1 package (8 ounces) cream cheese, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh raspberries
1/2 cup vanilla or white chips

Steps:

  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat in well after each addition. Stir in vanilla. Combine the flour, baking powder and salt; add to cream cheese mixture just until blended. Fold in raspberries and chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

2 cups Gold Medal™ all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 egg
1 cup low-fat milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla
1 cup frozen wild blueberries
1/2 cup white chocolate chips or white vanilla baking chips
2 tablespoons cold salted butter, cut into 8 pieces
1/4 cup packed light brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups. In medium bowl, stir together 2 cups flour, the granulated sugar, baking powder and salt; set aside.
  • In large bowl, beat egg with electric mixer on medium speed 3 to 4 minutes or until light yellow in color. On low speed, beat in milk. While mixer is running on low speed, add melted butter in a thin stream; beat 1 minute.
  • On low speed, gradually beat in flour mixture just until incorporated. Add vanilla, blueberries and chips; mix briefly to combine. Divide batter evenly among muffin cups.
  • In food processor, process streusel topping ingredients with on/off pulses until combined. Sprinkle evenly over batter in cups.
  • Bake 20 to 24 minutes or until toothpick inserted in centers come out clean. Cool about 5 minutes before serving. Store in airtight container.

2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1-1/3 cups buttermilk
1/2 cup butter, melted
1 cup dried cranberries
2 ounces white baking chocolate, grated
1/2 cup confectioners' sugar
4 to 5 teaspoons cranberry juice

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, buttermilk and butter. Stir into dry ingredients just until moistened. Fold in cranberries and chocolate., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. , In a small bowl, combine the confectioners' sugar and enough cranberry juice to achieve drizzling consistency. Drizzle over muffins.

1/2 cup vegetable oil

1 1/3 cups fresh berries (such as blueberries, raspberries, blackberries, huckleberries or sliced strawberries, or a combinati)

Steps:

  • Position a rack in the center of the oven and preheat to 400°F.
  • Lightly butter twelve 2 1/2-inch muffin cups or place paper muffin cups in the muffin tin.
  • In a medium bowl, whisk the flour, sugar, baking powder, baking soda and salt to combine and make a well in the center.
  • In another medium bowl, whisk the milk, oil and eggs.
  • Mix well and pour into the well.
  • Stir just until blended.
  • Fold in the berries.
  • Spoon equal amounts of the batter into the muffin cups, filling them about three-fourths full.
  • Bake until a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes.

1 cup plain flour
1/2 teaspoon baking powder
1/4 cup sugar
1/4 cup white chocolate chips
1 egg, lightly beaten
1/2 cup skim milk
1/2 teaspoon vanilla extract
1/4 cup butter, melted
1/3 cup frozen mixed berries, thawed on paper towel for 5-10 minutes

Steps:

  • Heat oven to 180°C.
  • Lightly grease a 6 x 1/2-cup capacity muffin pan.
  • Sift flour and baking powder into a large bowl.
  • Add sugar and white chocolate chips. Stir until combined.
  • Whisk eggs, milk, vanilla and butter in a separate bowl until just combined.
  • Stir butter mixture into flour mixture until just combined. Gently swirl through berries.
  • Spoon mixture into muffin holes. Bake for 25 to 30 minutes or until a skewer inserted into the centre comes out clean.
