1 tablespoon butter
2 tablespoons sugar
1 1/2 cups graham cracker crumbs
2 lbs cream cheese
1/2 cup heavy cream
1 cup sour cream
4 eggs
2 cups sugar
9 ounces white chocolate
1 tablespoon butter
4 tablespoons flour
1 tablespoon cornstarch
4 key limes
2 teaspoons vanilla

Steps:

  • Prepare crust (see below).
  • Heat oven to 350°F.
  • In bowl beat softened cream cheese until smooth, add heavy cream, sour cream, beaten eggs, sugar, melted butter, flour, corn starch, melted white chocolate, juice from key limes and vanilla. Pour into crust in spring form pan. Bake 1 hour, turn oven off and leave for 1/2 hour with door closed. Chill 12 hours before serving.
  • Crust: Melt butter combine ingredients and pat in bottom of spring form pan.

This is a recipe I made myself because I love the tartness of lime mixed with white chocolate. Also, I love cheesecake!

2 tablespoons graham cracker crumbs
4 (8 ounce) packages cream cheese, softened
1 cup white sugar
4 eggs
1 (12 ounce) package white chocolate chips
½ cup heavy whipping cream
4 key limes, zested and juiced

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease the bottom of a 9-inch springform pan.
  • Sprinkle graham cracker crumbs into the bottom of the prepared pan.
  • Beat cream cheese and sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time, allowing each egg to blend into the cream cheese mixture before adding the next.
  • Mix white chocolate chips, cream, lime juice, and lime zest together in a stainless steel bowl. Place bowl over a pot of boiling water.
  • Stir chocolate chips mixture until the chocolate melts completely and the mixture is smooth, about 5 minutes; pour into the cream cheese mixture and stir to combine. Pour the mixture over the graham cracker crumbs in the prepared springform pan.
  • Bake in preheated oven the cake's center is set, about 75 minutes. Cool at room temperature for 15 minutes before refrigerating to chill completely, at least 1 hour.

2 cups gingersnaps crumbs
2 tablespoons granulated sugar
7 tablespoons unsalted butter, melted
1 large egg
4 large egg yolks
2 (15-ounce) cans sweetened condensed milk
1 cup bottled key lime juice
1 teaspoon freshly grated lime zest
Pinch salt
1/4 cup whole milk
1/4 cup heavy cream
8 ounces good quality white chocolate, chopped

Steps:

  • Preheat oven to 350 degrees F. Combine all ingredients in a bowl and press into a 9 by 13 baking dish lined with aluminum foil that extends 2 inches beyond the short end of the pan. Bake for 8 to10 minutes, remove from oven. Then reduce oven temperature to 325 degrees F.
  • Whisk all ingredients together in a medium bowl. Pour the filling over the prepared crust. Bake until the filling is almost set, about 20 to 22 minutes. Cool the bars completely in the pan set on a wire rack. Refrigerate the bars for at least 2 hours, until chilled.
  • In a medium saucepan, bring the milk and cream to a gentle boil. Add the chopped chocolate and let stand for 30 seconds to melt the chocolate. Whisk the mixture until the chocolate is completely melted and the mixture is smooth. Set the topping aside to cool to room temperature for 15 minutes, stirring occasionally, until cool. Pour the cooled white chocolate topping over the chilled bars and, using a small, offset metal spatula, spread it into an even layer. Freeze the bars in the pan for at least 1 hour before cutting.
  • Ginger Mint Syrup: 1/2 cup water 1/3 cup granulated sugar 2 tablespoons finely chopped candied ginger 1 tablespoon ginger liqueur, such as Canton 1/4 cup packed mint leaves
  • In a small saucepan, combine the water, sugar, and candied ginger and bring to a boil over medium-high heat. Continue to boil until the syrup is reduced to about 1/3 cup. Remove the pan from the heat and let the mixture cool for 5 minutes. Stir in the ginger liqueur and pour the syrup into a blender. Add the mint leaves and blend until the mint is finely chopped. Transfer the syrup to a squeeze bottle and refrigerate until chilled, at least 1 hour.

CRUST
2 c graham crackers
1/4 c sugar
1/2 c butter
FILLING
6 Tbsp key lime juice
1 pkg 1 packet unflavored gelatin
2 1/2 c heavy cream divided
10 oz white chocolate chopped
3 pkg (8 ounces) cream cheese
1 c sugar
1 1/2 Tbsp lima zest
1 1/2 oz white chocolate grated or shaved for garnish
- candied lime or peel fr garnished
CANDIED LIME
4 limes
2 c sugar
2 c water

Steps:

  • 1. Crust Mix together the cracker, sugar, and butter. Press the mixture into bottom and 1-inche up the sides of a 10-inch spring form pan. Set aside
  • 2. Filling In a medium saucepan over medium heat, add the lime juice. Whisk in the gelatin and 1/2 cup of the heavy cream and bring to a simmer. Remove the pan from the hear. Add 10 ounces of chopped white chocolate, stir until smooth. Allow to cool.
  • 3. Using a electric mixer, blend together the cream chess, sugar and lime zest in a medium bowl until smooth. Slowly beat into the cooled white chocolate mixture into cream cheese mixture.
  • 4. Using clean, dry beaters, beat the reaming 2-cups heavy cram in a small bowl until it forms soft peaks. Fold it into the white chocolate mixture and pout into the pie crust. Cover and freeze overnight.
  • 5. Remove from freezer and run a sharp knife around inside of springform pan to help loosen the pie. Release springform from the bottom of the pan and transfer the pie to serving plate. Grate or curl the white chocolate over the top and garnished with candied limes. Cut into wedges with a knife that has been dipped into hot water and serve.
  • 6. Candied Limes Bring a medium-sized saucepan of water to boil over medium heat. Add the lime glance for a couple of minuets. Set aside Put the limes in another medium saucepan and cover with equal parts of sugar and water. Simmer, covered over low heat for 1 hour. Remove the limes and drain until almost dry. Roll into sugar and set aside to dry.
  • 7. You can also garnished with fresh limes, squeezing the lime over the sliced cheesecake give it a little zing...

