This is the only stuffing I ever make and it gets RAVES! Not only is it beautiful, it has a wonderful meld of flavors and textures. Want something different than a sage dressing? Try mine!

½ cup uncooked wild rice
1 ½ cups water
2 cups chopped fresh broccoli
½ cup butter
1 ½ cups sliced mushrooms
1 cup chopped onion
1 (16 ounce) package herb seasoned stuffing mix
1 (14 ounce) can chicken broth
½ cup sliced almonds

Steps:

  • Bring rice and 1 1/2 cups water to boil in a pot. Cover, reduce heat to low, and simmer 45 minutes.
  • Place broccoli in a pot with enough water to cover, and boil 5 minutes, or until slightly tender. Remove from heat, and drain.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Melt the butter in a skillet over medium heat, and saute the mushrooms and onion until tender. Mix in cooked rice, cooked broccoli, stuffing mix, broth, and almonds. Transfer to the prepared baking dish (or use to stuff turkey just before roasting).
  • Bake 30 minutes in the preheated oven, or until golden brown.

3 tablespoons unsalted butter
1 cup medium-diced onion (about 1 medium onion)
1/2 cup medium-diced celery (about 2 stalks)
1/4 cup all-purpose flour
2 1/2 cups chicken stock or low-sodium chicken broth
2 cups creme fraiche
2 tablespoons sherry vinegar
1 tablespoon roasted garlic paste
1 tablespoon soy sauce
Meat from 1 large roasted or rotisserie chicken, diced
3 cups cooked wild rice (not puffed open)
2 cups chopped broccoli rabe
1 tablespoon rosemary leaves, chopped
1/2 teaspoon liquid smoke
1/4 to 1/2 teaspoon red pepper flakes
8 ounces Swiss cheese, grated
1/2 cup sliced almonds

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a 12-inch enameled cast-iron skillet over medium-low heat. Add the onions and celery and saute until tender, about 5 minutes. Stir in the flour and cook, stirring, to cook off the raw taste, about 3 minutes.
  • Whisk together the chicken stock, creme fraiche, sherry vinegar, garlic paste and soy sauce in a medium bowl. Slowly stir the liquid into the onion mixture, whisking the entire time. Lumps might form at first but just keep whisking -- they will go away. Lower the heat to medium-low and continue to cook until the sauce simmers and is thick enough to coat the back of a spoon. Stir in the chicken, rice, broccoli rabe, rosemary, liquid smoke, red pepper flakes and cheese. Top with the sliced almonds and bake until golden brown, 15 to 20 minutes.

1 (6 ounce) box uncle ben's long grain and wild rice blend
1 (10 ounce) package frozen broccoli cuts
1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) jar Cheez Whiz
1 (8 ounce) can water chestnuts, diced

Steps:

  • Cook rice according to package directions.
  • Cook broccoli according to package directions.
  • When broccoli is cooked, use paper towels to absorb any excess water.
  • Mix together rice, broccoli, cream of chicken soup, Cheez Whiz, and water chestnuts.
  • Pour into casserole dish.
  • Bake in pre-heated oven at 350 degrees for 20-30 minutes.

3 1/2 cups water, vegetable stock or chicken stock
Salt to taste
1 cup wild rice
2 tablespoons fresh lemon juice
1 tablespoon sherry vinegar or champagne vinegar
1 teaspoon Dijon mustard
1 small garlic clove, finely minced or puréed
1/4 cup walnut oil
1/4 cup extra virgin olive oil
1/2 pound broccoli crowns, broken into small florets
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh herbs such as chives, dill, tarragon, marjoram
1/4 cup shelled walnuts
Freshly ground pepper to taste

Steps:

  • In a medium saucepan, bring 3 1/2 cups stock or water to boil. Add salt to taste and the wild rice. When the water returns to the boil, reduce the heat, cover and simmer 40 to 45 minutes, until the rice is tender and has begun to splay. Drain and transfer to a wide, heavy skillet.
  • Make the dressing while the rice is cooking. Whisk together the lemon juice, vinegar, salt, mustard, and the garlic. Whisk in the oils, taste and adjust seasonings. Set aside.
  • Steam the broccoli until just tender, about 4 minutes. Transfer to the pan with the rice. Add the dressing and the nuts and heat through, stirring. Add freshly ground pepper and just before serving stir in the parsley and other chopped herbs. Serve warm.

