1 ½ cups whole wheat flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
⅓ cup vegetable oil
1 egg
⅓ cup milk
½ cup unsweetened applesauce
1 pint fresh blueberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper liners. Whisk together the flour, sugar, salt, and baking powder in a large bowl.
  • Whisk vegetable oil, egg, milk, and applesauce together in a separate bowl until smooth, and stir the liquid ingredients into the flour mixture until moistened. Lightly stir in the blueberries. Spoon the batter into the prepared muffin cups, filling them 2/3 full.
  • Bake muffins in the preheated oven until they rise and the tops are golden brown, about 20 minutes. A toothpick inserted into the center of a muffin should come out clean.

1 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking powder

2 large eggs, room temperature
1 cup buttermilk
1/2 cup canola oil
2 cups fresh or frozen blueberries

Steps:

  • Preheat oven to 375°. In a large bowl, combine flours, sugar, baking powder, baking soda, salt and nutmeg. In another bowl, beat eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in blueberries., Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 18-20 minutes. 1/2 cup rolled oats, plus more for sprinkling
1 teaspoon baking powder
1/2 teaspoon fine salt

1/2 cup packed light brown sugar
1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with muffin liners.
  • Combine the flour, oats, baking powder, salt and baking soda in a large bowl. Whisk together the vegetable oil, sour cream, brown sugar, lemon zest, vanilla and eggs in another bowl. 2 cups whole wheat flour
2 cups quick oats
4 teaspoons baking powder
2 teaspoons baking soda

1/4 cup Splenda Sugar Blend for Baking (or 1/2 cup white sugar)
2 pints fresh blueberries (or the equivalent un-thawed frozen berries, or even more, if you dare!)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare muffin pans with foils, papers or grease and flour, whichever you prefer. Rinse fresh berries and set to drain.
  • In a large mixing bowl, combine flour, oats, powder, soda and salt using a wire whisk or your (clean) fingers.
  • In a smaller mixing bowl, beat the eggs, oil, sweetener and buttermilk together well.
  • Pour the wet mixture onto the dry mixture, and add the berries. Gently fold the mixture together, being careful not to break the berries and to just wet all the dry ingredients.
  • The batter should be fluffy. Fill the wells in the muffin pans very full. If you only do the typical 2/3rds full, you'll need another half muffin pan to accommodate all the batter.
  • Bake about 20 minutes at 400 degrees. If using foils or papers, remove the muffins from the pan as soon as you can. We find if we don't, any berry juice that has seeped out and touches the pan becomes like glue when cool.

2 cups whole wheat flour (less 2 tablespoons, see step 4 below)
2 7/8 teaspoons baking powder
3/8 cup Splenda granular
1/4 cup pasteurized pasteurized liquid egg-whites (equals 1 whole egg)
1/3 cup unsweetened applesauce
5/8 cup nonfat milk
1 1/8 tablespoons Splenda granular (to sprinkle on top of muffins)

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray muffin pan with non-stick spray or use muffin holders.
  • Wash and drain blueberries. Set aside. If using frozen blueberries, thaw before using.
  • In large bowl, sift flour. VERY IMPORTANT: REMOVE 2 TABLESPOONS OF THE FLOUR BEFORE DOING ANYTHING ELSE! After removing the 2 tablespoons of flour, add in the baking powder and the 3/8 cup Splenda. Mix together.

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or place paper baking cup in each muffin cup.
  • In small bowl, mix 1/4 cup flour, the brown sugar and cinnamon. Cut in 2 tablespoons cold butter, using pastry blender (or pulling knives through ingredients in opposite directions), until crumbly. Set aside.

1/2 stick of butter (softened or melted)
1 cup brown sugar
1/4 cup of apple butter (or more if you like)
1/2 cup of milk (I used 2% and added a splash of cream)
1/2 tsp vanilla extract
Dry mix:
1 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup flax meal (I think you should grind your own in your food processor or coffee grinder - I use a magic bullet, don't buy it ground or grind too much in advance as it goes rancid quickly)
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Mix in:
1 1/2 cup of blueberries (frozen or fresh)

Steps:

  • Position your oven rack to the middle notch and preheat to 400 degrees. Spray or line your muffin tins. Mix butter and brown sugar together. Add remaining wet ingrediants and mix well. In a separate bowl, combine dry ingrediants and mix well. Add wet mix to the dry mix and hand-mix, just until combined. Fold in the blueberries. Spoon into muffin tins. I like to toss a little bit of something on the tops- nine grain cereal, or steel cut oats (you might soak them in apple juice or something first so they're not so crunchy), even some plain old oats would look nice. Bake for 25 minutes (or until toothpick comes out clean) at 400 degrees on middle rack.

2 ½ cups whole wheat flour
1 ½ cups rolled oats
1 tablespoon baking powder
2 ½ teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 cup canola oil
2 cups applesauce
1 cup white sugar
2 eggs
½ cup water
1 cup fresh blueberries
1 cup shredded peeled beets

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups.
  • Mix the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt in a large bowl. In a separate bowl, mix the canola oil, applesauce, sugar, eggs, and water. Pour the applesauce mixture into the dry ingredients, and stir to combine. Gently fold in the blueberries and shredded beats. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until browned and a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.

3 cups whole wheat flour
1 teaspoon salt
4 teaspoons baking powder
1/4 cup ground flax seeds (optional)
2/3 cup canola oil
1 cup agave nectar or 1 cup honey
1 mashed banana (or 1/2 c. soymilk)
1 cup blueberries (fresh or frozen)
1/2 cup whole wheat flour
1/4 cup oat bran (or ground oats)
1/2 cup sugar (turbanado sugar works best)
1 tablespoon ground cinnamon
1/2 cup margarine (earth balance works well) or 1/2 cup coconut oil (earth balance works well)

Steps:

  • Combine all dry muffin ingrediends in a large bowl.
  • Add wet ingredients and stir just until mixed. If mixture seems too thick, add a couple tablespoons soymilk or water.
  • Add in blueberries.
  • Grease muffin tins and fill about 3/4 full.
  • Mix together crumb topping with your hands and sprinkle some onto each muffin - enough to cover the top.
  • Bake at 400 degrees for 15-20 minutes or until slightly golden on top and done.

This recipe uses all natural healthy ingredients. We enjoy these in the morning before school. TIPS: Buy whole wheat flour that has NOT been bleached. Use NON BLEACHED white flour. Use only PURE honey. Make your own lemon juice by squeezing a fresh room temperature lemon. Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Use baking powder without aluminum. If you want to loose weight and feel better this is a very good breakfast, has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

1 cup milk (1% or non-fat milk)
2 tablespoons canola oil
1 large egg, lightly beaten
1 1/4 cups blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Coat a non-stick 12-cup muffin pan with cooking spray or line with paper cups.
  • In a large bowl, stir flour, sugar, baking powder, baking soda, cinnamon, and salt together.
  • In a small bowl, combine milk, canola oil, vanilla and egg.
  • Make a well in the center of the dry ingredients and add milk, oil, vanilla and egg mixture.
  • Stir until just moist. Fold in blueberries.

3/4 cup packed brown sugar
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour

1 tablespoon ground cinnamon
1 cup frozen blueberries

Steps:

  • Heat the oven to 375°F.
  • Grease or line with paper liners 12 large muffin cups or 24 small muffin cups.
  • In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas.
  • Combine the flour, baking soda, and cinnamon.
  • Stir into the banana mixture until moistened.
