WHIPPED CHOCOLATE GANACHE

Whipped Chocolate Ganache image

If you cool chocolate ganache and whip some air into it, you get a fluffy frosting that's easy to pipe and full of deep chocolate flavor. What's not to like?

Provided by LauraF

Categories     Desserts     Frostings and Icings     Chocolate

Time 1h40m

Yield 20

Number Of Ingredients 5

1 cup heavy cream
3 (2 ounce) bars 72% dark chocolate, finely chopped
½ teaspoon finely ground coffee
½ teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Bring cream to a boil in a medium saucepan. Add chocolate; let stand for 10 minutes without stirring. Add coffee, vanilla extract, and salt. Stir slowly in concentric circles until ganache is smooth and glossy.
  • Cool to room temperature, stirring occasionally, about 15 minutes. Refrigerate until chilled through, 1 to 2 hours.
  • Whip ganache with an electric mixer until soft, fluffy, and lighter in color. Be careful not to overwhip, or you'll end up with stiff, grainy chocolate 'butter' that's hard to pipe.

WHIPPED CHOCOLATE GANACHE FILLING (OR FROSTING)

Whipped Chocolate Ganache Filling (or Frosting) image

This recipe makes a delicious and creamy ganache filling, that's light as air, not too-intense and will definitely bring you to chocolate heaven! It's also very easy to make, can be made ahead and you will NOT regret it. The amount of chocolate used depends on the type of chocolate. Recipe makes enough to fill and frost a 3-layer cake. Recipe by Alice Medrich, the dark chocolate goddess.

Provided by WaterMelon

Categories     Dessert

Time 25m

Yield 3 1/2 cups

Number Of Ingredients 3

6 ounces best-quality bittersweet chocolate (I use 72%, see NOTE below)
4 teaspoons sugar (optional)
2 cups heavy cream

Steps:

  • Place chopped chocolate in a medium-sized bowl.
  • Heat heavy cream and sugar (if using) in a large heavy saucepan over med-hi heat until it simmers gently.
  • Immediately pour the hot cream over the chocolate and stir gently until the chocolate is mostly melted.
  • Let stand for 15mins to be sure all chocolate is melted.
  • Stir ganache gently until perfectly smooth, let cool.
  • Cover and chill for at least 6 hours, preferably overnight (it must be very cold or it will curdle when it's whipped; ganache can be made up to 4 days ahead).
  • When you're ready to assemble the cake (and NOT before), whip ganache until it's stiff enough to hold a nice shape and seems spreadable (Don't overwhip; overwhipped ganache looks granular, so watch carefully).
  • Spread whipped ganache immediately, as it will firm as it sits.
  • NOTE: if using 50-60% bittersweet chocolate, use 8 oz of chocolate and omit the sugar; if using 60-64% chocolate, use 7 oz of chocolate and omit sugar; if using 66-72% chocolate, use 6 oz and add the optional sugar to give the ganache a bit of'lift'.
  • If you're just using this as a filling, halve the recipe.
  • If you're glazing the cake with a chocolate glaze, chill the filled cake for at least 1 hour (up to 2 days) before glazing.

Time 4h45m

Yield 1 (9-inch) cake

Number Of Ingredients 36

2 cups whole milk
1 3/4 cups unsweetened coconut milk (recommended: Mount Thai brand)
1 cup goat's milk
3/4 cup plus 1 tablespoon pure cane sugar
1/4 cup water
1/2 vanilla bean, split and seeds scraped
2 tablespoons light corn syrup
2 tablespoons very cold unsalted butter, cut into small pieces
1/2 teaspoon pure vanilla extract
1/8 teaspoon fine sea salt
2 teaspoons coconut rum, optional
1 1/4 cups toasted, coarsely chopped pecans
1 1/4 cups sweetened coconut
8 ounces heavy cream
8 ounces bittersweet chocolate, finely chopped
2 tablespoons light corn syrup
2 1/4 cups all-purpose flour
3 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon fine salt
12 tablespoons unsalted butter, at room temperature, plus more for pans
1 cup plus 2 tablespoons good quality Dutch process cocoa powder (such as Valhrona or Cocoa Barry)
1 1/2 cups muscavado light brown sugar
1 1/2 cups granulated sugar
1 1/2 cups strongly brewed black coffee, at room temperature
1 1/2 cups buttermilk
3 large eggs
2 teaspoons pure vanilla extract
Cajeta filling, recipe above
Ganache, recipe above
1 1/2 cups cold heavy cream
1/4 cup coconut milk (recommended: Cocoa Lopez)
2 tablespoons confectioners' sugar or granulated sugar
1 teaspoon coconut rum
1/2 teaspoon pure vanilla extract
1/2 cup lightly toasted sweetened coconut

