BANANA NUT BREAD
The very best recipe for an easy, moist loaf of homemade Banana Nut Bread!

Steps:
- Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
- In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
- In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
- Pour batter into prepared loaf pan. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
- Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.

MARTHA STEWART'S BANANA NUT BREAD
I have been searching a LONG time and making MANY loaves of banana bread trying to find a light and fluffy (not dense and heavy) bread, and I finally found it! I think the sour cream has a lot to do with it. I have made 3 loaves, 2 of which turned out perfect, 1 of which didn't - I tried to cut back on the sugar and that must have been the problem. From now on I will follow the recipe exactly. I have not made it with the addition of the nuts yet. Don't be alarmed - the outside gets dark, but the inside is very moist. I use a 10" loaf pan and it bakes for exactly 50 minutes. BEWARE: The loaf will quickly disappear!

Steps:
- Preheat oven to 350 degrees, and butter or spray a 9x5x3" loaf pan.
- With an electric mixer, cream the butter and sugar very well until light and fluffy.
- Add the eggs, beating well.
- Sift the dry ingredients together and combine with the butter mixture; blend well.
- Add the bananas, sour cream, and vanilla; stir well.
- Stir in the nuts.
- Pour into pan.
- Bake 50-60 minutes until a cake tester comes out clean.
- Turn out onto a rack to cool.

ALMOST NO FAT BANANA BREAD
This bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

WHITE LILLY BANANA NUT BREAD
Steps:
- Preheat oven to 350°F. Spray bottoms only of two 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pans with non-stick cooking spray. Combine flour, salt, and baking soda in small bowl. In a mixing bowl, combine shortening, sugar, mashed banana, eggs, nuts, and vanilla extract, beating until well blended. Add flour mixture and stir just until moistened.
- Pour into prepared pan.
- Bake 60-70 minutes. Remove pan from oven. Cool 10 minutes and remove from pan. Cool on a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
- In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into prepared pan.
- Bake until a toothpick inserted in the center of the loaf comes out clean, 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.
