1/4 cup vinegar
1/2 cup catsup
2 teaspoons prepared mustard
1 teaspoon paprika
1/4 cup water
1/2 cup canola oil

  • Blend in a blender.
  • That's it!

2 cucumbers, sliced
2 bunches green onions, chopped
1 green bell pepper, chopped
1 head cauliflower, chopped
1 (16 ounce) package baby carrots, chopped
1 head broccoli, chopped
1 bunch radishes, sliced
2 (15 ounce) cans ranch-style beans, drained
1 (16 ounce) bottle Ranch-style salad dressing
1 (13.5 ounce) package nacho-flavor tortilla chips

Steps:

  • Place the shredded lettuce in a large, flat dish. Layer with cucumbers, green onions, green bell pepper, cauliflower, baby carrots, broccoli, and radishes. Pour drained beans over the vegetables. Cover with Ranch-style dressing, and top with nacho-flavor tortilla chips. Cover, and chill until serving.

HOMEMADE WESTERN STYLE SALAD DRESSING



Homemade Western Style Salad Dressing image

I found a recipe on cooks.com and tried it. It had a flavor very close to the name brand stuff in the store, but I thought it was a bit too thin.The second time I made it, I had to substitute rice vinegar for the cider vinegar and I messed around with it until it was to my liking. I think I prefer it with rice vinegar, although if you don't like rice vinegar you might not like this dressing made with it. Use cider vinegar (1/4 cup) instead. Xanthan gum is an emulsifier and is derived from corn so people with corn allergies probably can't have it. But, it gives it that "store bought" consistency and does not affect the flavor. Xanthan gum can usually be found in supermarkets, either in the "gluten free" section or baking aisle. Bob's Red Mill makes it. Co-ops and natural foods stores should carry it as well.

1/4 cup ketchup
1/4 cup light olive oil or 1/4 cup vegetable oil
2 tablespoons rice vinegar or 1/4 cup cider vinegar
6 tablespoons sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt (to taste)
14 teaspoons celery salt
1/4 teaspoon xanthan gum

Steps:

  • I just whisk this up in a pint sized mason jar, but you could also use a blender, hand mixer or stick blender. Combine wet ingredients. In a small bowl (if mixing by hand) combine dry ingredients, then add to wet ingredients and whisk vigorously until well combined. If you like it thicker, add a little more xanthan gum (*a little goes a long way so be careful!). Store in the refrigerator.
  • *I had a bit of trouble with the xanthan gum clumping when whisking by hand. I will try dissolving it in the vinegar first next time, or making it in the blender.

1/2 cup red onion, cut into very small dice
1/2 cup red radish, cut into very small dice
1/2 cup red bell pepper, cut into very small dice
1/2 cup cilantro or 1/2 cup parsley, minced
1 1/2 lbs new potatoes, cooked in boiling, salted water until tender, drained and cut into chunks
1 firm but ripe avocado, cut into dice
salt and pepper, to taste
1 1/2 tablespoons apple cider vinegar
2 teaspoons sugar
1/2 cup mayonnaise (I prefer Hellman's)
1/2 cup plain yogurt
3 tablespoons milk or 3 tablespoons buttermilk
1 chipotle chile in adobo, with
1 1/2 teaspoons adobo sauce
1 garlic clove

Steps:

  • To make dressing: Whisk sugar into vinegar until it dissolves. In a mini-processor, zap all the dressing ingredients (including the sweetened vinegar) until a creamy dressing is formed. (make sure garlic has been pulverized).
  • Put all the potato salad ingredients into a bowl. Pour dressing over and combine to coat evenly. Season to taste with salt and pepper. Refrigerate 2-3 hours before serving to allow flavours to blend.

I've tried lots of taco salads, and this remains my favorite. The Western dressing lends a wonderful sweetness that compliments the taco meat perfectly. Feel free to add other ingredients to your salad according to your personal preference. I add sliced black olives, crushed corn chips, and a dollop of sour cream to the top. I like to prepared this in a taco salad bowl Recipe # 266766, which makes for a lovely presentation!

1 lb ground beef
1 onion, chopped
1 (1 ounce) package taco seasoning mix
2 cups corn chips or 2 cups tortilla chips, crushed
3 cups romaine lettuce, chopped
1 large tomatoes, diced
1 cup shredded cheddar cheese (about 4 oz.) or 1 cup Mexican blend cheese (about 4 oz.)

  • In a large skillet, brown ground beef with onions over medium-high heat. Stir in Taco Seasoning Mix and continue preparing according to Taco Seasoning Mix package directions.
