  • Heat oil in a large skillet over medium-high heat. Add garlic and stir until golden, about 30 seconds. Add greens in batches, if necessary, and toss until just wilted, 2 to 4 minutes. Season with salt and pepper.

6 cups fresh baby spinach leaves
4 (5-ounce) sea bass fillets
4 teaspoons peeled and minced fresh ginger
2 teaspoons minced garlic
1/2 cup dry Marsala wine
8 teaspoons soy sauce
2 teaspoons sesame oil
1 lime, quartered
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Cut 4 (12-inch-square pieces) of aluminum foil. Preheat the oven to 400 degrees F.
  • Working with 1 foil sheet at a time, place the foil sheets on the work surface. Place 1 1/2 cups of spinach in the center of each foil sheet. Top with a sea bass fillet. Sprinkle with 1 teaspoon of ginger and 1/2 teaspoon of garlic, then drizzle 2 tablespoons of Marsala, 2 teaspoons of soy sauce, and 1/2 teaspoon sesame oil over the fish and spinach. Gather the foil sheets over the fish. Fold in the foil edges and pinch tightly to seal. Place the foil packages on a heavy large baking sheet.
  • Bake until the spinach wilts and the fish is just cooked through, about 10 minutes. Transfer the packages to wide shallow bowls. Cool 5 minutes. Open package and fold down to reveal fish, being careful of hot steam. Squeeze the lime juice over the fish. Sprinkle with the basil and serve.

1 pound spinach, washed well and drained, thick stems removed

Steps:

  • Put 1/2 inch water in a large, wide soup pot over high heat. When water boils, add garlic and ginger.
  • Add large handful spinach to the pot. Season lightly with salt and pepper, then twirl with tongs to barely wilt the spinach, about a minute or less. Using tongs, transfer to a serving bowl. Repeat until all the spinach is cooked.

10 ounces spinach leaves, washed and partly dried
1 tablespoon unsalted butter
1 tablespoon olive oil
2 -4 cloves garlic, minced
3 tablespoons minced fresh ginger
1/3 cup orange juice
1/2 teaspoon coarse salt

Steps:

  • In a large nonstick skillet, pile the spinach and turn the heat to high.
  • Using tongs, gently and continuously toss the spinach over the heat until it's all wilted (they'll turn a darker green), 2 to 3 min.
  • Don't overcook; they should collapse but still have some body.
  • Transfer them to a colander and let any excess liquid drip away.
  • Wipe the skillet clean if necessary.
  • In the same skillet, heat the butter and oil over medium-low heat.
  • When the butter is melted, add the garlic and ginger and sauté until softened and fragrant, about 2 min.
  • Add the orange juice, turn the heat to high, and reduce the liquid to a glazy consistency, no more than 1 min.
  • ;you'll have 1-1/2 to 2 Tbs.

1 tablespoon plus 2 teaspoons canola oil
1 small red onion, peeled and grated on a cheese grater
1 clove garlic, peeled and lightly smashed
Kosher salt
1/4 cup apple cider vinegar
3/4 pound spinach leaves, stemmed, washed and dried
3 eggs, hard boiled, peeled and chopped

Steps:

  • In a small skillet, heat 1 teaspoon of the canola oil. Add the onion and garlic clove and cook, stirring gently, for 2 minutes. Season lightly with salt. Discard the garlic clove. Whisk in the cider vinegar and add 1 teaspoon canola oil. Taste for seasoning. Remove from heat and set aside.
  • Place a large heatproof bowl over low heat and add the remaining 1 tablespoon canola oil. When the bowl is warm remove it from the heat and add the spinach. Season lightly with salt and toss with a spoon so the spinach gets coated with the oil and wilts slightly, 1 minute. The spinach should only be partially wilted and still appear somewhat raw. Pour off any water that might accumulate in the bottom of the bowl from wilting and stir in the onion and dressing from the skillet. Add chopped hard-boiled egg. Serve immediately.

2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh gingerroot
4-1/2 teaspoons plus 1 tablespoon reduced-fat butter, divided

1 tablespoon olive oil
1 package (6 ounces) fresh baby spinach

Steps:

  • Sprinkle salmon with 1/4 teaspoon pepper and 1/8 teaspoon salt; set aside., In a small saucepan, combine the marmalade, cream, soy sauce, ginger and 4-1/2 teaspoons butter. Bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 5 minutes; set aside., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. 1 to 2 tablespoons extra-virgin olive oil
Coarse salt
4 crosswise slices peeled, fresh ginger
1 fresh red or green chile or 1 dried red chile
1 to 1 1/2 pounds spinach, tough stems removed, leaves washed and dried

Steps:

  • Heat oil in a large wok or skillet over medium-high heat. Season oil with salt and add ginger and chile (if using a fresh chile, make sure to cut a slit in it to prevent it from bursting in the hot oil).
  • When ginger begins to sizzle, add spinach to skillet and toss, using tongs, to cook and evenly distribute flavor, until spinach is tender and wilted, 1 to 2 minutes. Serve warm or at room temperature.
