2 cups whole wheat flour
1 cup cornmeal
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 cup raisins
1 cup mashed ripe banana
1/2 cup molasses
1/4 cup honey
1 cup buttermilk

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour, cornmeal, baking powder, baking soda, and salt. Mix in raisins.
  • In a separate bowl, mash bananas and stir in molasses, honey, and buttermilk. Add this mixture to the dry ingredients and stir only enough to blend.
  • Pour into two 4 1/2 x 8 1/2 lightly greased loaf pans and bake for 40 to 50 minutes.

½ cup lightly packed brown sugar
2 tablespoons olive oil
3 eggs
⅓ cup unsweetened applesauce
1 teaspoon vanilla extract
1 ¾ cups mashed bananas
1 ¾ cups whole wheat flour
1 teaspoon baking soda
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line the bottom of a 9x5-inch nonstick loaf pan with parchment paper.
  • Beat brown sugar and oil together in a large bowl until well-blended. Add eggs, applesauce, and vanilla extract; mix well to combine. Stir in mashed bananas. Add whole wheat flour and baking soda; stir until incorporated. Fold walnuts into the batter.
  • Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cover loaf with a clean towel and cool on a wire rack for 30 minutes before slicing.

½ cup butter, softened
1 egg
1 cup molasses
2 cups mashed banana
1 cup whole wheat flour
¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream the butter. Beat in egg, molasses and banana. Mix in whole wheat flour, all-purpose flour, baking soda, salt, nutmeg and walnuts; stir until well blended. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 65 minutes, or until a toothpick inserted into center of the loaf comes out clean.

Oil or butter for greasing pan
1 2/3 cups buttermilk or plain yogurt, or 1 1/2 cups milk and 2 tablespoons white vinegar (see Step 2)
2 1/2 cups (about 12 ounces) whole wheat flour
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon baking soda
1/2 cup molasses

Steps:

  • Heat oven to 325 degrees. Grease an 8-by-4-inch or 9-by 5-inch loaf pan, preferably nonstick.
  • If using buttermilk or yogurt, ignore this step. Make soured milk: warm milk gently -- 1 minute in the microwave is sufficient, just enough to take the chill off -- and add vinegar. Set aside.
  • Mix together dry ingredients. Stir molasses into buttermilk, yogurt or soured milk. Stir liquid into dry ingredients (just enough to combine) then pour into loaf pan. Bake until firm and a toothpick inserted into center comes out clean, 45 minutes to 1 hour. Cool on a rack for 15 minutes before removing from pan.

Number Of Ingredients 11

1 cup whole-wheat flour, preferably stone-ground
2 tablespoons wheat bran
3/4 cup warm whole milk (about 110 degrees)
1/4 cup packed dark-brown sugar
2 envelopes active dry yeast (1 tablespoon plus 1 1/4 teaspoons)
3 tablespoons coarse whole-grain cornmeal
3 tablespoons plus 2 teaspoons old-fashioned oats
3 tablespoons ground flaxseed, plus 1 teaspoon whole for sprinkling
2 teaspoons salt
2 1/2 to 3 cups bread flour
Olive oil, cooking spray

Steps:

  • Stir whole-wheat flour, bran, and 1 cup water in a bowl. Let stand 30 minutes.
  • Stir milk and 1 tablespoon sugar in a bowl until sugar dissolves. Stir in yeast. Let stand until foamy, about 5 minutes.
  • Put whole-wheat flour mixture, milk mixture, remaining 3 tablespoons sugar, the cornmeal, 3 tablespoons oats, the ground flaxseed, and salt into the bowl of an electric mixer fitted with the dough hook; mix on medium-low speed until combined. Add 2 1/2 cups bread flour; mix until dough is tacky, but not sticky, about 2 minutes (if dough is too sticky, add more flour, 1 teaspoon at a time). Continue kneading until dough is soft and elastic, about 5 minutes more.
  • Coat a large bowl with cooking spray. Add dough to bowl; turn to coat. Cover loosely with plastic wrap. Let dough rise in a warm, draft-free place until doubled in bulk, about 1 hour (or refrigerate overnight; bring to room temperature).
  • Turn out dough onto a work surface; shape into a loaf about 9 inches long. Using a spray bottle, mist with water; sprinkle top with remaining 2 teaspoons oats and the whole flaxseed. Coat a 9-by-5-inch loaf pan and a piece of plastic wrap with cooking spray. Transfer loaf to the pan, and cover lightly with the plastic wrap. Let stand until doubled in bulk, about 45 minutes.
  • Preheat oven to 400 degrees. Mist oven with water; place loaf in oven. Bake 5 minutes; mist oven again. Continue to bake, rotating pan once, until well browned, 25 to 30 minutes. Unmold bread onto a wire rack; return to oven, and bake directly on oven rack 5 minutes more. Remove from oven; let cool completely on rack.

CORNMEAL BANANA BREAD (HEALTHIER)

The inspiration for this lovely and kinda healthy banana bread comes from the blog http://www.familyfreshcooking.com/2011/01/13/banana-almond-snack-cake-recipe/. I like the use of cornmeal as it gives the bread a heartier texture. This is more of a bread than a cake, so keep that in mind if youre looking for a cake more than a bread. Please note: I like my banana breads without added sugar, but feel free to add 1/4 c or so if you like your breads sweeter.

1 cup whole wheat flour (I used whole spelt flour)
1/2 cup coarse ground cornmeal
1/2 cup oat flour
1/4 cup oats, large flake
2 1/2 teaspoons baking powder
1/2 teaspoon pumpkin pie spice
1 pinch salt
1 cup banana, peeled and melted in the microwave (about 4 minutes at full power in my microwave)
1/4 cup almond butter (I made my own from roasted almonds)
1 large egg, whisked at room temperature
1 cup soymilk or 1 cup other non-dairy milk substitute
1/4 teaspoon almond extract
1/4 cup sugar (optional)

Steps:

  • First melt your bananas in the microwave if you have not already done so. Set aside to cool to room temperature (this is important because otherwise your egg might curdle later on).
  • Then combine flour, cornmeal, oat flour, oats, baking powder, pumpkin pie spice and salt in a large bowl.
  • In a second bowl combine bananas, almond butter, egg, milk and almond extract and mix well.
  • Combine dry and wet ingredients and mix until just combined. The dough should be rather thick, but not dry. If needed add a splash more milk or two.
  • Pour batter into a prepared loaf pan and bake in the pre-heated oven at 180 C/350 F for 35-40 minutes.
  • Remove to a wire rack to cool completely and enjoy!

  • In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into prepared pan.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.
