Steps:
- To prepare pizza dough, place warm water in a small bowl; add yeast and honey, stirring to dissolve. Set aside for 5 minutes, mixture will almost double in size.
- Combine flour and salt in stand mixer with a fitted dough hook attached. Add olive oil and yeast mixture, continue mixing on low speed for 5-7 minutes, until dough pulls away from the sides of bowl and forms a smooth, sticky ball. If the dough is too wet and doesn't pull away, gradually add small amounts of flour until it cleans sides of bowl.
- Transfer dough onto a clean work surface, lightly dusted with flour or on top of parchment paper. Cut dough into two equal pieces. Form each piece into round balls. Knead each piece a couple times then place into 2 separate mixing bowls sprayed with cooking spray. Cover with plastic wrap and let rise in a warm space for 1 hour. I turn my oven on warm temperature for 10 minutes, then turn it off for the dough to rise in a warm space.
- Preheat oven to 350 degrees F. Remove dough from oven and punch down to deflate. Transfer each dough ball onto a clean surface dusted with flour or lined with parchment paper. With a rolling pin, roll dough 10-12 inches 1/4 inch thick. Lightly spray two 12 inch pizza pans with cooking spray. Transfer dough to pizza pans and bake for 8-10 minutes or until cooked through.
- For toppings, melt peanut butter and jelly in two separate heat proof bowls in the microwave for 15 seconds. Spread warm peanut butter over hot crust with an offset spatula or butter knife. Place the warm jelly into a piping bag you can snip the corner or place the jelly in the corner of a ziplock baggie, snipping a small corner to use as a piping "pen." Squeeze a small circle of jelly in the center of the pizza. Continue making larger circles working your way to the outside crust and forming a "target" pattern. Gently pull a knife across the jelly circles working from the crust to the center of the pizza to create pattern lines. Bake pizzas for another 2-3 minutes if desired. (I did not bake a second time)

CHOCOLATE PEANUT BUTTER PIZZA
This is probably the most unusual "pizza" you'll ever see! It's a great dessert for kids, although adults snap it up, too. Everyone loves the chewy crust and the great flavor. Chocolate and peanut butter are a nice combination.

"WE NEED TO TALK" CHOCOLATE PIZZA
Steps:
- Preheat oven to 400 degrees F.
- After baking the dough, milk chocolate and white chocolate chunks should be sprinkled over the surface. Top with mini marshmallows, banana slices and peanut butter drizzle can also be added.
- Place pizza into oven for 3 to 5 minutes to melt the chocolate and marshmallows.
- Preheat oven at 450 degrees F.
- Measure out 1 3/4 cups warm water (it should be pleasantly warm on your wrist). Sprinkle the yeast on top of the water and allow it to activate, about 10 minutes.
- Put the salt and 2 cups of the flour into a food processor. Pulse 5 times to blend. Pour in the yeast and water and pulse 5 times. Add the olive oil. Add the remaining flour 1 cup at a time, pulsing and scraping the sides of the bowl until well blended. As soon as the mixture is combined, dump it out onto a well-floured board and knead for 15 turns, until the dough is smooth and elastic.
- Place the dough in a greased bowl and turn to coat all sides. Cover with plastic wrap or a tea towel. Allow the dough to rise in a warm place for about 45 minutes, until doubled in size, then punch it down. Divide it in half; each half will make 1 (12-inch) pizza.
- Place on a cornmeal-dusted pizza stone, pizza pan, or cookie sheet. Roll up edge slightly to create a ridge around the pizza. Bake for 16 to 18 minutes, or until crust is light brown.
- Cook's Note: If using only half dough, freeze the other half. Place the dough in a resealable freezer bag. To thaw, remove the bag from the freezer and place in the refrigerator for 24 hours. Roll the dough out while cold then allow it to come to room temperature before adding toppings.

PEANUT BUTTER AND JELLY DESSERT PIZZA
My kids think I'm a goddess now! You can use something other than strawberry if you like. Be careful after taking this out of the oven. Let it cool until it is just warm because the jelly can really burn ya.