Steps:

  • For the cajeta filling/frosting:
  • Bring the milk, coconut milk and goat's milk to a simmer over low heat in a small saucepan. Keep warm while you prepare the caramel.
  • Combine the sugar and water in a medium saucepan over high heat and cook (do not stir) until it becomes a deep amber brown color. Slowly whisk in the warm milk mixture and continue whisking until smooth; add the vanilla seeds and corn syrup. Bring to a boil, reduce the heat to medium and cook, stirring occasionally with a wooden spoon, until the sauce is reduced by half and is the consistency of a caramel sauce, about 55 minutes.
  • Once the sauce is reduced, remove from the heat and whisk in the cold butter, vanilla extract, salt and rum and whisk until combined. Transfer the sauce to a medium bowl and stir in the pecans and coconut. Let the frosting cool to room temperature, stirring occasionally before frosting the cake.
  • For the ganache:
  • Bring the cream to a simmer in a small saucepan over low heat. Put the chocolate into a medium bowl, add the hot cream and the corn syrup and let sit for 30 seconds. Gently whisk until smooth. Let sit at room temperature for 10 minutes before pouring over the cake.
  • For the chocolate cake:
  • Preheat the oven to 325 degrees F. Butter 2 (9-inch) cake pans and line the bottoms with parchment paper.
  • Whisk together the flour, baking powder, baking soda and salt in a large bowl.
  • Melt the 12 tablespoons of butter in a medium saucepan over medium heat. Whisk in the cocoa powder and cook for 1 minute. Remove from the heat, add the sugars and whisk until the sugar is dissolved. Add the coffee, buttermilk, eggs and vanilla extract and continue whisking until smooth and just combined. Slowly add the buttermilk mixture into the flour mixture until combined.
  • Divide the batter evenly between the 2 pans and bake on the middle rack until a toothpick inserted into the center comes out with a few moist crumbs attached, about 42 minutes. Let cool in the pans on a baking rack for 20 minutes. Then invert the cakes onto the baking rack and let cool for at least 1 hour before frosting. Slice each cake in half horizontally. Put 1 cake layer on a cake round or platter and spread 1/3 of the frosting evenly over the top, repeat to make 3 layers and top with the remaining cake layer, top side up. Pour the chocolate ganache over the cake and let sit at room temperature for at least 30 minutes before slicing.
  • For the coconut whipped cream:
  • Combine the heavy cream, coconut milk, sugar, rum and vanilla in a stand mixer and mix until soft peaks form. Slice the cake, top each serving with a dollop of whipped cream and garnish with some of the toasted coconut.

Stuffed Mexican Hot Chocolate French Toast with Cinnamon Whipped Cream and Chocolate-Maple Ganache image

Provided by Bobby Flay

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 19

6 ounces semisweet chocolate, chopped
6 ounces heavy cream
2 tablespoons maple syrup
1 cup very cold heavy cream
2 teaspoons sugar
1/4 teaspoon cinnamon
4 large eggs
2 large egg yolks
1/4 cup sugar
1/4 cup best-quality Dutch-process cocoa powder
1/2 teaspoon ground cinnamon
1 1/2 cups milk
1/2 cup heavy cream
2 teaspoons pure vanilla extract
1/8 teaspoon pure almond extract
1/2 cup chilled ganache, from above
Eight 1/2-inch slices day-old challah or brioche
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons canola oil

Steps:

