WHITE SANGRIA AND RED SANGRIA
Cavas, often blessed with notes of citrus and spring blossoms, are genial sparkling wines, all the more so because of their modest prices. They can be called on for many occasions, and are the ideal finishing touch for sangria, either red or white. The white sangria is unusual and strong, though white wine in place of manzanilla sherry will moderate the alcohol. The red is clearly classic. Both are more refreshing than sweet.

- For the red sangria: In a large pitcher, add the cherries, raspberries and apples. Pour in the red wine and cognac and mix together. Refrigerate, about 20 minutes. When ready to serve, either pour the soda water into the pitcher or pour the sangria into individual glasses, 3/4 full. Top with the cola.
- For the white sangria: In a large pitcher, mix the white wine and orange liqueur. Add the peaches, strawberries, orange slices and grapes. Stir all to combine. Refrigerate, about 20 minutes. Serve over ice with a splash of soda water.
SANGRIA (RED AND WHITE)
I prefer the white sangria to the red. The white is light and fresh and the red is a little heavier and sweeter... both really great recipes, just depends on what you are in the mood for.
