightly to flatten cookies.

ANGIE'S WHITE WINE COOKIES

- Pre-heat oven to 400 degrees. In a large bowl mix the flour, baking powder and sugar, make a "well in the center" and pour the wine and oil in. Mix well. Roll pieces of the dough together to make a long 4 inch piece, about the size of your finger. Then turn it to look like a donut. Mix the last cup of sugar and cinnamon and place on a dish. Dip one side of the cookie into it, then place on a cookie sheet and bake at 400 degree's for 15 minutes until done. Check often. Preparation time: 45 minutes

- Preheat oven to 340 degrees F.
- In a large bowl, beat together wine, sugar, salt, oils, cinnamon, cloves & 2 tablespoons sesame seeds.
- Dissolve baking soda in lemon juice & stir that blend into the mixture in the large bowl.
- Sift or whisk flower & baking powder together, then add 5 cups of this mixture to the large bow with the initial ingredients, mixing with handsl
- Continue adding flour & kneading until dough doesn't stick to the hands ~ Don't use all the flour if it isn't needed! Knead until dough is soft, about 8 minutes.
- TO MAKE SPIRALS ~ Take a piece of dough about the size of a small egg & squeeze a few times to soften. Scatter a few sesame seeds on the work surface & roll dough through seeds into a strip about 8 inches long. With strip on work surface, wrap into a spiral shape & tuck the end under the cookie.
- TO MAKE RINGS ~ Take a smaller piece of dough & roll out as above into a strip about 7 inches long. Form into a ring & pinch ends together with wet fingers.
- TO MAKE 'S' SHAPES ~ Take a larger piece of dough & roll out as above into a strip about 10 inches long. Working from both ends, wrap spirals in opposite directions until they meet in the middle.
- Place cookies on a nonstick or lightly oiled baking sheet & bake about 30 minutes.

GINGERBREAD MOUSSE WITH RED WINE, GLAZED BABY PEAR, AND WARM GINGERBREAD COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone mat.
- Whisk the eggs with the sugar in a bowl. Add the almond paste, vanilla and salt. Fold in the egg whites and the melted butter. Fold in the flour. Spread on baking sheet and bake for 7 minutes.
- Whisk the wine, egg yolks, and sugar in a bowl, and set over a saucepan with gently simmering water. Whisk until the mixture starts to thicken, and then add the bloomed gelatin. Add the gingerbread spice and zest and the melted nougat and chocolate. Add the rum and let cool.
- When the mixture is cool, fold in the whipped cream and fill mousse in pastry domes, covering the bottom of the dome with a layer of biscuit.
- Heat the pear juice, honey, red wine, star anise, cloves, and cinnamon in a saucepan over low heat. Add the pears and poach them in the liquid until tender. Transfer the pears to a board and cut them into slices that can be fanned.;
- Preheat the oven to 350 degrees F.
- Stir together the flour, baking powder, ginger, nutmeg, cloves, and cinnamon in a bowl. In another bowl, beat the shortening, molasses, sugar, water, egg, and vanilla until smooth. Gradually stir in the dry ingredients, wrap the dough in plastic, and chill in the refrigerator.
- Drop balls of dough on a cookie sheet and bake for 10 to 12 minutes.
ROMAN WINE-DUNKING COOKIES
Steps:
- Preheat the oven to 375 degrees F. Grease and flour two 10 1/2 x 15 1/2-inch cookie sheets. Combine the flour, sugar, and cinnamon in a large mixing bowl. Stir with a large fork. Pour in the oil and wine. Knead for 6 to 7 minutes, pinching and squeezing the dough through your fingers. Turn or scoop the dough our onto floured cutting board and finish kneading by hand until the dough has the consistency of modeling clay, 1 to 2 minutes. Make one at a time. With your fingers, pinch off a pecan-sized piece of dough. Roll it on a clean work surface into a snake 4 to 6 inches long. Lift the snake and join the ends, pinching to form a lifesaver. Gently flatten it with a rolling pin or your palm to a thickness of about 1/4 in. Transfer the ciambellina to the cookie sheet. Continue to roll out snakes and pinch them into lifesavers until the dough is used up. Bake until the ciambelline begin to color, 15 to 20 minutes. Turn them out onto a woden board or rack while still hot and let them cool until rock hard, about 1 hour.
WINE COOKIES
I found this recipe on a cooking site and tried them! This is a very good Italian cookie. I thought it wouldn't be sweet enough because there isn't much sugar in the recipe, but it did have a nice sweetness to it. I used a Chianti wine (very dry) and I rolled the cookies in turbinado (raw) sugar instead of granulated sugar. My cookies were slightly purple before cooking. Then they turned a nice golden brown while they were baking. The taste reminds me of a really good sweet bread. This is a very unique cookie and I'm glad I tried it! I added my photo!
