1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup sugar
3/4 cup butter or margarine, softened
1 package (10 oz) frozen raspberries in syrup, thawed and drained
1/4 cup orange juice
1 tablespoon cornstarch
3/4 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Mix flour, sugar and butter. Press in ungreased 13x9-inch pan. Bake 15 minutes.
  • Mix raspberries, orange juice and cornstarch in 1-quart saucepan. Heat to boiling, stirring constantly. Boil and stir 1 minute. Cool 10 minutes. Sprinkle chocolate chips over crust. Carefully spread raspberry mixture over chocolate chips.
  • Bake about 20 minutes or until raspberry mixture is set. Refrigerate about 1 hour or until chocolate is firm. For triangles, cut into 4 rows by 3 rows, then cut each square into 4 triangles.

6 large eggs, separated
1-1/2 cups butter, softened
1-1/2 cups sugar
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
3 ounces unsweetened chocolate, melted and cooled slightly
3 ounces white baking chocolate, melted and cooled slightly
1/4 cup seedless raspberry jam
1 cup semisweet chocolate chips, melted
White baking chocolate shavings

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Line bottoms of 2 greased matching 13x9-in. baking pans with parchment; grease papers., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, one at a time, beating well after each addition. Add vanilla. Stir in flour. With clean beaters, beat egg whites on medium speed until stiff peaks form. Fold into batter. Transfer half of the batter to another bowl. Fold melted unsweetened chocolate into 1 bowl; spread into a prepared pan. Fold melted white chocolate into remaining batter; spread into second prepared pan., Bake 12-16 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes. Invert onto wire racks. Remove parchment; cool completely., Transfer chocolate layer to a baking sheet lined with a large piece of plastic wrap. Spread jam over top; place white chocolate layer over jam. Wrap securely with plastic wrap. Set a cutting board or heavy baking pan over top to flatten layers. Let stand at room temperature 3-4 hours. (Or, refrigerate overnight and return to room temperature before continuing.), Unwrap cake; place on a cutting board. Spread top with melted chocolate chips. Top with white chocolate shavings. Let stand until set. Trim edges with a knife. Cut into 24 squares; cut squares diagonally in half.

1/2 cup butter, cubed
1 package (10 to 12 ounces) white baking chips, divided
2 large eggs
1/2 cup sugar
1 teaspoon almond extract
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup seedless raspberry jam
1/4 cup sliced almonds

Steps:

  • In a small saucepan, melt butter. Remove from the heat; add 1 cup chips (do not stir). In a small bowl, beat eggs until foamy; gradually add sugar. Stir in chip mixture and almond extract. Combine flour and salt; gradually add to egg mixture just until combined. , Spread half of the batter into a greased 9-in. square baking pan. Bake at 325° for 15-20 minutes or until golden brown., In a small saucepan, melt jam over low heat; spread over warm crust. Stir remaining chips into the remaining batter; drop by spoonfuls over the jam layer. Sprinkle with almonds. , Bake 30-35 minutes longer or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into bars.

3/4 cup crisp-rice cereal
1/2 cup finely chopped freeze-dried raspberries, plus more for sprinkling

Steps:

  • Melt white chocolate in microwave, 1 minute, 30 seconds. Stir until smooth. Stir in rice cereal and raspberries. Drop mixture onto parchment-lined baking sheets in 1 1/4-inch mounds. Sprinkle with more raspberries. Chill until set, about 30 minutes or up to 5 days.

These can only be described as delicious and decadent and well worth making. This was in a Robin Hood recipe book and I just knew that it would be worth trying. The triangles give it a very special look but you can cut these into squares or bars.

1/2 cup butter
6 ounces bakers white chocolate, chopped
2 eggs
1/2 cup white sugar
1 cup flour
1/4 teaspoon salt
1 1/2 teaspoons vanilla
2/3 cup smuckers raspberry jam
1 cup white chocolate chips
1/3 sliced almonds

Steps:

  • Melt butter in a saucepan and add chopped white chocolate and set aside.
  • Beat eggs and sugar on high speed until thick and lemon coloured about 5 minutes.
  • Stir butter and white chocolate mixture until smooth and then add to the egg mixture, along with flour, salt and vanilla.
  • Mix well.
  • Spread half the batter in a 9" greased square cake pan.
  • Bake at 325 for 25 minutes or until golden brown.
  • Cool 5 minutes and spread jam evenly over base.
  • Stir white chocolate chips into remaining batter.
  • Drop by spoonfuls evenly over jam and sprinkle with almonds.
  • Bake for 30-40 minutes longer or until set.
  • Cool completely before cutting.

