1 cup white chocolate chips
1 cup heavy cream
4 cups half-and-half
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
Vanilla whipped topping, for garnish
Peppermint liqueur, optional
Candy cane, crushed or whole, for garnish
White chocolate liqueur, optional

Steps:

  • In a medium saucepan over medium heat, combine white chocolate chips and heavy cream. Stir continuously until white chocolate chips have completely melted. Stir in the half-and-half, vanilla extract and peppermint extract. Stir occasionally until heated through.
  • Pour into mugs and top with a dollop of vanilla whipped topping and a candy cane.

This is so tasty I have to make extra for those in the household who aren't on the Specific Carbohydrate Diet. It is loved by my kid with Crohn's who is on the SCD, and it has helped with weight gain. Inspired by Elana's Pantry Dairy Free White Hot Chocolate recipe, that another mom with a kid on SCD pointed me to, saying it seems to help her kid when flaring.

Number Of Ingredients 6

2 can(s) trader joe's coconut cream (or 3 cans of trader joe's full fat coconut milk)
3 ounce(s) cacao butter (terrasoul brand)
1/2 cup(s) honey, more or less to taste, my kid likes tiny bit less
6 pinch(es) salt, more or less to taste (about 1/4 tsp)
1 tablespoon(s) trader joe's organic bourbon vanilla extract
3 cup(s) water

Steps:

  • Use a kitchen scale to measure out 3 ounces cacao butter into a large saucepan or pot.
  • Add coconut cream, then heat until cacao butter has melted. Remove from heat.
  • Stir in remaining ingredients, until honey and salt are well dissolved. Can make frothy in a blender, or add a portion to a mason jar with a lid, and shake until frothy. I portion out all of it into lidded mason jars using a ladle, refrigerate leftovers, then microwave to heat & shake to get frothy, when ready to serve. This is very rich, but my kid on a very limited intro stage of the SCD in order to treat Crohn's drinks a lot of this & it helps to keep on weight. I currently will make a double batch & it keeps in the fridge until all of it is used.