  • For the ganache: Put the chocolate in a medium bowl. Bring the cream to a simmer in a small saucepan over medium heat, then pour it over the chocolate and let sit for 1 minute. Add the maple syrup and whisk until smooth. Transfer 1/2 cup of the ganache to a small bowl, and refrigerate for 10 minutes or until slightly chilled but still spreadable. Cover the remaining ganache and reserve in a warm place.
  • For the whipped cream: Combine the cream, sugar and cinnamon in a chilled bowl. Using an electric mixer, whip until soft peaks form. Cover the bowl and refrigerate while you make the French toast.
  • For the French toast: Preheat the oven to 300 degrees F. Set a baking rack over a baking sheet.
  • Whisk together the eggs, egg yolks, sugar, cocoa powder and cinnamon in a large bowl until smooth. Whisk in the milk, cream and vanilla and almond extracts until combined. Transfer the custard mixture to a baking dish.
  • Divide the chilled ganache among four slices of the bread and top with the remaining four slices to make four sandwiches. Soak the sandwiches in the custard, two at a time, flipping once, until completely soaked through, about 1 minute per side.
  • Heat 2 tablespoons of the butter and 2 tablespoons of the oil in a large nonstick pan over medium heat until beginning to shimmer. Place two of the soaked sandwiches in the pan and cook until browned and crisp on both sides, 3 to 4 minutes per side. Transfer the sandwiches to the baking rack and keep warm in the oven. Repeat with the remaining 2 tablespoons butter and oil and the remaining two sandwiches.
  • If the reserved ganache is cool, microwave it for 10 seconds to warm a bit. To serve, quarter the French toasts, drizzle with some of the ganache, and dollop on some of the whipped cream.

ESPRESSO-INFUSED WHIPPED CHOCOLATE GANACHE

Espresso-Infused Whipped Chocolate Ganache image

Provided by Dan Langan

Categories     dessert

Time 25m

Yield 6 1/2 cups (enough to fill and frost an 8-inch cake)

Number Of Ingredients 5

27 ounces semisweet baking chocolate, finely chopped
1 1/2 cups whole espresso beans
32 ounces heavy cream
3 tablespoons coffee liqueur, optional
Pinch table salt

Steps:

  • Place your chopped chocolate into the bowl of your stand mixer.
  • Place the espresso beans in a sealable gallon-size bag (or between two pieces of parchment) and crush them with a rolling pin. Combine the heavy cream and espresso beans in a small pot and heat over medium-low heat until simmering. Remove from the heat, cover the pot and allow the cream to infuse for 10 minutes. Strain the cream through a cheesecloth-lined sieve into a clean pot. Return the cream to medium-low heat and bring back to a simmer.
  • Pour the warm cream into the bowl of chocolate. Add the coffee liqueur if using and the salt. Gently stir the mixture with a spatula until smooth. Allow your ganache to cool until the outer edge of the ganache is a spreadable consistency; the center of the ganache may still be a bit loose.
  • Fit your stand mixer with the whip attachment and whip the ganache on medium-high speed until the ganache lightens in color, 2 to 3 minutes. Don't over whip or you run the risk of breaking your ganache. Use immediately as a filling or frosting.
  • Once the whipped ganache sets up it can be rewarmed in the microwave in 20 second bursts. Rewarmed ganache can be re-whipped or poured.

RASPBERRY PORTER TRIFLE WITH CHOCOLATE GANACHE AND WHIPPED CREAM

Raspberry Porter Trifle with Chocolate Ganache and Whipped Cream image

Provided by Robert Irvine : Food Network

Categories     dessert

Time 3h50m

Yield 4 servings

Number Of Ingredients 16

1 (3-ounce) package raspberry gelatin
1 to 2 tablespoons sugar
1 cup boiling water
1/4 cup ice water
1/2 cup porter
1/2 cup milk
1/2 cup heavy cream
1 vanilla bean, or vanilla extract, to taste (approximately 3 tablespoons)
1/4 cup sugar
4 egg yolks
1 (29 to 32-ounce) can fruit cocktail, drained
1 (12-ounce) pound cake, thawed and cut into 3/4-inch cubes (recommended: Sara Lee)
2 bananas, sliced and tossed with lemon juice
4 ounces semisweet chocolate pieces or chocolate squares, finely chopped
2/3 cup heavy cream
1/2 cup heavy cream whipped until light and fluffy with an electric beater

Steps:

