LISA'S PRIZE-WINNING NOODLE KUGEL
This kugel won first prize at Yiddishkayt LA's "Kugl Kukh-Off". Unlike most creamy kugels, this one is sweetened with honey rather than sugar and has a very delicate flavour. Sometimes Lisa adds vanilla, pours in whole milk for a lighter result, or adds extra butter or cream cheese for an even more luscious kugel. Enjoy!

Steps:
- Set the oven at 350°F Generously butter a 9-by-13-inch baking dish.
- In a large pot of boiling salted water, cook the noodles according to package instructions until they are tender. Drain them and rinse with cold water. Spread them evenly in the baking dish.
- In an electric mixer, cream the butter and cream cheese. Beat in the honey, followed by the eggs, one at a time. Beat in the sour cream. The mixture should be thick and creamy. Pour it over the noodles.
- Bake the kugel for 45 to 60 minutes or until it is set and golden brown. Let the kugel sit for 10 minutes. Cut into squares. Serve warm.

PEACH NOODLE KUGEL
This recipe was given to me by a friend many years ago. It's a really yummy and creamy noodle pudding with just the right amount of sweetness... and the peaches make it perfect! I could eat the leftovers for breakfast, lunch, and dinner (and for snacks in between!). Enjoy!

Steps:
- Boil noodles.
- Meanwhile, put sugar, vanilla, peaches, butter, and eggs together in a large bowl. Mix well.
- Drain noodles. Add to mixture. Mix well.
- Spray 9" x 11" dish with nonstick cooking spray. Pour mixture into dish and level. Cover with cinnamon.
- Bake uncovered at 375° for 1 hour to 1 hour 10 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Coat a 9x13 baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce.
- Stir in noodles and raisins.
- Spread graham cracker crumbs on bottom of prepared pan.
- Pour noodle mixture over crumbs.
- Sprinkle top with cinnamon.
- Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until set.
- Cover with foil if it browns too quickly.

KATZINGER'S NOODLE KUGEL
This recipe supposedly came from Katzinger's Deli in NYC. Clipped from an unknown magazine several years ago. Rich, wonderful, my favorite sweet kugel.

Steps:
- Preheat oven to 350 degrees F.
- Butter a 9x13" glass baking dish.
- Cook noodles according to package directions until tender but still firm to the bite (al dente).
- Drain noodles well, then return to the hot pan.
- Add butter and toss until butter melts and the noodles are coated.
- Combine cream cheese and 3/4 cup sugar until smooth.
- Add sour cream and eggs to the sugar mixture and whisk until blended well.
- Mix in buttered noodles gently.
- Spoon half of the noodle mixture into the prepared baking dish.
- Dot with preserves.
- Spoon remaining noodle mixture over preserves layer.
- Sprinkle cornflake crumbs all over the top.
- Combine cinnamon and remaining 2 Tbsp sugar and sprinkle evenly over the crumbs.
- Bake until kugel is set and the top is golden brown, approximately 45 minutes.
- Let cool slightly before slicing into 12 squares.
- Serve warm or chilled.
SAVORY NOODLE KUGEL

- Preheat oven to 350 degrees.
- Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes or until nearly tender but firmer than usual.
- Drain, rinse with cold water, then drain well again.
- Transfer to a large bowl.
- Heat 3 to 4 tablespoons oil in large skillet over medium-low heat.
- Add onions and saute about 20 minutes or until very tender and light brown, (but not burned!) stirring occasionally.
- Add salt, pepper, and 1 teaspoon paprika, and saute about 5 minutes or until well browned.
- Cool slightly.
- Stir onion mixture into noodles.
- Adjust seasoning, mixture should be seasoned generously.
- Add eggs and mix well.
- Oil a 2 quart baking dish and add noodle mixture.
- Sprinkle with remaining tablespoon oil, then dust with paprika.
- Bake uncovered 1 hour or until set.
- Serve from baking dish.

- Preheat oven to 350°F. Coat a 13×9-inch pan with cooking spray and set aside. Cook the noodles as directed on the package. Drain and rinse in cold water. In a large bowl, mix together cottage cheese, sour cream, sugar, eggs, egg whites, pineapple, and raisins. Using a rubber spatula, gently fold in noodles. Mix thoroughly. Pour into the prepared pan and sprinkle cinnamon evenly over the top to taste. Bake for 50 to 60 minutes until light golden brown on top. Serve warm or at room temperature.
