1 cup whole milk
¾ cup white sugar
1 vanilla bean, slit lengthwise, seeds scraped
1 pinch salt
5 egg yolks
1 (8 ounce) package white chocolate chips
2 cups heavy whipping cream
1 teaspoon vanilla extract
1 (12 ounce) package frozen raspberries

Steps:

  • Heat milk, sugar, vanilla bean and seeds, and salt in a saucepan over medium heat until warm, about 5 minutes.
  • Whisk egg yolks and about 1 cup warm milk mixture in a bowl; stir egg mixture into saucepan. Continue to cook and stir until custard thickens enough to coat the back of a spoon, 5 to 7 minutes. Remove vanilla bean. Stir white chocolate chips into custard until melted. Pour custard into a large bowl and stir in heavy cream and vanilla extract. Cover and refrigerate until chilled.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency.
  • Heat raspberries in a saucepan over medium heat until raspberries begin to fall apart, 7 to 10 minutes. Press raspberries through a sieve over a bowl to remove the seeds; discard seeds.
  • Gently swirl raspberries into the soft ice cream creating ribbons of raspberries. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

These ice cream bars, featuring our limited edition Tasty® Raspberry White Chocolate Lava Cake Ice Cream, are a dinner party-worthy dessert. We used store-bought cookie dough to simplify the process, but feel free to get creative with your own bases. The best part? No spoons needed!

nonstick cooking spray, for greasing
8 oz cookie dough, prepared
1 carton Tasty® Raspberry White Chocolate Lava Cake Ice Cream
10 oz white chocolate chip
2 ½ tablespoons coconut oil
2 tablespoons freeze-dried strawberry, crushed into a powder and sifted to remove seeds
3 oz graham cracker, cut into 2 in (5 cm) squared
1 cup heavy whipping cream
1 tablespoon powdered sugar
12 fresh raspberries
12 fresh mint leaves
Tasty® 12-cup nonstick brownie pan

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Lightly grease the brownie pan with nonstick spray. Using your fingers, press a cookie dough square into each of the cups, making sure that the dough completely covers the bottom of the cup and comes up the sides slightly.
  • Bake for 10 minutes, until the cookie dough is golden brown and cooked through. Let the cookie squares cool completely in the pan, about 20 minutes.
  • While the cookies cool, take the ice cream out of the freezer to soften.
  • Spread 1 heaping tablespoon of softened ice cream on top of each cooled cookie square. Freeze for 1 hour.
  • Make the magic shell: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and all of the chips are completely melted. Stir in the freeze-dried strawberry powder.
  • Line a baking sheet with parchment paper and set a wire rack on top. Pop the ice cream bars out of the pan and set on the wire rack.
  • Top each ice cream square with a graham cracker square, pressing down to adhere.
  • Coat each ice cream bar with 2 tablespoons of the magic shell. Return to freezer for 20 minutes, until set.
  • Meanwhile, make the whipped cream: In a medium bowl combine the heavy cream and powdered sugar. Beat with an electric hand mixer for 4-6 minutes, until medium peaks form.
  • Top each ice cream bar with 2 tablespoons of whipped cream, a raspberry, and a mint leaf.
  • Enjoy!

1 cup sugar
1/2 cup water
1/8 teaspoon cream of tartar
1 1/3 cups coarsely chopped walnuts
Terrine
4 large egg yolks
1 1/2 cups heavy whipping cream
1 1/2 cups whole milk
1/2 cup sugar
8 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1/2 teaspoon vanilla extract
Blackberry-Raspberry Sauce

Steps:

  • For praline:
  • Line rimmed baking sheet with foil. Stir sugar, 1/2 cup water, and cream of tartar in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and boil without stirring until syrup is pale amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 5 minutes. Add nuts; stir with wooden spoon until coated with syrup. Continue to cook until syrup is deep amber color, gently pushing nuts into syrup, about 3 minutes longer. Immediately scrape mixture out onto prepared baking sheet, spreading as thinly as possible with metal spatula. Let praline stand until cool and firm, about 1 hour. Break praline into irregular pieces. Set aside a few pieces for garnish. Coarsely chop remaining praline. (Can be made 3 days ahead. Store airtight at room temperature.)
  • For terrine:
  • Whisk yolks in bowl to blend. Bring cream, milk, and sugar to simmer in heavy medium saucepan, stirring until sugar dissolves. Gradually whisk cream mixture into yolks; return to saucepan and stir constantly until mixture thickens slightly and instant-read thermometer inserted into mixture registers 170°F, about 3 minutes (do not boil). Transfer custard to 4-cup measuring cup; cool slightly.
  • Place white chocolate in medium metal bowl. Set bowl over saucepan of barely simmering water; stir just until chocolate is melted and smooth. Remove bowl from over water. Gradually whisk warm custard into melted chocolate. Mix in vanilla. Cover and chill custard at least 4 hours and up to 1 day.
  • Process custard in ice cream maker. Transfer ice cream to container; cover and freeze at least 6 hours or overnight.
  • Line 9x5x3-inch loaf pan with double layer of plastic wrap, leaving 4-inch overhang. Spread 1/3 of ice cream over bottom of prepared loaf pan; sprinkle with half of chopped praline. Spread half of remaining ice cream over; sprinkle with remaining chopped praline. Spread remaining ice cream over. Fold plastic wrap over to cover. Freeze overnight. (Can be made 3 days ahead. Keep frozen.)
  • Invert terrine onto platter; remove plastic wrap. Serve terrine with sauce and garnish with reserved praline pieces.

Haagen Dasz makes a white chocolate raspberry truffle ice cream that I absolutely LOVE; so I was very happy when I found this recipe.

1 c (8 fl oz) milk
2 c (16 fl oz) whipping cream
7 large egg yolks
2 Tbsp granulated sugar
8 oz white chocolate, chopped into small pieces
1 tsp vanilla extract
FOR THE RASPBERRY RIPPLE SAUCE
1 pkg (10 oz) frozen raspberries in light syrup*
2 tsp light corn syrup
1 Tbsp lemon juice
1 Tbsp corn starch mixed to a paste with 1 tablespoon water

Steps:

  • 1. PREPARE THE SAUCE: Press the raspberries and their syrup through a sieve into a saucepan. Add the corn syrup, lemon juice and cornstarch mixture. Bring to a boil, stirring often, then simmer for 1 to 2 minutes. Pour into a bowl and cool, then chill.
  • 2. In a large saucepan, combine the milk and 1 cup of the cream and bring to a boil. In a bowl, beat the egg yolks and sugar with a hand-held mixer for 2 to 3 minutes until thick and creamy. Gradually pour the hot milk mixture over the yolks, then return to the pan. Cook over medium heat until the custard coats the back of a wooden spoon, stirring constantly.
  • 3. Remove the pan from the heat and stir in the white chocolate until melted and smooth. Pour the remaining cream into a large bowl. Strain in the hot custard, mix well, then stir in the vanilla extract. Cool, then transfer the custard to an ice cream maker and freeze according to the manufacturer's instructions.
  • 4. When the mixture is frozen, but still soft, transfer 1/3 of the ice cream to a freezerproof bowl. Set 1/2 the raspberry sauce aside. Spoon a third of the remainder over the ice cream. Cover with another third of the ice cream and more sauce. Repeat. With a knife or spoon, lightly marble the mixture. Cover and freeze. Allow the ice cream to soften for 15 minutes before serving with the remaining raspberry sauce.
  • 5. * If you like, you can substitute a 10 oz jar of reduced-sugar raspberry preserves or jam for the frozen raspberries. If using the preserves, omit the 1 T. cornstarch, but still add the 1 T. water when making the sauce.

1 can condensed milk
1/4c sugar
1/4c brown sugar
1pint heavy cream
1pint 1/2-1/2
1/4tsp. salt
2 1/2 TBS. vanilla extract
4oz white chocolate melted
2 tsp. chambord
1c raspberries

Steps:

  • In a large mixing bowl whisk two eggs*, add 1 can of sweetened condensed milk and whisk together until thoroughly mixed. Then add 1/4 cup sugar, 1/4 cup brown sugar and again mix thoroughly. Don't pack the brown sugar into the measuring cup, let it stay loose just as it comes out of the box. Then add 1 pint of heavy whipping cream, 1 pint of half and half, 1/4 tsp salt and 2 1/2 tablespoons of real vanilla extract. For the very best results (who wants anything less?), melt the chocolate and stir slowly into the mixture.let the mix chill in the refrigerator for about four hours which allows the mix to "age" before freezing according to the directions with your ice cream freezer..
