MOMMA'S WHEAT GERM COOKIES
Good Cookies!! You'll be giving out this recipe forever!!! Be sure to leave the cookies on the cookie sheet for at least one minute after removing them from the oven. This allows them to "flatten" and firm up, also make sure you use rolled oats, not instant! Please don't let all the ingredients scare you away from this recipe.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. In a separate bowl, combine the oats, wheat germ, flour, baking powder, baking soda and salt. Stir the dry ingredients into the creamed mixture. Finally, mix in the coconut, pecans and dates. Drop by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for a couple minutes before removing to a wire rack to cool completely.

- In a large bowl, beat brown sugar and oil until blended. Beat in egg, then applesauce. Combine the flour, wheat germ, oats, baking powder, and salt; gradually add to brown sugar mixture and mix well. Stir in chocolate chips and walnuts., Drop by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Flatten slightly with a glass bottom coated with cooking spray. , Bake at 350° for 10-12 minutes or until edges are lightly browned and cookies are set. Cool for 1 minute before removing to wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheet.
- Add the oil to the sugar gradually and mix well. Beat in the milk and the eggs. Stir in the whole wheat flour, baking powder, wheat germ and nutmeg and mix well.
- Drop teaspoonfuls of dough on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 5 minutes. Lower temperature to 325 degrees F (165 degrees C) and bake for an additional 7 minutes.

PEANUT BUTTER WHEAT GERM COOKIES
I've adapted this from an old newspaper recipe clipping (source unknown), likely from the 1970's when wheat germ was a miracle ingredient. I've substituted brown rice flour for all-purpose flour as I prefer this texture and flavour variation, but you could just as easily revert to the original with good results. The original also called for 1 c. wheat germ, which I've halved and added 1/2 c. spelt flour, but this is a highly adaptable and forgiving recipe so feel free to experiment depending on what you have on hand. I recommend pure peanut butter (peanuts as only ingredient) rather than the soybean oil, sugar and salt-laden popular brands.

- Beat butter and peanut butter with sugar, then beat in egg and vanilla. Gradually beat in dry ingredients. Form into balls on cookie sheet (ungreased, preferably with baking parchment) of whatever size you like and flatten to about half the ball thickness- use the typical criss-cross fork pattern if you like a traditional look. Bake at 350 degrees Farenheit for 8-10 minutes, watching carefully to check degree of browning, and remove to racks for cooling.
HARRIET'S WHEAT GERM COOKIES
Very tasty homestyle cookies. This recipe is from my college housemother. There is lots of fiber in here to offset the guilt of the sugar and fat. I use wholewheat pastry flour, but you can use the flour of your choice - it is not critical to the outcome. The chocolate chips and flax are optional. You will need a strong arm to mix the dough - I recommend a stand mixer.

- Preheat the oven to 350°F.
- Cream together the oil, both sugars, eggs and vanilla.
- In a separate bowl, mix flour, baking soda, baking powder, cinnamon and salt.
- Add the flour mixture to the oil mixture and mix well.
- Add the oatmeal, coconut, wheatgerm, nuts, flaxmeal and chocolate chips, mixing well after each addition.
- Drop spoonfuls onto ungreased cookie sheets. You may have to shape them with your fingers a bit in order to get them to stick together. Flatten slightly. You should get exactly 12 cookies on a standard baking sheet.
- Bake for 10-11 minutes. They may not appear done, but take them out of the oven anyway.
- Cool for a few minutes on the baking sheet before removing the cookies to a cooling rack.
- Makes 3-4 dozen.

- Process the walnuts and 2 tablespoons flour with the metal blade of the food processor until finely chopped,about 6 pulses. Reserve. Process the butter, sugars, vanilla and egg until combined,about 20 seconds, scraping down the work bowl as necessary. Add the chopped walnuts and remaining ingredients and pulse until just mixed,about 8 times. Preheat oven to 350. Line a baking sheet with foil and place the dough by the heaping tablespoon about 1-inch apart onto the baking sheet. Bake in the center of the oven until golden brown, about 15 minutes. Remove from the oven,leave the cookies on the baking sheet for 1 minute, then transferthem to wire rack to cool.
