Moist pecan coffee cake image

This is one of my favorite coffeecake recipes because it has so many pecans! I love pecans.

Number Of Ingredients 11

2 c flour
1 Tbsp baking powder
1 c butter, softened
1 c light sour cream
1-1/2 c sugar
2 large eggs
1 Tbsp vanilla
1/2 c light brown sugar
1-1/2 c chopped pecans
1-1/2 tsp cinnamon
3 Tbsp melted butter

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, mix together flour, baking powder.
  • 2. In another lg bowl, beat butter until fluffy, Slowly beat in sour cream, then sugar. Beat in eggs and vanilla. Fold into flour mix, mix well, but don't overmix.
  • 3. In medium bowl, mix together brown sugar, pecans and cinnamon. Stir in melte butter until crumbly. Pour batter into pan, sprinkle w/ pecan mix. Bake 30 mins, or until a toothpick inserted in center comes out clean.
