This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend.

½ onion, minced
4 cloves garlic, minced
¾ cup bourbon whiskey
½ teaspoon ground black pepper
½ tablespoon salt
2 cups ketchup
¼ cup tomato paste
⅓ cup cider vinegar
2 tablespoons liquid smoke flavoring
¼ cup Worcestershire sauce
½ cup packed brown sugar
⅓ teaspoon hot pepper sauce, or to taste

Steps:

  • In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
  • Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

I've tweaked this recipe over the years to something I proudly serve with my pulled pork and ribs. It's also delicious on chicken. As the sauce simmers, it will develop a deep, rich color and flavor. The sauce tastes best if made a day ahead of time.

1 cup ketchup
⅓ cup maple whiskey (such as Crown Royal Maple®)
⅓ cup apple cider
¼ cup dark molasses
3 tablespoons apple cider vinegar
3 tablespoons pure maple syrup
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke flavoring
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Combine ketchup, maple whiskey, apple cider, dark molasses, apple cider vinegar, pure maple syrup, Worcestershire sauce, liquid smoke, smoked paprika, garlic powder, onion powder, salt, and pepper in a saucepan. Whisk together over medium heat and bring to a boil. Reduce heat to medium-low and simmer until thickened, 25 to 30 minutes. Sauce will thicken further upon cooling.
  • Store in the refrigerator for up to 1 week, or freeze for future use.

5 oz. Onion, small dice
1 C Tomato Paste
4 C Corktown Red Irish Lager
½ C Brown Sugar, packed
1 T Spanish Paprika, sweet
½ t Cayenne Pepper
1 T Kosher Salt
½ t Lemon Juice
1 T Apple Cider Vinegar
2 oz Jameson Irish Whiskey

Steps:

  • 1. Heat heavy bottomed, non-aluminum pot over high heat. Add oil and onions. 2. Reduce heat to medium and cook onions until lightly browned. 3. Add tomato paste. Cook paste, stirring frequently for 10 minutes, until it starts to brown on the bottom of the pan. 4. Whisk in beer scraping up bottom of pan. 5. Remove from heat. Stir in remaining ingredients. 6. Cool and serve.
