WHITE BEANS AND KIELBASA



White Beans and Kielbasa image

Kielbasa is so easy to cook and I am always looking for recipes that use it. This is a grown-up version of hot dogs and beans. It is so quick and simple for when you don't have a lot of time to throw something together. You can also substitute smoked sausage for the kielbasa.

1/2 lb kielbasa, quartered and sliced
2 (19 ounce) cans white kidney beans, rinsed and drained (or cannellini beans)
1 onion, whole
2 garlic cloves, crushed
2 tablespoons sugar
1 cup water

Steps:

  • Combine all ingredients in a slow cooker.
  • Cook on low for 3-4 hours.
  • Discard the onion and garlic and serve with a green salad and crusty French bread.

1 -2 tablespoon oil or 1 -2 tablespoon butter
1 lb smoked kielbasa, sliced 1/2 inch thick
1 small onion, chopped
2 garlic cloves, minced
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 (14 1/2 ounce) can peeled diced tomatoes
1 (16 ounce) can navy beans or 1 (16 ounce) can cannellini beans, drained

Steps:

  • Heat oil or butter in a large skillet, add Kielbasa and cook over medium high heat until lightly browned, remove with slotted spoon.
  • Reduce heat to medium, add onions and cook until transparent.
  • Reduce heat to low, add garlic and herbs and cook 1 minute.
  • Add kielbasa, tomatoes and white beans, bring to a boil, reduce heat and simmer 10 minutes.

An original recipe inspired by my Polish grandmother's cooking. For a milder flavor, you can rinse and drain the sauerkraut. I serve this with crusty rye bread.

1 teaspoon olive oil
1 1/2 lbs kielbasa, sliced 1/2 inch thick
3 carrots, peeled and thinly sliced
1 1/4 cups water
1 (30 ounce) jar polish sauerkraut or 2 (15 ounce) cans sauerkraut, drained
1 (15 1/2 ounce) can navy beans, drained and rinsed
2 teaspoons dried dill

Steps:

  • Heat oil in a large skillet.
  • Add kielbasa and brown over high heat.
  • Add carrots and water, bring to a boil, cover, reduce heat to low and simmer for 5 minutes.
  • Add sauerkraut, beans and dill.
  • Bring to a boil, cover, reduce heat to low and simmer 30 minutes.

SLOW-COOKER WHITE BEANS AND KIELBASA

Melt-in-your-mouth-tender sausage and rave reviews at my large family gathering mean we'll be serving this again. I served it for a noon meal, so I soaked the beans overnight before assembling early-morning, just to make sure they had enough time to soften. I plan to try it with chopped collard greens instead of spinach next time, added about 20 minutes before the end of cook time. The spinach was fine, but I'd like to try a meatier-textured green. I also plan to add a bit of acidity with a tablespoon of vinegar stirred in before service.

1 lb dried white bean (such as great Northern or navy)
14 ounces kielbasa, halved lengthwise and sliced 1/2 inch thick
6 cups low sodium chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 large onion, chopped
6 garlic cloves, chopped
1 teaspoon dried rosemary
5 ounces Baby Spinach (6 cups)
country bread, for serving
vinegar, parsley, parmesan cheese curls

Steps:

  • In a 4- to 6-quart slow cooker, combine the beans, kielbasa, broth, tomatoes (and their juices), onion, garlic, rosemary, and 1 cup water.
  • Cover and cook until the beans are tender, on low for 7 to 8 hours or on high for 5 to 6 hours (this will shorten total recipe time).
  • Just before serving, stir in the spinach.
  • Serve with the bread.
