Steps:

  • Quarter, core and very thinly slice 1 small head green cabbage; transfer to a large bowl. Pour 4 cups salted boiling water over the cabbage and toss with tongs until wilted. Let sit 15 minutes. Drain, rinse and pat dry. Whisk 1/4 cup each white wine vinegar and olive oil, 2 teaspoons sugar, 1 teaspoon kosher salt and a few grinds of pepper in the bowl. Add the cabbage and toss well.

Steps:

  • In a saucepan bring vinegar and water to a boil with sugar, salt, and mustard and simmer, stirring occasionally, 3 minutes.
  • In a large heavy skillet heat oil over moderately high heat until hot but not smoking. Add mustard seeds and sauté until they begin to pop. Stir in cabbage and sauté, stirring, 1 minute. Add vinegar mixture and simmer vegetables 1 minute.
  • Drain vegetables in a large fine sieve set over a saucepan and transfer them to a bowl. Boil liquid over moderately high heat until reduced to about 3 tablespoons and stir into vegetables. Chill slaw, covered, at least 1 hour or overnight.

Steps:

  • In a medium bowl, mix together salt, coriander seeds, brown sugar, black peppercorns, garlic, and bay leaves. Rub salt mixture all over salmon fillets and place in a shallow baking dish; let stand at room temperature for 45 minutes. Rinse salmon and pat dry.
  • Preheat oven to 400 degrees.
  • Heat grapeseed oil in a large well-seasoned cast-iron skillet over medium-high heat. Add salmon, flesh side down, and cook until browned, about 3 minutes. Increase heat to high and carefully turn salmon. Transfer skillet to oven and cook for 4 minutes. Remove salmon from pan and let stand 3 minutes before serving with cabbage and potato; drizzle with coulis.

2 pounds precooked bratwurst, pricked with a fork
6 cups German beer
2 tablespoons caraway seeds
2 tablespoons coriander seeds
2 tablespoons yellow mustard seeds
2 large onions, sliced
One 6-inch hand ginger, sliced into rough coins
2 tablespoons canola oil
1/2 head red cabbage, thinly sliced
4 tablespoons honey
1/4 cup cider vinegar
Salt and freshly ground black pepper
1/4 cup Dijon mustard
8 soft hoagie rolls

Steps:

  • Put the bratwurst, beer, 1 cup water, the caraway, coriander, mustard seeds, onions and ginger in a medium stockpot. Bring to a simmer over medium heat and cook for 5 minutes. Cover, remove from the heat, and let stand 15 minutes.
  • Transfer the brats to a bowl. Strain the cooking liquid into another bowl, and discard the solids.
  • Heat the oil in a large saute pan over medium heat, add the cabbage and toss to coat. Add 1 cup of the strained bratwurst liquid, and cook until softened, stirring frequently, about 15 minutes. Add 2 tablespoons of the honey, the vinegar and some salt and pepper. Toss to coat, and cook another 5 minutes. Transfer to a bowl.
  • Preheat the grill to high, with direct and indirect heat. Grill the sausages over direct heat until the casings are crisp and golden brown on all sides, about 2 minutes per side. Move the brats to indirect heat, cover the grill, and cook another 5 minutes.
  • While the brats cook, whisk the mustard, the remaining 2 tablespoons honey, some salt and pepper and a few tablespoons of the bratwurst liquid in a small bowl; the mixture should be syrupy. When the sausage are done, remove them to a platter and brush with the glaze.
  • Split the hoagie rolls and grill cut-side down until toasted, about 30 seconds. Put a brat in each roll and top with some cabbage, then serve.

8 bone-in, skin-on chicken thighs (about 2 pounds)
1/4 teaspoon dried thyme
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1/2 small head red or green cabbage, thinly sliced
1 green or red apple, cored, halved and sliced
1/4 cup low-sodium chicken broth
2 tablespoons red wine vinegar
1 tablespoon packed light brown sugar
1/2 cup fresh flat-leaf parsley leaves

Steps:

  • Preheat the oven to 450 degrees. Season the chicken all over with the thyme, 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • Heat the oil in a large skillet over medium-high heat until very hot, but not smoking. Working in batches, add the chicken to the skillet, skin-side down, and cook, flipping once, until browned on both sides, about 3 minutes per side. Turn the heat down to medium if the skillet starts to get too dark. Transfer the thighs to a baking sheet and roast in the oven until no longer pink near the bone, 10 to 12 minutes more.
  • While the chicken bakes, add the cabbage, apples, 1/4 teaspoon each salt and pepper to the same skillet over medium heat. Cook, tossing, until slightly wilted, 2 to 3 minutes. Add the broth, vinegar and sugar and continue to cook until the cabbage is tender, the liquid has reduced slightly and the sugar dissolves, 2 to 3 minutes. Remove from the heat and stir in the parsley leaves. Season with additional salt and pepper.
  • Transfer the cabbage and apples and any juices in the skillet to a serving platter and top with the baked chicken thighs.

