I love strawberry pie and was looking for a recipe I could use. Be sure to use the directions in this recipe and not those on the jello box. And fresh strawberries work a lot better then frozen. 1 1/2 cups boiling water
1 (5/8 ounce) package sugar-free strawberry gelatin (or 2 .3 ounce packages)
3 cups sliced fresh strawberries
2 cups plain nonfat yogurt
1 deep dish graham cracker pie crust (10-inch)
8 whole strawberries

Steps:

  • Place boiling water in large bowl. Stir in Jello till dissolved. Chill until slightly set-- about 10- 20 minutes.
  • Stir in strawberries Chill another 10 minutes.
  • Fold in yogurt.
  • Pour mixture into graham cracker crust Chill till firm-- at least 4 hours Cut into 8 wedges and place a whole strawberry on each wedge.

My sister-in-law just gave me this recipe from a friend of hers. She does Weight Watchers and I have just joined myself. Her friend told her she made eight pies one week! I am told that a whole pie is 4 points. I have made it crustless and also put it into a reduced fat graham cracker crust. You must adjust points for the latter. This is so easy and so tasty. I hope you enjoy! Don't forget the fat free, sugar free Cool Whip. I am also diabetic, so I added that to the title as well.

2 cups water
1 (7/8 ounce) package cook and serve fat-free sugar-free vanilla pudding mix
1 (1/3 ounce) package sugar-free strawberry gelatin
4 cups sliced fresh strawberries (I use a quart clamshell)
whipped topping

Steps:

  • Place sliced berries on bottom of a pie plate.
  • In a saucepan mix the water with the pudding with a wisk, bring to a boil.
  • Remove from heat, add the jello, let cool briefly.
  • Pour over berries.
  • Refrigerate until set. It does not take too long.
  • Enjoy with some whipped topping if you like. Delicious!

Summer is upon us, so what better way to celebrate with a strawberry pie that won't add inches. I got this recipe from another site and adapted it. Absolutely delicious!

1 (9 inch) pie crusts (reduced fat graham is best)
1 quart fresh strawberries
1 cup Splenda granular
3 tablespoons cornstarch
3/4 cup water

Steps:

  • Arrange half of the strawberries(cut up) in the bottom of the pie shell. I usually put enough to cover the bottom.
  • Mash remaining berries and combine with Splenda in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  • In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, stirring constantly.
  • Pour mixture over berries in pie shell. Chill several hours before serving.
  • Top with Cool Whip Free and enjoy!

It is almost strawberry time......this pie is so good, you will like it even if you aren't diabetic! I made this for a fundraiser recently and it was a big hit!

Number Of Ingredients 7

1 baked 9 inch pie shell
1 1/2 cups water
2 tablespoons cornstarch
1 package sugar-free strawberry gelatin
6 tablespoons Splenda sugar substitute or 4 packets Equal sugar substitute (I prefer to use Splenda)
3 cups sliced strawberries
1 (8 ounce) container Cool Whip or 1 package dream whipped topping (Kraft)

Steps:

  • In a small saucepan mix water and cornstarch with a wire whisk.
  • Bring to a boil, stirring constantly, for 1 minute.
  • Remove from heat, cool slightly.
  • Stir in gelatin and sweetener.
  • Mix well, and gently stir in strawbrries.
  • Pour into baked pie shell and refrigerate for about 2 hours.
  • Top with Cool Whip OR Dream Whip right before serving.
  • Garnish with strawberies if desired.

1 1/8 ounces fat-free sugar-free instant vanilla pudding mix
2 cups water
1/3 ounce sugar-free strawberry gelatin
2 cups strawberries, sliced

Steps:

  • In a medium saucepan, stir together water and pudding to a boil.
  • Remove from heat and immediately add the jello until dissolved.
  • Set the pan aside and let the mixture come to room temperature. Place strawberries in the bottom of a deep dish pie plate.
  • Add cooled pudding mixture over the strawberries. Refrigerate until chilled. Let it set in well before slicing.

