CRAB STUFFED FISH

I love this dish I got it off of the T.V years ago and I make it often. I normally use a whitefish of some sort. Tilapia or Flounder are my favorites. I usually serve with rice and steamed vegetable. It's filled with flavor and is pretty easy to make. I could eat the stuffing all by it's self. A lot of times I double the stuffing but it's up to you what you think.

6 tablespoons butter, divided
1 celery rib, finely chopped
1 small onion, finely chopped
1/4 cup chopped parsley
1 (4 1/2 ounce) can crabmeat, drained & flaked
1/2 cup dry Italian breadcrumbs
1 tablespoon lemon juice
1/8 tablespoon crushed red pepper flakes
6 fish fillets (about 2 pounds total)
paprika, to taste

Steps:

  • Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray.
  • In a large skillet melt 4 T butter over medium-high heat. Add celery, onion & parsley. Sauté until tender. Remove from heat and stir in crabmeat, bread crumbs, lemon juice and red pepper flakes.
  • Spoon crabmeat mixture evenly over the filets. Starting from the small end, roll up each fillet, jelly roll- style. Place the rolls seam side down in baking dish. Melt the remaining butter and drizzle over fillets. Sprinkle with paprika.
  • Bake for 20 -25 minutes, or until fish flakes easily with a fork.

These are wonderful to serve for a luncheon, great served with wild rice on the side. The amounts in this recipe are for 4 servings, the ingredients can easily be doubled to serve more.

1/4 cup chopped onion
1/4 cup butter
4 cups breadcrumbs
salt and pepper
1 teaspoon poultry seasoning
1 cup mayonnaise or 1 cup salad dressing, divided
1 lb fish fillet (such as halibut, cod, stc)

Steps:

  • Set oven to 350 degrees.
  • Grease 4 muffin tins Or custard cups.
  • In a med frypan, saute onion in butter until tender, but not brown.
  • Mix in bread crumbs and seasonings; blend in 1/2 cup mayo.
  • Cut fish fillets in four uniform strips, about 1-1/2x8 inches.
  • Spread each fillet with bread stuffing; roll up jelly roll fashion.
  • Place in greased custard cups or muffin tins.
  • If using custard cups, place into a shallow pan.
  • Bake for 20 minutes.
  • Remove from oven; divide, and brush the remaining 1/2 cup mayo evenly over tops.
  • Return to oven; bake for 20 minutes more.

1 pound sole, orange roughy or flounder fillets
1 1/2 cups firmly packed spinach leaves
1/4 teaspoon garlic salt
1/3 cup fat-free mayonnaise or salad dressing
1/2 teaspoon Dijon mustard
1/4 cup garlic-flavored croutons, crushed
Lemon wedge, if desired

Steps:

  • Heat oven to 400°F. Spray square baking dish, 8x8x2 inches, with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Place spinach on fish; sprinkle with garlic salt. Roll up each fillet, beginning at narrow end. Place rolls, with points underneath, in baking dish. Mix mayonnaise and mustard; spoon onto each roll. Sprinkle with crushed croutons.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Serve with lemon wedges.

2/3 cup butter
2 tablespoons finely minced onions
1 cup minced crabmeat, fresh or 1 cup imitation crabmeat
2 tablespoons finely minced fresh parsley
1/4 teaspoon garlic powder
24 butter flavored crackers, crushed
12 (6 ounce) fillets sole or 12 (6 ounce) other thin white fish fillets
2 tablespoons lemon juice
1/4 cup grated parmesan cheese
3 tablespoons butter, fot dotting each roll
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Lighty coat a 9x13" baking pan with cooking spray or butter.
  • Melt 2/3cup butter in pan over medium heat.
  • Add onion and saute for 1 minute.
  • add crabmeat, parsley, garlic powder,salt and pepper.
  • Stir and cook 1 minute more.
  • Remove from heat and add crushed crackers.
  • Spread mixture evenly over 12 fillets sprinkle with lemon juice and parmesan cheese.
  • Roll up fillets and hold together with toothpicks.
  • Place in baking dish and dot each fillet with butter.
  • Cover pan and seal tightly with foil.
  • Bake in preheated oven for 15 to 17 minutes until fish flakes.

This is a wonderful recipe for fish fillets. The stuffing mixture is also great stuffed into mushroom caps, just omit the lemon juice, and replace it with white wine in the baking dish. The stuffing mixture may easily be doubled if desired.

1 tablespoon fresh minced garlic, to taste
3 -4 tablespoons olive oil
2 cups shredded mozzarella cheese
1 cup cooked white rice or 1 cup cooked brown rice
2 cups frozen chopped spinach, thawed and well drained (squeeze out any excess moisture with hands)
1/4-1/3 cup grated parmesan cheese
1 egg white
salt and pepper
1 tablespoon fresh lemon juice (more if desired)
6 (4 ounce) sole fillets (fresh or frozen thawed, or use a similar fish)

Steps:

  • Set oven to 400 degrees.
  • Grease a 11 x 7-inch baking pan.
  • In a small saute pan, saute the onion and garlic in oil until soft (about 5-7 minutes).
  • In a medium bowl, combine onion mixture, Mozzarella cheese, cooked rice, spinach, Parmesan cheese, egg white, salt and pepper; mix well to combine.
  • Pour the lemon juice in the bottom of the prepared baking pan; set aside.
  • Cut each fish fillet lengthwise into 2 strips (or leave whole, whatever you desire).
  • Spoon about 1/4 cup (about 1/3 cup for whole fillets) spinach/cheese mixture onto each fillet strip.
  • Roll up to enclose the filling; secure with a toothpick.
  • Sprinkle fillets with salt and pepper (sprinkle with a lttle more fresh lemon juice if desired).
  • Place (cut-side down) over the lemon juice in the baking dish; cover with foil.
  • Bake for 30-35 minutes, or until fish flakes easily with a fork.
