4 garlic cloves, thinly sliced
1 lb broccoli, cut into spears, lengthwise
6 ounces dry white wine
1 tablespoon red chili pepper flakes (optional)
1 lemon, zest of

Steps:

  • In a 12 to 14 inch saute pan, heat the olive oil and garlic until just sizzling.
  • Add the broccoli and cook, tossing regularly for 8-10 minutes, until the stem is tender.
  • Use the wine to slow the cooking down if the garlic begins to brown.
  • When the broccoli is tender, add the chili flakes and zest.
  • Place on platter and enjoy!

While looking for something different to do with broccoli this Thanksgiving, I came across this recipe from Mario Batali. The original recipe uses lemon AND orange zest. Because I am not a big fan of "orange" flavors in recipes, I decided to try this with just the lemon.

Grated zest of 1 lemon
Grated zest of 1 orange

  • 1. In a 10- to 12-inch sauté pan, heat the olive oil with the garlic over medium-high heat until just sizzling. Add the broccoli and cook, tossing frequently and gradually adding the wine to keep the garlic from browning until the stalks are tender 8 to 10 minutes. Add the red pepper flakes and zests, and tossing well, serve immediately.

One-Pot Chicken Broccoli in White Wine Sauce image

A quick, easy and delicious one-pan chicken and broccoli dish that I like to serve over a bed of brown rice or mashed potatoes and sprinkled with fresh snipped parsley. Wonderful! I've been making this for my family and friends for over thirty years, now. Hope you enjoy as much as we do! P.S. 4 boneless skinless chicken breast halves, pounded an even 1/4-inch thick (may use chicken cutlets or tenders)
1 cup Italian seasoned breadcrumbs
1/4 cup olive oil
2 tablespoons butter
1/4 teaspoon fresh ground black pepper
1 -2 cup button mushroom, thickly sliced (optional)
2 teaspoons lemon juice (or fresh lemon zest, chopped fine)
1 cup dry white wine
1/2 cup fresh parsley, minced
8 -10 ounces frozen broccoli florets
fresh lemon wedge, optional to serve

Steps:

  • Wash chicken (no need to pat dry), and dip in breadcrumbs to coat both sides. Reserve leftover breadcrumbs.
  • Heat olive oil in a large skillet over medium-high heat. Add the butter, stir to combine.
  • Brown chicken over medium-high heat, about 4-5 minutes per side. Add leftover breadcrumbs, pepper, mushrooms if using, lemon juice or zest, wine, and most of the parsley (reserve a little to sprinkle on the finished dish).
  • Reduce heat to low and add frozen broccoli florets.
  • Cover and continue cooking another 10-12 minutes or until broccoli is done to your liking.
  • Sprinkle finished dish with the reserved parsley, and serve with white wine sauce and fresh lemon wedges.
  • Great with a side of rice pilaf or creamy mashed potatoes--for an extra yummy indulgence, drizzle my Easy Cheese Sauce over the broccoli. Enjoy!

This is a tasty, filling vegetarian main dish from The Moosewood Cookbook. This makes a lot, so you may want to try half if cooking for a small family.

2 stalks fresh broccoli, including stems, peeled and chopped
1 lb fresh mushrooms, sliced
1 large onion, chopped
1 -2 tablespoon butter
salt
pepper
1/4 cup dry white wine
3 eggs
3 cups ricotta cheese (or a combination) or 3 cups cottage cheese (or a combination)
1 cup sour cream
3 cups uncooked wide egg noodles
1 cup grated sharp cheddar cheese
1/4-1/2 cup fine breadcrumbs or 1/4-1/2 cup wheat germ

Steps:

  • Saute chopped broccoli, mushrooms and onion in butter till tender. Salt and pepper lightly. Toss with wine.
  • Beat eggs in a large bowl.
  • Whisk in ricotta/cottage cheese and sour cream.
  • Boil noodles in salted water till slightly underdone. Drain and butter.
  • Removed sauteed vegetables from pan to cheese mixture with a slotted spoon.
  • Add noodles and either 1/4 cup bread crumbs or 2 T wheat germ. Mix everything.
  • Spread into buttered 9x13 baking pan.
  • Top with more breadcrumbs or wheat germ and grated cheddar.
  • Bake covered for 30 minutes at 350.
  • Uncover and bake for 15 minutes more.
