2019 marks the 100th birthday of Hostess's iconic cupcakes, so Food Network Magazine whipped up some look-alike mug cakes!

Steps:

  • To make a batch, whisk 1/2 cup each sugar and buttermilk, 1/4 cup vegetable oil, 1 egg and 1/2 teaspoon vanilla in a large bowl until smooth. Whisk in 1⁄3 cup flour, 2 tablespoons unsweetened cocoa powder, 1/8 teaspoon baking soda and a pinch of salt. Butter 4 small microwave-safe mugs and divide the batter among them. Microwave, one at a time, until a toothpick comes out clean, about 2 minutes. Make a slit in the center of each cake and pipe marshmallow cream into the slit. Top the cake with warmed chocolate frosting, then pipe white frosting squiggles on top.

1 (15.25 oz.) package Devil's Food cake mix
3/4 c. water
3/4 c. canola oil
4 large eggs
1 (10 oz.) package miniature marshmallows
2 c. granulated sugar
1/2 c. (1 stick) unsalted butter
5 oz. evaporated milk
1 (12 oz.) package semi-sweet chocolate chips {2 cups}
1 tsp. vanilla extract

Steps:

  • In a mixing bowl, place cake mix, water, oil, and eggs; beat until well combined. Pour batter into a greased 9x13-inch baking pan.
  • Bake at 350 degrees for 30-35 minutes, or until cake tests done with a wooden pick.
  • Remove cake from oven and immediately pour marshmallows evenly over the top. Set aside.
  • Place butter, sugar, and evaporated milk in a medium-sized saucepan.
  • Bring to a boil over medium to medium-high heat, stirring frequently; boil for 30 seconds.
  • Remove from heat; add chocolate chips and vanilla extract. Whisk until chocolate chips are melted and icing is thickened and glossy.
  • Working quickly, pour over marshmallows and smooth with a rubber spatula.
  • Allow to cool completely.

1/2 cup butter
2 ounces unsweetened chocolate
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda

1 cup sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 package (10 ounces) miniature marshmallows
GLAZE:
1/2 cup sugar
2 tablespoons 2% milk
2 tablespoons butter
1/4 cup semisweet chocolate chips

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Cool for 10 minutes. Combine flour, baking powder, baking soda and salt; set aside. In a large bowl, beat eggs, sugar, applesauce and vanilla. Stir in chocolate mixture. Gradually add dry ingredients; mix well. , Pour into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in center comes out clean, 20-30 minutes., Set aside 1/2 cup marshmallows for glaze. Sprinkle remaining marshmallows over cake. Return to oven until marshmallows are softened, about 2 minutes. , In a small saucepan, combine sugar, milk and butter. Bring to a boil; boil 1-1/2 minutes. Remove from heat; stir in chocolate chips and reserved marshmallows until melted. Quickly drizzle over cake (glaze will harden as it cools).

The Wilbur Chocolate factory in Lititz, Pennsylvania is a wonderful little place that makes amazing chocolate. If you ever had an opportunity to sample Wilbur Buds then you know what I mean. From the "Cook's Tours through Wilburland" recipe book of the early 1900s. They say on www.wilburbuds.com that this cake is quickly made and is very attractive and inexpensive. Excellent served with Recipe #217740 instead of the marshmallow whip (made single layer in an 11"x7" glass baking dish baked for 25 minutes).

1/2 cup Dutch-processed cocoa powder
1 cup sugar
1/2 cup water
3 eggs
1/2 cup flour
1 teaspoon baking powder
1 pinch salt

Steps:

  • Preheat oven to 325 degrees.
  • Put the Wilbur cocoa and sugar into bowl.
  • Add the water and mix until the sugar is dissolved.
  • Separate the eggs and beat the yolks until light.
  • Add to the Wilbur cocoa, sugar and water.
  • Sift the flour and baking powder and salt into mixture.
  • Beat the whites of eggs until dry and add lightly to the mixture.
  • Line two jelly tins with paper, pour in the mixture and bake 20 minutes.
  • Remove the paper and spread marshmallow whip onto a layer of cake.
  • Put cake layers together.

12 tablespoons (1 1/2 sticks) unsalted butter, room temperature, plus more for pans
2 1/2 cups all-purpose flour, plus more for pans
3/4 cup cocoa powder
1 teaspoon baking soda

1 cup granulated sugar
1 cup light-brown sugar
3 large eggs
2 teaspoons vanilla extract
1 1/2 cups buttermilk
1 cup (2 sticks) unsalted butter, room temperature
2 jars (7.5 ounces each) marshmallow cream
2/3 cup cocoa powder
2/3 cup semisweet chocolate chips, melted and cooled
1 tablespoon vanilla extract

Steps:

  • Make the cake: Preheat oven to 350 degrees. Butter and lightly flour two 9-inch round cake pans. In a bowl, whisk flour, cocoa, baking soda, and salt.
  • In a mixing bowl, cream butter and sugars until fluffy. Add eggs, one at a time, beating until well incorporated. Beat in vanilla.
  • Add the flour mixture to the butter mixture in three additions, alternating with buttermilk and beginning and ending with the flour mixture. Scrape bowl as needed.
  • Pour batter into pans. Bake until toothpick inserted in center comes out clean, 25 to 30 minutes. Cool in pans 10 minutes before inverting cakes onto rack to cool completely.
  • Make the buttercream: In mixing bowl, beat butter and marshmallow cream until fluffy. Beat in cocoa, chocolate, vanilla, and 1 tablespoon water. If too thin, refrigerate about 5 minutes.
  • Place one layer on platter. Spread top with 1 cup buttercream. Place second layer on top. Frost entire cake with remaining buttercream.
