½ cup raisins
1 cup whole wheat flour
⅔ cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cloves
½ teaspoon ground nutmeg
1 cup pumpkin puree
1 cup white sugar
2 eggs
¼ cup canola oil
1 cup coarsely chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place raisins in a bowl and pour in boiling water to cover by 1 inch. Allow to sit until raisins are plump and rehydrated, 3 to 4 minutes. Drain raisins, and reserve 1/3 cup of the soaking water in a separate bowl.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, salt, cloves, and nutmeg in a large bowl. Combine pumpkin puree, sugar, eggs, reserved soaking water, and oil in another bowl; mix with a spoon or whisk until well combined. Stir pumpkin mixture into flour mixture until just moistened. Fold in walnuts and raisins. Pour batter into a 9x5-inch loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Allow to cool in the pan for 15 minutes then transfer to a wire rack.

1 cup whole wheat flour
1 cup sugar
2/3 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cloves
1 cup canned pumpkin
1/2 cup egg substitute
1/3 cup water
1/4 cup canola oil
1/2 cup chopped walnuts

Steps:

  • In a bowl, combine the first eight ingredients. In another bowl, combine the pumpkin, egg substitute, water and oil. Stir into dry ingredients just until moistened. Fold in walnuts., Spoon into a 9x5-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack.

2 cups whole wheat flour
1 cup sugar
2 packages (3 ounces each) cook-and-serve vanilla pudding mix
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 large eggs
1-1/4 cups canola oil
1 can (15 ounces) solid-pack pumpkin

Steps:

  • In a large bowl, combine the flour, sugar, pudding mixes, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil and pumpkin. Stir into dry ingredients just until moistened. Pour into two greased 8x4-in. loaf pans., Bake at 325° for 70-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 cup pumpkin pie filling (such as Libby's® Easy Pumpkin Pie Mix)
½ cup white sugar
½ cup agave nectar
½ cup honey
½ cup melted coconut oil
⅓ cup water

2 tablespoons flaxseed meal
1 tablespoon wheat bran
1 teaspoon baking soda

Though it might sound a little weird this is a really good bread here. I made if off of another bread recipe on recipezaar called yeast free sugar free bread recipe. I skipped the salt and used 1/4 cup of pumpkin per batch and it turned out just great! If you want to add salt, you can add 1 tsp. of celtic sea salt but it is not necessary. To make a ricer bread, use rice milk or some other natural nut milk for the liquids.

3 cups whole wheat flour
4 teaspoons baking powder
1 1/2 cups water
1/4 cup pumpkin

Steps:

  • Mix dry ingredients.
  • Do not sift the flour!
  • Mix liquids and add to dry. Stir until there is no more dry flour.
  • Depending on the humidity of the air where you live you may need a little bit more or less liquid.
  • The dough should be moist but not sticky. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
  • Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
  • It is important not to overwork the dough.
  • Shape into a ball or an oval, with oiled hands.
  • Place in clean Bread Pan.
  • Bake for 40 minutes at 400°F.

1 cup pumpkin
1 teaspoon vanilla
1/2 teaspoon salt

1 teaspoon baking soda
1/4 cup hot water

Steps:

  • Preheat oven to 325 degrees. Grease a loaf pan and set aside. In large bowl mix together melted coconut oil and honey. Add eggs and mix well. Stir in pumpkin and vanilla. Add salt, pumpkin pie spice and whole wheat flour and stir to combine. Stir in baking soda and hot water. Pour into prepared pan and bake for 50-55 minutes. Place pan on a cooling rack to cool.

1 ½ cups whole-wheat flour (I used King Arthur's white whole-wheat flour)
1 ½ teaspoons cinnamon
1 teaspoon ground ginger
½ teaspoon nutmeg
⅛ teaspoon cloves
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup oil (I used coconut oil)
½ cup honey
½ teaspoon vanilla
1 cup pumpkin puree
½ cup chopped tree nuts (optional)

Steps:

  • Preheat oven to 350 degrees. In a large mixing bowl whisk together the dry ingredients (from the flour down to the salt). Make a well (hole) in the center and throw in the eggs, oil, honey, and vanilla. Stir together thoroughly with a fork, but do not overmix. Fold in the pumpkin puree and nuts (if using). Generously grease a large loaf pan or put muffin liners in a muffin pan and then pour in the batter. For a loaf bake for approximately 30 - 40 minutes and for muffins bake for approximately 18 - 22 minutes. Check for doneness by making sure a toothpick inserted comes out clean.

This bread works well with my other recipe, Pumpkin Stuffing with Wild Mushrooms. The amount you need for the stuffing will leave you with about 1 1/2 loaves of bread, which makes great toast. Or, you can double the stuffing recipe, it reheats well.

1 tablespoon(s) baking powder
4 large eggs, room temperature
2 cup(s) pumpkin, canned or cooked
2 teaspoon(s) salt
1 cup(s) butter, unsalted, room temperature
1 large egg yolk
1/4 cup(s) heavy cream

Steps:

  • Sift all dry ingredients into a large bowl. In another bowl combine eggs (not egg yolk) and pumpkin. Mix until smooth. Mix in butter, 1 tablespoon at a time, until well blended.
  • Add dry ingredients to the egg/pumpkin mixture, a third at a time.
  • Divide batter between two buttered pans 9x5. Combine egg yolk and heavy cream and brush over loaves.
  • Bake at 350 degrees for 45 minutes and a toothpick inserted into the center comes out clean.