1/2 large onion, diced
Salt
2/3 cup uncooked wild rice blend, rinsed
1 pound broccoli
1 garlic clove, minced or pressed
1/4 teaspoon ground mustard powder or 1/2 teaspoon smooth Dijon
Pinch of cayenne pepper
2 tablespoons all-purpose flour
1 cup whole milk
2/3 cup low-sodium vegetable or chicken broth
8 ounces cheddar cheese, coarsely grated
Freshly ground black pepper

Steps:

  • Heat 1 tablespoon butter in a medium saucepan over medium heat. Once melted, add onion and saute until translucent, about 5 minutes. Add rice to onion and cook for 1 minute, then add 1 1/3 cups water and a few pinches of salt. Bring mixture to a simmer, then reduce heat to lowest temperature and cook with the lid on for about 50 minutes (or whatever amount of time is suggested on your package of rice). If you'd like a rice cooker to do this for you, transfer onions, water and rice to the machine and set the machine. Heat oven to 400 degrees. Peel broccoli stems and dice them into large chunks. Cut florets into 1-inch pieces. Cook in boiling, well-salted water for 2 to 3 minutes, then drain. You can use this same pan to make the cheese sauce. Melt remaining 2 tablespoons butter in pan over medium heat. Once melted, add the mustard powder (if using), a pinch of cayenne and garlic and let sizzle for 1 minute. Add flour and whisk until combined, cooking the butter-flour mixture for 1 to 2 minutes. Slowly drizzle in milk, whisking constantly, then broth. Bring to a simmer and cook mixture at a simmer, stirring the whole time, until sauce is slightly thickened, about 5 minutes. Stir in smooth Dijon mustard if you didn't use mustard powder. Remove pan from heat and stir in 1/3 of grated cheese until melted. Season generously with salt and pepper. Combine cooked wild rice blend and broccoli in a 2-quart baking dish or a 9-inch oven-safe skillet. Pour cheese sauce over and gently nudge to ensure all pieces get some sauce. Sprinkle remaining cheese over top. Bake casserole for 10 to 15 minutes, until the sauce is bubbly, then run mixture under the broiler until cheese is toasty on top.

1 package (10 ounces) frozen chopped broccoli
1 1/3 cups water

1 package (3 ounces) cream cheese, softened
2 tablespoons grated Parmesan cheese
1 cup spaghetti or marinara sauce

Steps:

  • Heat wild rice, broccoli, water, basil and salt to boiling in 2-quart saucepan, stirring occasionally to break up broccoli; reduce heat to low. Cover and simmer 6 to 7 minutes or until wild rice and broccoli are tender. Stir in cheeses until blended.
  • Meanwhile, heat spaghetti sauce in 1-quart saucepan over medium heat until hot. Reduce heat to low; stir occasionally.
  • Spray 10-ounce custard cup with cooking spray. To form timbales, press 3/4 cup wild rice mixture into cup; turn upside down onto serving plate to unmold. Repeat with remaining mixture. Or spoon mixture onto serving plates instead of shaping into timbales.
  • Pour spaghetti sauce over timbales. Sprinkle with additional Parmesan cheese if desired.

  • Use a large pot to simmer the 2 cups of rice and the seasonings with 5 cups of water on low heat for 30 minutes. Then add the pieces of broccoli on top of the rice, sprinkle the olive oil over the broccoli, and let simmer another 15 minutes until the broccoli is soft. Toss and serve.
