1 lemon
Kosher salt and freshly cracked black pepper
1/2 cup farro
3 tablespoons olive oil
One 8-ounce salmon fillet
1 tablespoon minced shallot
2 radishes, thinly sliced
1/2 cup sugar snap peas, thinly sliced on the bias
1/2 avocado, thinly sliced
Fresh dill, for garnish

Steps:

  • Zest 1 teaspoon of the lemon rind and reserve. Cut the lemon in half.
  • Bring a medium saucepan of generously salted water to a boil. Add the farro and cook until just tender, 20 to 25 minutes. Drain and rinse under cold water, then set aside.
  • Meanwhile, heat 1 tablespoon of the olive oil in a skillet over medium heat. Season the salmon with salt and pepper. Add the salmon to the skillet and cook about 3 minutes per side, until just cooked through. Squeeze in the juice of one of the lemon halves. Set the salmon aside to cool slightly, then flake with a fork into chunks.
  • Squeeze the juice of the remaining lemon half into a small bowl, add the shallots, the reserved lemon zest and the remaining 2 tablespoons olive oil and whisk together. Season to taste with salt and pepper.
  • Divide the farro between 2 bowls. Arrange the salmon, radishes, peas and avocado over the farro and drizzle over the dressing. Garnish with dill and serve.

2 carrots
1large courgette
2 cooked beetroot , diced
2 tbsp balsamic vinegar
⅓ small pack dill , chopped, plus some extra fronts (optional)
1small red onion , finely chopped
280g poached or canned wild salmon
2 tbsp capers in vinegar, rinsed

Steps:

  • Shred the carrots and courgette into long spaghetti strips with a julienne peeler or spiralizer, and pile onto two plates.
  • Stir the beetroot, balsamic vinegar, chopped dill and red onion together in a small bowl, then spoon on top of the veg. Flake over chunks of the salmon and scatter with the capers and extra dill, if you like.

2 tablespoons chili garlic sauce (sambal)
3 tablespoons soy sauce
2 tablespoons sesame oil
1 ½ tablespoons brown sugar
1 tablespoon rice wine vinegar
4 (6 ounce) salmon fillets, cut into 1-inch squares
1 red bell pepper, seeded and cut into 1-inch squares
1 cup snow peas
4 carrots, peeled and thinly sliced
4 cups cooked jasmine rice

Steps:

  • Preheat the broiler to low heat.
  • Whisk together the chili garlic sauce, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, sugar and vinegar until combined.
  • Add the cut up salmon to the bowl and mix until coated.
  • Line a cookie sheet with Reynolds Wrap® Non-Stick Foil and evenly spread out the salmon and cook under the broiler for 8 to 10 minutes or until browned and cooked throughout.
  • Pour the remaining 1 tablespoon of sesame oil into a large frying pan on high heat and add in the bell peppers, snow peas and carrot and stir-fry for 3 to 4 minutes. Finish the vegetables by adding the remaining 1 tablespoon of soy sauce.
  • Divide the rice into 4 portions and serve the cooked salmon and vegetables evenly.
  • Optional Servings: Serve with a hard boiled egg or a fried egg.
