Banana Sour Cream Bread image

I've tried many Banana Bread recipes over the years, but this one is my favorite. The sour cream enhances the flavor and keeps the bread moist!

1/2 c shortening or oil
1 c sugar
2 eggs
3 ripe bananas, mashed
1 tsp vanilla
1/2 c sour cream
2 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 c raisins (optional)
1 c nuts (optional)
1 tsp salt

Steps:

  • 1. Cream shortening or oil and 1 cup sugar until light. Beat in eggs, mashed banana and vanilla. Add sour cream and blend. In a separate bowl, measure the flour, baking powder, baking soda, cinnamon and salt. Gradually add this to the banana mixture and blend. Add the nuts and raisins, if you wish. Pour batter into prepared loaf pans and bake at 350 degrees for 45 minutes or until done. I have also baked this in a bundt pan.
