QUINOA CORN CHOWDER image

◦olive oil
◦1 onion, chopped
◦1 stalk celery, chopped
◦1 carrot, chopped
◦1 zucchini, chopped
◦1 sweet potato, chopped
◦1 liter water
◦2 cans corn, drained
◦3 cups rice milk or oat milk
◦1/4 cup well-rinsed quinoa
◦1/2 bunch coriander or parsley
◦1/4 tsp turmeric
◦1/4 tsp hot pepper (optional)
◦salt and pepper

Steps:

  • Heat the oil in a soup pot. Add the onions and saute for 2 minutes. Add the remaining vegetables and saute for 2 minutes more or until the vegetables are slightly wilted. Add the water and bring to a boil. Lower the flame and simmer for 10 minutes. Add the remaining ingredients and simmer for 15 minutes more.