1 stick unsalted butter, cut into pieces
2 ounces semisweet chocolate, chopped
1 9-ounce package chocolate wafer cookies
2 tablespoons sugar
1/2 cup fresh Key lime juice (from about 10 Key limes) or bottled Key lime juice
2 teaspoons unflavored gelatin powder (from one 1/4-ounce packet)
1/4 cup sugar
2 8-ounce packages cream cheese, at room temperature
1 14-ounce can sweetened condensed milk
1/2 teaspoon vanilla extract
2 ounces semisweet chocolate, chopped

Steps:

  • Make the crust: Line a 9-by-13-inch baking dish with foil, leaving an overhang. Put the butter and chocolate in a microwave-safe bowl; microwave in 30-second intervals, stirring, until melted and smooth. Pulse the cookies with the sugar in a food processor until finely ground. With the motor running, pour in the warm melted chocolate mixture and process until combined. Press the crumb mixture into the bottom of the prepared pan and refrigerate while you make the filling.
  • Make the filling: Warm the lime juice in a small saucepan over low heat; whisk in the gelatin and sugar until completely dissolved, then remove from the heat and let cool slightly. Beat the cream cheese in a large bowl with a mixer on high speed until smooth and fluffy, about 4 minutes. Add the sweetened condensed milk and beat until smooth. Beat in the gelatin mixture and vanilla. Spread in the prepared crust and refrigerate until firm, at least 4 hours or overnight. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring, until smooth. Drizzle over the cheesecake and refrigerate until ready to serve. This is a delightful and refreshing dessert. I found a recipe 15 years ago that is similar to mine, but I modified it to have a very good blend between the lime juice and sugar. My crust enhances the taste of the cheesecake.

1/2 cup crushed graham wafers or 1/2 cup crushed graham wafer crumbs
1/2 cup crushed vanilla wafers or 1/2 cup crushed vanilla wafer crumbs
1/4 cup ground blanched almond
1/4 cup butter
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 large egg
2 teaspoons grated lime zest
1/2 cup key lime juice, freshly squeezed
1 tablespoon tapioca starch or 1 tablespoon cornstarch

Steps:

  • CRUST---------.
  • Preheat oven to 350 F degrees.
  • In a mixing bowl, combine graham wafer crumbs, vanilla wafer crumbs and ground almonds.
  • Cut in butter using a pastry blender or a fork until mixture is crumbly.
  • Prepare a 9 inch x 9 inch oven-proof casserole dish by spraying inside with a vegetable spray.
  • Press wafer mixture firmly in bottom of casserole dish.
  • Bake in preheated 350 F oven for 15 minutes.
  • FILLING----------.
  • In a mixing bowl using an electric mixer, beat softened cream cheese, sugar and egg until smooth.
  • Add lime juice, grated lime zest and tapioca starch and beat until smooth and creamy.
  • Spread mixture evenly over baked crust.
  • Return to oven and bake at 350 F for 25 to 30 minutes or until set.
  • Cool on wire rack.
  • Chill in refrigerator for at least 1 hour before cutting into squares to serve.
  • If desired, decorate top of cheesecake with pieces of lime or halved small fresh strawberries or quartered maraschino cherries (red and green).
  • You can also use regular lime juice or use bottled key lime juice.

1/4 cup packed brown sugar
2 teaspoons vanilla
1 cup Gold Medal™ all-purpose flour
1 package (8 oz) cream cheese, softened
1 1/2 cups powdered sugar
1 whole egg
3 teaspoons grated lime peel
3 oz white chocolate baking bars or squares, melted
4 egg yolks
3/4 cup granulated sugar
1 tablespoon cornstarch
3/4 cup water
1/4 cup Key lime juice
2 tablespoons butter
Lime slices, if desired

Steps:

  • Heat oven to 325°F. Lightly grease 8-inch square pan with shortening or cooking spray.
  • In medium bowl, beat 1/2 cup butter and the brown sugar with electric mixer on medium speed until creamy. Add 1 teaspoon of the vanilla; beat until blended. On low speed, beat in flour until blended. Press dough into pan. Bake 25 minutes or until golden brown. Cool on cooling rack.
  • Meanwhile, in large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until creamy. Add whole egg, 1 teaspoon of the lime peel and remaining 1 teaspoon vanilla; beat well. Add melted white chocolate; beat until combined. Cover; refrigerate.
  • In 2-quart saucepan, mix egg yolks, granulated sugar and cornstarch; gradually stir in water and lime juice. Cook over medium-low heat, stirring constantly, until mixture thickens and coats the back of a metal spoon. Remove from heat; stir in 2 tablespoons butter and remaining 2 teaspoons lime peel. Cool 10 minutes.
  • Spread cream cheese filling over baked crust. Pour lime curd over filling.
  • Bake 40 minutes or until edges are lightly browned. Cool completely on cooling rack. Chill 2 hours. Cut into 4 rows by 4 rows. Garnish with lime slices. Store in refrigerator.