1 medium green bell pepper, finely chopped

3/4 c sugar
1 c white vinegar

1 1/2 heads red cabbage
1/2 cup olive oil
2 red onions, halved and thinly sliced
4 garlic cloves minced to a paste
1 T herbes de Provence or dried thyme
1 teas fennel seed
1/3 cup cider vinegar
1 heaping T sugar
1/2 lb. feta cheese
1/2 cup chopped fresh parsley
Salt and freshly ground pepper to taste

Steps:

  • Remove any wilted outer leaves from the cabbage heads. Quarter the heads and cut out the white core. Slide the quarters into thin strips. Heat the oil in a large pot over medium-high heat. Add the onions and saute until tender....about 3 minutes. Add the garlic and saute another minute. Add the herbes de Provence, fennel seed and cabbage and toss well to coat the strips with hot oil. Sprinkle the vinegar and sugar over the cabbage and continue cooking it, tossing it in the pot until the cabbage is wilted, about 6 minutes. Remove the cabbage to a larger bowl. Crumble the feta cheese into the cabbage, add teh parsley and toss well to combine. Season to taste with salt and pepper. Serve warm or at room temp.

1/4 cup molasses
1/4 cup olive oil
1 teaspoon ground allspice
1 teaspoon salt

6 semi-boneless quail*
For slaw:
3 tablespoons cider vinegar
2 teaspoons honey
4 bacon slices, chopped coarse
1 teaspoon caraway seeds, crushed lightly
3 cups very thinly sliced red cabbage
2 medium carrots, shredded fine
3 cups very thinly sliced Napa cabbage
4 scallions, sliced thin
*available at some butcher shops

Steps:

  • Make marinade:
  • In a small bowl whisk together marinade ingredients.
  • Rinse quail and pat dry. Arrange quail in a flat-bottomed dish large enough to hold them in one layer and add marinade, turning quail to coat well. Marinate quail, covered and chilled, turning them once or twice, at least 1 day and up to 2.
  • Prepare grill and bring quail to room temperature (about 30 minutes).
  • Remove quail from marinade, discarding marinade, and pat dry with paper towels. Season quail with salt and pepper and grill on an oiled rack set about 5 to 6 inches over glowing coals 3 to 4 minutes on each side, or until just cooked through. Meat should still be pink. (Alternatively, grill quail in batches without crowding in a hot oiled well-seasoned ridged grill pan.) Transfer quail as cooked to a plate and keep warm, covered.
  • Make slaw:
  • In a cup or very small bowl stir together vinegar and honey. In a 12-inch heavy skillet cook bacon over moderate heat, stirring, until crisp. Transfer bacon with a slotted spoon to a small bowl and pour off all but about 2 tablespoons bacon fat from skillet.
  • Heat bacon fat remaining in skillet over moderately high heat until hot but not smoking and cook caraway seeds, stirring, until fragrant, about 30 seconds. Add red cabbage, carrots, vinegar mixture, and salt and pepper to taste and sauté, stirring, until cabbage is just wilted, about 1 minute.
  • Remove skillet from heat and add Napa cabbage and scallions, tossing until cabbage is wilted slightly.
  • Divide slaw among 6 plates. Cut each quail into 4 serving pieces and arrange decoratively over slaw. Top salads with bacon.

I saw this recipe in a magazine and made a couple of changes. I like having the cabbage mix with the carrots because it adds color. Onions could also be added to this. I have had it in the fridge for several days and the cabbage has stayed nice and crunchy. It is a nice change from regular coleslaw.

1 pkg cabbage and carrots for coleslaw
1/4 c white wine vinegar
1/4 c oil--i used vegetable oil
2 tsp sugar
1 tsp kosher salt
1/8 tsp pepper--a few grinds if using a pepper mill

  • 1. Put cabbage mix into a large bowl.
  • 2. Pour 4 cups of boiling salted water over the cabbage and toss with tongs until starting to wilt. Let sit 15 minutes. I used about 2 tablespoons of kosher salt in the water.

  • Heat 1 tablespoon oil in heavy large skillet over high heat. Add mushrooms; saute until golden, about 4 minutes. Add wine and bring to boil, scraping up any browned bits. Transfer mushroom mixture to large bowl. Mix in 1/2 cup oil and vinegar. Season with salt and pepper. Heat remaining 2 tablespoons oil in heavy large saucepan over medium-high heat. Add bell pepper and onion; saute until tender, about 6 minutes. Add cabbage; toss until just wilted, about 2 minutes. Season with salt and pepper. Prepare barbecue (medium-high heat). Sprinkle salmon with salt and pepper. Grill until cooked through, about 3 minutes per side. Divide cabbage mixture among plates. Top with salmon. Spoon mushroom vinaigrette around; serve.

2 small heads shredded cabbage
2 cups chopped celery
3 tomatoes, diced
12 radishes, finely diced
2 cloves garlic, finely diced
Dressing:
1/3 cup cider vinegar
1/3 cup corn or canola oil
1/2 tsp finely ground basil
1/4 tsp finely ground oregano
salt and freshly ground pepper to taste

Steps:

  • In a large bowl, toss together chopped cabbage, celery tomatoes, radishes and garlic. Refrigerate for up to three hours. Just prior to serving, mix vinegar, oil and spices in a small bowl. Heat for 45 - 60 seconds in a small saucepan or in the microwave, until hot. Pour over cabbage salad, toss and serve immediately.