3 1/2 cups chilled heavy whipping cream, divided
12 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1 1/4 teaspoons almond extract, divided
1/2 cup sugar
1/2 cup water
7 ounces Boudoirs or Champagne biscuits (crisp ladyfinger cookies),* divided
1 cup raspberry jam, melted, divided
1 1/2 12-ounce packages frozen unsweetened raspberries, partially thawed, divided
2 6-ounce containers fresh raspberries
3/4 cup sliced almonds, toasted

Steps:

  • Bring 1 cup cream to simmer in medium saucepan. Remove from heat. Add white chocolate; whisk until smooth. Cool to barely lukewarm, about 10 minutes. Beat 2 1/2 cups cream and 1/2 teaspoon extract in large bowl to soft peaks. Fold in white chocolate mixture.
  • Stir sugar and 1/2 cup water in small saucepan over medium heat until sugar melts. Mix in 3/4 teaspoon extract; remove syrup from heat. Quickly submerge 1 biscuit in syrup; shake excess back into pan. Place dipped biscuit in bottom of 14-cup trifle dish. Repeat with enough biscuits to cover bottom of dish.
  • Spread 1/3 of melted jam over biscuits in dish. Top with 1/3 of partially thawed berries with juices. Spread 1/3 of whipped chocolate cream over. Repeat layering with dipped biscuits, melted jam, partially thawed berries, and whipped chocolate cream 2 more times. Mound fresh berries in center of trifle. Sprinkle almonds around edge. Cover and chill at least 5 hours and up to 24 hours.

Nonstick vegetable oil spray
18 ounces imported white chocolate (such as Tobler or Lindt), finely chopped
1/2 cup whipping cream
6 tablespoons (3/4 stick) unsalted butter, cut into small pieces, room temperature
2 tablespoons framboise eau-de-vie (clear raspberry brandy)
1 pint (2 baskets) raspberries
For sauce
1 10-ounce package frozen raspberries in syrup
1 7-ounce ripe pear, halved, cored, cut into eighths
Mint leaves
2 tablespoons framboise eau-de-vie

Steps:

  • Make terrine:
  • Coat 7 1/2 x 3 3/4 x 2-inch (3 cup) loaf pan with nonstick vegetable oil spray. Line with 3x12-inch strip of waxed paper, pressing gently to fit and overlapping ends of pan.
  • Warm 1/3 of chocolate with cream in heavy small saucepan over low heat, stirring constantly with rubber spatula until melted and smooth. Add remaining chocolate in 2 batches, allowing second batch to melt completely before adding last third. Remove from heat occasionally to avoid overheating chocolate. Add 3 tablespoons butter and 1 tablespoon framboise. Stir until butter is just melted. Repeat with remaining butter and framboise. Remove from heat; let stand in warm area while assembling terrine layers.
  • Pour 2/3 cup chocolate mixture into prepared pan and freeze until set but not hard, about 15 minutes. Choose medium-size berries and arrange upside down in 9 crosswise rows of 3 berries each, spacing evenly and leaving border around edge of pan. Press gently into chocolate. Gently pour 1 cup chocolate mixture over berries in even layer. Freeze until set but not hard, about 20 minutes. Repeat layering with more berries to form second layer. Press gently into chocolate. Gently pour remaining chocolate mixture over. Smooth to form even layer. Refrigerate until firm. Cover and chill overnight. Reserve remaining berries for garnish. (Can be prepared 2 days ahead.)
  • Make sauce:
  • Combine raspberries with syrup and pear in heavy small saucepan. Stir to coat pear with syrup. Bring to simmer. Simmer until pear softens, about 10 minutes. Puree in blender until smooth. Strain puree through fine sieve. (Can be prepared 2 days ahead. Cover tightly and refrigerate.)
  • Run small sharp warm knife around top edge of terrine. If necessary dip bottom of terrine into warm water about 5 seconds. Using waxed paper as aid, gently unmold onto small cutting board. Peel off waxed paper. Use spatula to smooth surface if necessary.
  • Heat long thin knife under warm water. Dry knife and slice terrine into 1/8-inch-thick slices, cleaning and warming knife as necessary. Place 2 to 3 slices in center of each plate. Garnish one side of plate with reserved fresh berries and mint leaves. (Can be prepared 2 hours ahead. Cover; chill.)
  • Just before serving, mix framboise into sauce. Spoon 2 to 3 tablespoons sauce opposite berries. Let stand at room temperature 10 minutes.

I found this recipe on the back of a bag of all purpose flour. These are very good and easy to make. The sweetness of the raspberries and the richness of the chocolate were a hit with our tailgating crowd.

3/4 cup sugar
3/4 cup butter, softened
1 (10 ounce) box frozen raspberries in light syrup, thawed & undrained
1/4 cup orange juice
1 tablespoon cornstarch
3/4 cup mini chocolate chip

Steps:

  • Heat oven to 350.
  • In medium bowl mix flour, sugar & butter with a spoon. In the bottom of an ungreased 9 X 13 pan, press the dough evenly. Bake for 15 minutes.
  • In a 1 quart saucepan mix the raspberries, orange juice & cornstarh. Heat to boiling stirring constantly. Boil and stir 1 minute. Cool for 10 minutes.
  • Sprinkle chocolate chips over the crust and carefully spread the raspberry mixture over the chocolate chips.
  • Return to oven and bake about 20 minutes or until raspberry mixture is set.
  • Refrigerate about 1 hour or until chocolate is firm. Cut into triangles.
