WHITE CHOCOLATE CHIP BROWNIES

Steps:
- Preheat oven to 350°F/180°C. Line a 9x13 inch pan with parchment paper or aluminum foil, leaving enough overhang on the sides for lifting the brownies out after baking.
- In a small bowl sift together flour, cocoa powder, and salt. Set aside.
- In a medium heatproof bowl, place chocolate and butter. Heat mixture in the microwave in 20- to 30-second intervals, stirring between each interval, until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally. Set aside.
- Using a mixer fitted with the whisk attachment, whisk eggs and sugar on high speed until thick and pale, 4-5 minutes. Turn off mixer. Slowly add in chocolate mixture and fold, using a rubber spatula, until combined. Add flour mixture and keep folding just until combined. Fold in white chocolate.
- Pour batter into prepared pan and smooth the top. Bake for 15-18 minutes. Don't open the oven door in the first 13 minutes of baking. Mine are ready in 15 minutes, it sounds too short but these brownies aren't very thick and it's important to keep them fudgy, so be careful not to overbake. A toothpick inserted into the center of the brownies should come out moist, not dry. Let brownies cool completely on a wire rack. You can refrigerate until set for easy cutting. Lift brownies out of the pan using parchment paper and cut into bars. Slightly warm they're heavenly!
- Store brownies at room temperature or in the fridge in an airtight container for up to 4 days. Serve warm or at room temperature. Brownies can be frozen for up to 2 months. Thaw them overnight in the fridge.

- Combine flour, cocoa, baking powder and salt in medium bowl. Beat sugar, butter and vanilla extract in large mixer bowl. Add eggs, one at time, beating well after each addition. Gradually beat in flour mixture. Stir in 1 1/2 cups morsels. Spread into prepared pan.
- Bake for 25 to 30 minutes or until wooden pick inserted near center comes out slightly sticky. Cool in pan on wire rack (brownies will sink in center when cooled).
- Microwave remaining morsels in heavy-duty plastic bag on MEDIUM-HIGH (70%) power for 30 to 45 seconds; knead. If necessary, microwave at additional 10- to 15-second intervals, kneading until melted. Cut tiny corner from bag; squeeze to drizzle over brownies. Refrigerate for 5 minutes. Cut into squares.

- Move racks to the center of the oven, and heat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, 4 to 5 minutes. Add the egg and mix until fully incorporated, about 1 minute more. Scrape down the sides of the bowl.
- Add 1 tablespoon red food coloring (and up to 1 1/2 tablespoons for really red cookies) and vanilla extract and mix on medium speed to combine. Scrape down the sides of the bowl.
- In a small bowl, whisk the flour, cocoa powder, baking soda, and salt to combine. Add to the mixer and mix on low speed until fully incorporated, 1 to 2 minutes. Add the buttermilk (or milk) and mix on low speed to combine, then scrape down the sides of the bowl.
- Add about 3/4 of the white chocolate and mix on low speed to combine. Scoop 2 tablespoon-sized balls of dough onto the prepared baking sheets, leaving at least 1 1/2 inches between each piece. Use your palm to flatten the balls slightly.
- Press the remaining white chocolate chunks into the surface of each piece of dough. Bake for 12 minutes, until the cookies appear set on the outside and puffed in the center, rotating the baking sheets halfway through. Cool completely on the baking sheet.

This is a simple variation on a chocolate brownie recipe that my mother made me growing up, which originally came from my grandmother. I am a big white chocolate fan, and this will satisfy even the biggest white chocolate craving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Melt the butter and white chocolate together over low heat in a saucepan. Remove from heat, and let cool slightly. Meanwhile beat eggs with sugar and vanilla extract in a mixing bowl; mix in the butter mixture, and stir in the flour and salt until thoroughly combined. - Move oven rack to the center position of the oven. Spray a foil lined 9-inch baking pan(foil extending over edge), with butter spray. In a small bowl, stir the flour, baking powder and salt together; set aside.
- In a large mixer bowl, beat together sugars and butter until blended well. Add the eggs, dissolved coffee, and vanilla and mix until combined. The mixture may look curdled(it's ok). On low speed add the flour mixture, mixing to incorporate. Mix in 1 cup of the white chips until evenly mixed in.
- Pour the batter into the pan. Bake in 350^ oven for about 30 minutes- testing with toothpick. Remove from oven and sprinkle on or design a pattern with the remaining white chips,( let set on brownies for about 5 minutes to melt slightly) and gently with the back of a spoon or other device swirl the melted chips to your liking or just smear all over the top. Cool till chocolate topping is firm, about 1 hour.
- Loosen the sides of the brownies from the unlined sides and lift out of the pan with the foil. Use a sharp knife to cut into desired pieces- use a spatula to serve cut pieces. Enjoy with a cup of your favorite beverage.
