This is a lovely sponge cake that is reminiscent of the Deep South. May be cut into layers and filled and iced with lemon filling, or with whipped cream.

¾ cup cold water
3 egg yolks
3 egg whites
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ¾ cups sifted cake flour
1 teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat cold water and egg yolks together until mixture makes 1 quart--at least 10 minutes. Slowly add sugar and vanilla to egg yolk mixture, beating for at least 7 minutes more.
  • Sift the cake flour, baking powder, and salt together. Fold into the egg yolk mixture.
  • Beat egg whites until medium-stiff peaks form. Fold one third of the egg white mixture into the batter to lighten; fold in remaining egg whites. Pour batter into an ungreased tube pan.
  • Bake in preheated oven until cake springs back when lightly touched with a fingertip, about 50 minutes. Turn upside down to cool in pan for 1 hour. Loosen sides and coax from pan.

I don't know where this came from, but found it stuck in an old family scrap books. I don't make it very often because I can't stay out of it.

Number Of Ingredients 12

2 c cake flour
3 tsp baking powder
1 tsp salt
1 1/4 c sugar
3/4 c milk
1 tsp vanilla extract
2 eggs
baked on topping as follows
2 egg whites
1 c brown sugar
3/4 c pecans, chopped
1/2 c shortening

Steps:

  • 1. All ingredients should be at room temperature.
  • 2. Preheat oven to 350 degrees.
  • 3. Sift and measure flour.
  • 4. Add baking powder, salt, sugar, and sift again into large mixer bowl.
  • 5. Add shortening, milk, and vanilla. Beat 2 minutes.
  • 6. Add unbeaten eggs, and beat 1 minute more.
  • 7. Pour into greased 9 x 13" pan.
  • 8. BAKED ON TOPPING. Beat egg whites until stiff but not dry.
  • 9. Gradually add brown sugar and beat until well mixed.
  • 10. Spread over the top of the cake batter, sprinkle with nute and bake for 35 minutes.

This was my mother's recipe and one she used for fresh fruit rather than shortcake. It is also good just as is with a sprinkling of icing sugar. Has the added bonus of no extra fat and relatively healthy. Hope someone out there enjoys this.

1 1/2 cups cake flour (sifted before measuring)
1 teaspoon baking powder
1/2 teaspoon salt
3 egg yolks
3/4 cup cold water
1 1/4 cups sugar
3 egg whites
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 325 degrees.
  • 10 inch tube pan - UNGREASED).
  • Sift flour, baking powder and salt.
  • Beat egg yolks until frothy.
  • Add water and beat until the bowl is nearly full of liquid and bubbles are small.
  • Add sugar gradually.
  • Add dry ingredients slowly, beating as you do.
  • Beat egg whites until stiff peaks are formed.
  • Fold in thoroughly.
  • Bake 50 minutes.
  • Do not use a plastic bowl - a large metal one is best.