My mom was a weight watcher and she made this pie all the time. It was really very good!!! Made me think of the Shoney's Strawberry Pie. If this strawberry pie is not my favorite low-calorie dessert recipe, it's definitely one of my favorites. The recipe calls for Equal and that's what my mother always used. I prefer Splenda.

1 1/2 c cold water
2 Tbsp cornstarch
4 pkg equal, or splenda
1 pint fresh strawberries, sliced
3 oz pkg strawberry jello, sugar free
CRUST:
8 whole graham cracker cookies, crushed
2 pkg equal, or splenda
2 1/2 Tbsp diet margarine
TOPPING, OPTIONAL:
light cool whip

Steps:

  • 1. Mix Water and cornstarch; cook over medium heat until bubbly; sprinkle in JELLO and EQUAL (or SPLENDA); stir until cool; add strawberries and stir well to coat all berries
  • 2. Mix and press Graham Crackers, 2 pkg equal and margarine into a 9" pie plate Bake 375 degrees for 12 minutes
  • 3. Add pie filling and chill until set; slice.
  • 4. Top each with 1 T. Lite Cool Whip.
  • 5. NOTE: For Peach Pie: Use peaches and orange Jello NOTE: Betty Warren added up the WW points, this is what she came up with. Strawberries are free, sugar free Jello is free, Argo Starch is 1 point for each Tbsp. (2) and I used Reduced fat graham cracker crust Redi Crust,(20) entire crust is 20 points. Lite cool whip is 1 point for each Tbsp. 1 tbsp on each piece(6). 28 points for entire pie or 6 servings less than 5 points each. THANK YOU BETTY WARREN!!

2 lbs strawberries
3/4 cup sugar, granulated
1/2 cup cranberry juice cocktail
1/4 cup cornstarch
6 ounces graham cracker ready pie crusts
1 cup non-fat vanilla yogurt, Greek-style
1 teaspoon lemon zest, finely grated

Steps:

  • Combine 3 cups sliced strawberries, sugar and juice in a medium saucepan.
  • Mash berries in pan with a potato masher; stir in cornstarch and bring mixture to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring often, until very thick, about 1 minute.
  • Remove from heat; let cool slightly and then stir in remaining sliced strawberries. Scrape into pie crust.
  • Let cool slightly; cover loosely with plastic lid from pie crust. Refrigerate until set, at least 4 hours (you can then freeze the pie for a little while if desired, to make it easier to slice).
  • To serve, in a medium bowl, stir together vanilla yogurt and lemon zest until blended. Spread on top of pie, leaving a border around edges so strawberry filling shows. Slice reserved strawberries and use them to garnish pie. Slice pie into 10 pieces and serve. Yields 1 piece per serving.

This is a very good sugar free recipe! If you choose to use whipped topping, of course that will not be sugar free.

fresh strawberry, 6c
sugar-free jello, one large box and one small box
3 tablespoons cornstarch
3 -4 cups water
1 1/2 c- 2c sugar substitute (I use generic Splenda)
1 teaspoon strawberry extract (optional)
1 teaspoon almond extract (optional)
1 pre-baked deep dish pie shell
1 egg (beaten)
whipped topping (optional)

Steps:

  • In medium size sauce pan add the following ingredients: Sugar replacement, water, both boxes of sugar free jello. Separately, in a measuring cup place the cornstarch and just enough cold water to dissolve. Add to saucepan. Whisk all ingredients frequently. Once boiling, allow to boil for three minutes. Remove from heat source. Place on top of ice bath (this facilitates the cooling process). When cool, add extracts (if you are using them), and whisk to combine. This mixture MUST be completely cooled prior to adding to the fresh cut strawberries. As pictured, I cut the strawberries in very large pieces. Feel free to slice, or cut up as you like. Add cooled mixture to strawberries. Gently toss to coat well. Pour mixture into pre-baked pie crust and place in fridge. Using the ice bath technique to chill the gel mixture expedites this recipe! It will set up in about an hour. Top with whipped topping if desired.
  • Ice Bath- Use a bowl much larger than the saucepan containing the gel mixture. Fill half way with ice. When gel mixture is removed from the heat source, place hot pan on top of the ice and continue to whisk.
