This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses '"jack" for the Tex-Mex version and chihuahua and/or asadero for the more traditional Mexican version.

1 cup asadero cheese or 1 cup chihuahua cheese, shredded fine
4 ounces green chilies
1/4 cup half-and-half
2 tablespoons onions, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)

Steps:

  • Put all ingredients in a double boiler and heat on medium.
  • Cook until melted and well blended, stirring occasionally.
  • Serve with fresh tostadas or hot flour tortillas.

1 1/4 lbs white American cheese, cut into 1-inch cubes
1/4 cup diced green chilis
2 pickled jalapeno peppers, chopped
1 ounce pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
cayenne pepper (optional)

Steps:

  • Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  • Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
  • *Recipe Note: White American cheese is found at most deli counters in your local grocery store.

  • Combine American cheese, Monterey Jack cheese, half-and-half, cream, and jalapeno peppers in a large saucepan over medium-low heat; gradually stir spinach into mixture, a few tablespoons at a time. Cook and stir dip until melted and smooth, 15 to 20 minutes.

1-1lb. block of land-o-lakes hot pepper cheese/ not sliced, but the block and it has to be land-o-lakes!!!!and it has to be the hot pepper cheese not the american cheese!
1+ Tbsp small jar of sliced jalapeños in the juice
1+ Tbsp 2% milk

Steps:

  • 1. Cut the cheese (LOL!) in to small chunks and put in a glass microwaveable bowl in the microwave. Start to melt on high using a fork to mix, until it starts to get creamy. Next I add the juice from the jar of sliced jalapeños and milk.. one Tablespoon each at a time. Mix it in and keep adding both and microwaving until it gets to where you want it taste wise and in creaminess. I will finely chop one jalapeño from the jar and mix it into the dip before I serve it with nachos. If it starts to thicken just microwave for a few seconds.

4 ounces diced green chilies
1/4 cup fat-free half-and-half

4 cups shredded white cheddar cheese
2 tablespoons all-purpose flour
1/4 teaspoon dry mustard
1/4 teaspoon onion powder
3/4 cup half-and-half
1/2 teaspoon Worcestershire sauce
1 loaf unsliced pumpernickel bread
paprika
red apple, sliced
green apple, sliced

Steps:

  • In 8-cup measure, combine cheese, flour, dry mustard and onion powder.
  • Toss to coat.
  • Stir in half-and-half and Worcestershire sauce.
  • Microwave at%50 (Medium) for 5 to 7 minutes, or until mixture can be stirred smooth, stirring twice with whisk.
  • Set aside.
  • Cut to 1 to 1 1/2-inch slice from top of bread.
  • Cut around inside of loaf, leaving 1/2 inch of bread around outside.
  • Remove center, leaving at least 1 inch of bread on bottom.

1 1/4 cups white American cheese, shredded (I buy a hunk at the grocery store deli and shred it myself)
1/4 cup 2% low-fat milk or 1/4 cup whole milk
1/2 tablespoon pickled jalapeno pepper, minced (the ones used for nachos, in a jar)
2 1/2 teaspoons jalapeno juice, from the jalapenos above

Steps:

  • Add all ingredients (in order) in microwave safe dish. Microwave on high for 1 to 1 1/2 minutes, stirring every 20 seconds.
  • Stir until smooth. If it seems too thin, keep stirring.
  • Serve with flour tortillas or tortilla chips.
  • For mild, leave out the jalapenos. IMPORTANT: Do not leave out the jalapeno LIQUID, that is what helps make the flavor.

  • Blue Cheese Dip: Puree 1/2 pound crumbled stilton cheese (rind removed), 1/2 cup mayonnaise and 2/3 cup sour cream in a food processor.
  • Serve with:
  • Green Apple: Slice and toss with lemon juice.
  • Endive
  • Candied Walnuts: Combine 1/2 cup confectioners' sugar, 1/4 teaspoon each apple pie spice and kosher salt, and a pinch of cayenne in a bowl. Cook 1 cup walnuts in boiling water, 3 minutes; drain and toss with the sugar mixture. Spread on a baking sheet and bake at 350 degrees F, stirring occasionally, until golden brown, about 10 minutes.
