This is super yummy and very easy to make, you can serve it with veggies or potatoes to round it out. I got it out of a weight watchers cookbook years ago I believe, but can't find the actual recipe, most of it is just by eye.

Number Of Ingredients 7

6 boneless skinless chicken strips
salt
pepper
thyme
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey

Steps:

  • Sprinkle salt, pepper & thyme evenly over both sides of chicken strips.
  • Add olive oil to pan and heat med-high.
  • When oil is hot, add chicken and fry both sides until chicken is cooked throughly
  • Remove chicken to plate and turn heat on high.
  • Add honey and vinegar to pan, stirring constantly until thickened.
  • Pour mixture over chicken and serve!

1 1/2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon olive oil
4 (4 ounce) boneless skinless chicken breast halves
2 tablespoons balsamic vinegar
2 tablespoons honey

Steps:

  • Combine first 3 ingredients; sprinkle over both sides of chicken.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.
  • Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken.

1/4 cup balsamic vinegar
1/4 cup honey
3/4 cup crushed corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix honey and vinegar until blended (this will take a few minutes to combine).
  • Dip chicken breasts in honey mixture until coated.
  • Then coat in corn flakes Put in 8 x 8 pan.
  • Repeat with all chicken breasts.
  • Drizzle with remaining honey mixture.
  • Bake at 350 degrees for 30 minutes.

BALSAMIC CHICKEN DRUMSTICKS

This recipe is courtesy of Giada De Laurentiis. I haven't actually made it, but I work with a young lady who prepared it and brought it to the office. This was so good we looked like some hogs "slopping at the trough" gnawing on those drumsticks and licking our fingers. We were even eating the marinade after all the chicken was gone because we didn't want to waste a drop. If you wanted to serve this as an appetizer you could use the "drumettes" from the chicken wings. The original recipe does not call for salt, but after tasting it I feel it does need some salt so I listed it as an optional ingredient.

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
1/2 teaspoon salt (optional)
5 sprigs fresh rosemary
5 garlic cloves, halved
10 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup flat leaf parsley, chopped

Steps:

  • Combine the balsamic vinegar, honey, brown sugar, soy sauce, rosemary sprigs, salt and garlic cloves, stirring to mix well.
  • Pour into a large reseable zip-top plastic bag and add the drumsticks.
  • Seal with as little air as possible.
  • Place in the refrigerator and marinade for at least 2 hours.
  • Preheat oven to 450 degrees.
  • Place the chicken on a foil-lined baking sheet.
  • Bake until the skin is carmelized and very dark in spots, about 30 to 35 minutes.
  • While chicken is cooking, pour marinade in a small saucepan.
  • Bring marinade to a boil then reduce the heat and simmer over low heat, about 20 minutes.
  • Remove from heat.
  • During the last 10 minutes baste chicken with the marinade.
  • Place chicken on a serving platter and baste with the remaining glaze.
  • Sprinkle with the sesame seeds and chopped parsley.

HONEY-BALSAMIC CHICKEN SATAY (GREAT FOR CAMPING)

This is my step-daughter's favorite recipe, and it always disappears. It's very simple and tastes great around the campfire. Cooking time does not include marinating. This recipe can be customized with dried or fresh herbs.

3 -4 boneless skinless chicken breasts
2 -3 crushed garlic cloves
2 tablespoons honey
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 tablespoons crushed red pepper flakes
ranch dressing, for dipping (optional)

Steps:

  • Cut each chicken breast into 3 or 4 long strips.
  • Combine all other ingredients in a small bowl and whisk until combined.
  • Place chicken in ziploc bag(s) and add marinade. Marinate for at least one hour. (For camping, prepare up to this step at home and toss in the freezer.).
  • Thread chicken onto bamboo skewers.
  • Grill over medium to hot coals or fire until juices run clear.
