WHEAT GERM BREAD



Wheat Germ Bread image

My favorite wheat germ bread was no longer available I had to try to copy it, this is what I came up with. Its great toasted.

Number Of Ingredients 9

1 1/2 teaspoons yeast (active dry yeast)
1 cup water, warm
1 1/2 tablespoons honey
2 1/4 cups flour
1/3 cup wheat germ, toasted
1/2 cup whole wheat flour
1 tablespoon cornmeal
1 teaspoon salt
1 tablespoon olive oil

Steps:

  • In a small measuring cup add warm water, yeast and honey, stir well,set aside for 10 minutes until foamy.
  • In a skillet toast wheat germ, on medium heat for 5-8 minutes, stirring constantly, cool.
  • Either in a food processor or stand mixer add flour, whole wheat flour, cornmeal, salt and cooled wheat germ.
  • Add olive oil and proofed yeast mix well. Mix until a smooth ball forms.
  • Take out of mixer and knead on slightly floured board (4-5 minutes).
  • Put dough in a large greased bowl and cover with a clean towel.
  • Let rise in a warm place for 60 minutes until double in bulk.
  • Punch down and form into loaf, placing in a well greased 9x5-inch loaf pan.
  • Let rise for another 30-45 minutes.
  • Bake at 375°F for 25 minutes.
  • Take out of oven brush with butter, let cool on wire rack.

2 1/2 teaspoons active dry yeast
1 cup whole wheat flour
2 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
3 tablespoons honey
1 1/2 tablespoons vegetable oil
1 1/2 cups buttermilk

Steps:

  • Place all ingredients in the baking pan according to the manufacturer's directions.
  • If baking in machine, use medium setting.
  • If using dough cycle and baking in oven, remove from bread maker and place in a greased loaf pan. Let rise until doubled. Bake at 350º for 25 minutes or until loaf sounds hollow when tapped.

1 cup buttermilk (slightly warmed)
1/4 cup warm water
1 tablespoon margarine
2 tablespoons honey
1 cup whole wheat flour
2 cups bread flour
1 tablespoon wheat germ
1 tablespoon vital wheat gluten
1/2 teaspoon salt
2 teaspoons yeast

Steps:

  • Your breadmaker may require a little less liquid, start with only 1/8 cup water instead of the 1/4 cup listed in the recipe.
  • Check the dough ball while it is kneading and add more liquid, one teaspoon at a time, if necessary.
  • Put ingredients into your breadmaker according to manufacturer's directions.
  • Baking time is however long your machine takes.
  • To make a softer crust, put the finished loaf of bread into a plastic bag while still warm.

I call this "Light" because there is more white flour than wheat flour. It is not intended to mean it's low in calories or light in color! Adapted from my Oster Bread Machine Book. Note: First ingredients listed are for a 1.5 lb. loaf. Ingredient amounts in parentheses are for a 2 lb. loaf.

1 cup water (1 3/8 c )
2 tablespoons butter (2 1/2 tbl )
1 1/2 tablespoons honey (2 tbl )
1 teaspoon salt (1 3/4 tsp )
2 1/4 cups bread flour (2 1/2 c )
1 cup whole wheat flour (1 1/4 c )
1/2 cup quick-cooking oats (2/3 c )
2 teaspoons dry active yeast (2 1/4 tsp )

Steps:

  • All ingredients should be at room temperature.
  • Add to bread machine as your model's instructions direct. Mine are as follows.
  • Add liquid ingredients to bread pan.
  • Add dry ingredients, except yeast, to bread pan.
  • Make a well in dry ingredients and carefully add yeast.
  • Select the "Wheat" or "Whole Wheat" Setting on your machine.
  • Choose crust color, if applicable.
  • Press Start!

VERMONT HONEY-WHEAT BREAD



Vermont Honey-Wheat Bread image

You don't have to be a health nut to enjoy this hearty loaf. Made with whole wheat flour, oats and wheat germ, this bread gets its pleasant sweetness from the honey and maple syrup. Roderick Crandall of Hartland, Vermont shared the recipe.

Yield 2 loaves (16 slices each).

Number Of Ingredients 16

2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1 cup old-fashioned oats
1 cup warm buttermilk (110° to 115°)
1/2 cup maple syrup
1/2 cup honey
2 eggs, lightly beaten
1/3 cup butter, softened
1/3 cup toasted wheat germ
1 teaspoon salt
1-1/2 cups whole wheat flour
3 to 4 cups all-purpose flour
TOPPING:
1 egg white
1 tablespoon water
1/4 cup old-fashioned oats

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the oats, buttermilk, syrup, honey, eggs, butter, wheat germ, salt and whole wheat flour. Beat on medium speed for 3 minutes. Stir in enough all-purpose flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour., Punch the dough down. Shape into two loaves; place each in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise in a warm place until doubled, about 45 minutes., Beat egg white and water; brush over loaves. Sprinkle with oats. Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.