  • 4 (16-ounce) or larger wine glasses or snifters (note that the idea of a trifle is to see the layers)
  • Dissolve gelatin and sugar in boiling water. Add cold water and porter. Cover and set aside at room temperature.
  • Pour the milk and heavy cream into a heavy bottomed saucepot and scrape the seeds from the vanilla bean into the pot (or add vanilla extract). (If using a vanilla bean, put the vanilla pod in the pot as well.) Add half the sugar to the pot and bring to a simmer (just below a boil). In a small bowl whisk together the egg yolks and the rest of the sugar and temper it by adding a small amount of the heated milk mixture to the bowl while whisking constantly (known as a liaison). Now pour the liaison (egg mixture) into the milk pot, stirring constantly. You are only heating it. Do not boil. Do not cook. The idea of a liaison is to incorporate the eggs and avoid making them into scrambled eggs! You want the mixture to begin to thicken so it will coat the back of a spoon. Remove from heat and allow to cool, then remove vanilla pod and discard, and refrigerate until chilled.
  • Spoon fruit cocktail into each glass as a base layer. Follow with a layer of cubed pound cake, then a layer of sliced bananas. Spoon about 1/3 cup gelatin/porter mixture on top of the fruit and refrigerate for 2 to 4 hours until the gelatin is set.
  • A few minutes before serving, make the ganache, place the chocolate in a small heatproof bowl. Bring the cream to just under a boil in a small saucepan. Pour the cream over the chocolate and let sit for about 1 to 2 minutes. Stir gently with a rubber spatula until the chocolate is melted and smooth. If the chocolate is not melting readily, nest the bowl in another bowl of very hot tap water.
  • Spoon creme anglaise over the chilled trifle and drizzle with ganache. Spoon whipped cream on top to finish.
  • Serve immediately.

GINGERBREAD SHEET CAKE WITH WHIPPED CHOCOLATE GANACHE

Gingerbread Sheet Cake With Whipped Chocolate Ganache image

The gentle bite of fresh ginger and spices pairs wonderfully with bittersweet chocolate. Sticky molasses and spicy ginger flavor this warm and cozy one-bowl cake, which tastes wonderful on its own, but is even better when topped with a fluffy whipped chocolate ganache. Make sure to use chopped bars of chocolate here rather than chips, which contain stabilizers that will make the ganache grainy. The ganache will look and feel a lot like whipped cream when you spread it on the cake, but will solidify to a more mousse-like consistency when it cools.

  • Add the flour, baking powder and baking soda, and mix until no streaks of dry ingredients remain, about 1 minute.
  • Pour the batter into the prepared baking pan, and tap on the counter a few times to release any large bubbles. Bake until puffed and set, and a tester inserted into the center comes out clean, 28 to 34 minutes. Cool the cake in the pan set on a rack for 15 minutes, then use the parchment paper overhang to lift the cake out of the pan. Set it on a rack to cool completely.
  • While the cake is cooling, make the ganache: Add the chocolate and butter to a large bowl or to the bowl of a stand mixer fitted with the whisk attachment. In a small saucepan, bring the cream to a simmer.
  • Pour the hot cream over the chocolate and butter in the bowl, and whisk until smooth, 1 to 2 minutes. Add the vanilla extract and salt, and whisk until incorporated. Let the mixture sit until slightly thickened, about 1 hour.
  • When the cake is cool and the ganache is thickened, whip the ganache on high speed until it's lighter in both texture and color, fluffy, and holds soft peaks, about 10 minutes.
  • Dollop the ganache over the cooled cake, and use a spoon to spread it over the cake in swoops and swirls. Top with chopped crystallized ginger or shaved chocolate if desired. Store leftover cake in an airtight container in the fridge for up to 4 days.

Apple curd tart with creme fraîche whipped ganache image

The crème fraîche whipped ganache beautifully balances the sweetness of the apple curd, and it just goes very well with the apple flavour in general.

Steps:

  • DAY BEFORE SERVING - Note: ideally the pastry should rest in the fridge overnight. If you have time to do it, make it 2 days ahead so you can then bake it straight away the day before of serving.
  • MAKE THE SABLÉE PASTRY - Pour all dry ingredients (flour, corn flour, icing sugar, lemon zest) in a bowl. Add the cold butter and rub in with your fingers until the mixture resemble breadcrumbs. In a separate bowl, beat the egg with the salt and vanilla extract. Add to the crumbly mixture and bring the dough together with a spatula and then using your hands, until it has a uniform consistency (resist the temptation to knead the dough for too long). Flatten the dough to a square shape, wrap in cling film and chill for at least 2 hours. When you are ready to roll it, take it out of the refrigerator and let it rest for 15 minutes.
  • BAKE THE SABLÉE PASTRY - Prepare the tart rings or tin with butter and flour coating. Pre-heat the oven at 180°C. Roll out to the pastry to about 6mm thick. Roll the pastry up around the rolling pin and gently roll it out over the ring or tin. Push the dough into the mould, using a piece of leftover dough to make it adhere to the bottom and sides. Trim the overhanging excess dough with a sharp knife. Pop the pastry into the fridge for 10-15 minutes to firm up a bit. After 15 minutes, take it out of the fridge and blind bake the tart shell. Line the tart shell with some baking paper so that the dough is completely covered. Fill it up with dried beans, uncooked rice or ceramic beans and bake in the centre rack of the oven for 18 minutes. Remove the beans and baking parchment and bake for another 5 minutes uncovered. Set on a rack to cool completely before removing the shell.
  • MAKE THE CINNAMON CHABLON - Once your tart case has completely cooled, make the white chocolate and cinnamon chablon. A chablon is a thin layer of chocolate that is brushed on a pastry to prevent it to get soaked by any liquid filling. Melt the white chocolate in a microwave or in a small bowl set over a bain-marie (make sure that the bottom of the top doesn't touch the water). In the meantime, measure your cinnamon and get ready to work quickly. Once the chocolate has melted, remove from the heat. Add and stir the cinnamon, then brush the mix on the inside of the pastry case, working fast as the chocolate will cool down and set. Place in the fridge to set while you make the apple curd.
  • MAKE THE APPLE CURD FILLING - First, make the apple purée. Put the apples in a pan with the apple juice and lemon zest and cook until they have a fluffy consistency. This should take around 25 mins. Remove from the heat and blend to a purée using a hand blander or masher. Set aside. Put the water into a small bowl, sprinkle the powdered gelatine over it and leave to bloom for at least 10 minutes. In the meanwhile, make the curd base. First add the eggs into a bowl, beat them slightly and then strain to remove all impurities. Set aside. Combine the apple puree, sugar and lemon juice and salt in a saucepan and gently bring to the boil, stirring until the sugar has dissolved. Remove from the heat. Slowly add the egg mix into the pan and whisk until smooth to prevent any lumps from forming. Once the eggs have been fully incorporated, put the pan back on the heat and bring to the boil. Cook for 2 minutes stirring continuously, then remove from the heat and whisk in the gelatine mixture. Let it cool down at room temperature for half an hour. Once the curd has cooled down, pour it into the tart shell until it reaches just a couple of millimetres below the edge. Refrigerate overnight to set the curd.
  • MAKE THE CRÈME FRAÎCHE GANACHE - Put the water into a small bowl, sprinkle the powdered gelatine over it and leave to bloom for at least 10 minutes. Place the chopped white chocolate in a small bowl, set aside. In the meanwhile, pour the double cream, crème fraiche and sugar in a small saucepan and bring to the boil over a medium heat, stirring occasionally. When it's just about to boil, remove from the heat and whisk in the gelatine to dissolve completely. Once the gelatine has dissolved, pour the hot mixture through a strain over the chocolate and cover the bowl for 3 minutes. Gradually stir slowly with a spatula from the centre towards the outside until the chocolate has completely melted and the mixture has a smooth and shiny consistency. Cover with cling film, with the plastic touching the surface of the cream. Leave to cool at room temperature and then put in the fridge to set overnight.
  • DAY OF SERVING: FINISH THE TART - Take the crème fraîche ganache out of the fridge and whip for a couple of minutes at high speed until fluffy. Transfer to a piping bag fit with a noozle of your choosing (I used a straight 20mm wide nozzle). Take the tart out of the fridge and pipe a few large domes of ganache. Fill the surface of the tart with smaller blobs of ganache, keeping some space to show the contrast betweeen the white ganache and the yellow curd. Feel free to get creative with the piping. When you're done, cover and keep in the fridge until ready to serve.
