Weight Watchers Barley With Butternut Squash, Apples and Onions image

This recipe comes from the Weight Watchers website but I had to share it here because it's absolutely fabulous. The combination might seem a little strange but it was an instant hit with my family and is one of my favorite dishes. The garlic and thyme blend with the sweet and savory flavors to perfection--you will not believe your mouth! You can serve this with salmon or chicken or do like I do and make it your main course!

3/4 teaspoon salt, divided
1/2 cup uncooked barley
1 tablespoon olive oil
2 cups butternut squash, peeled & diced
1 cup onion, chopped
1/2 cup sweet red pepper, diced
1 medium apple, peeled, cored, diced
1 1/2 teaspoons garlic, minced
3/4 teaspoon dried thyme
1/4 teaspoon black pepper
1/3 cup fat-free chicken broth

Steps:

  • Bring 3 cups of water and 1/2 teaspoon of the salt to a boil in a medium saucepan; add barley. Cover saucepan and simmer barley until tender, about 30 to 35 minutes; drain.
  • Meanwhile, heat oil in a large nonstick skillet over medium-high heat; add squash and cook, stirring often, until it's starting to soften--about five minutes. Add the onion and red pepper and cook for an additional 3 minutes.
  • Stir in apple, garlic, thyme, black pepper and remaining 1/4 teaspoon of salt. Cook, stirring, until apple is almost tender, about 2 minutes; stir in broth, scraping bottom of skillet with a wooden spoon to loosen any browned bits. Stir in cooked barley; toss over low heat to mix and coat. Remove from heat and serve. Yields about 1 cup per serving.
  • *To make this vegetarian, use vegetable broth in place of the chicken broth.

I got this recipe from a Weight Watchers meeting and it has become one of my most favorite recipes! You could probably make it into a dessert by adding a crisp/crumble topping to it or by serving it over ice cream but I love it all by itself!! (2 points per serving)

2 cups butternut squash, cubed into bite size pieces or 20 ounces precut squash
2 large apples, peeled, cored and sliced
1/4 cup Splenda brown sugar blend
1/4 cup cold light margarine
1 tablespoon flour
1/4 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon nutmeg

Steps:

  • Place squash & apples in a 9x13 baking dish.
  • Blend rest of ingredients until crumbly.
  • Sprinkle on squash and apples.
  • Cover and bake at 350 for 45-50 minutes.

4 tablespoons butter, melted
1 tablespoon olive oil
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground cloves
2 large braeburn apples or 2 large gala apples, cored and cut into 1/2-inch slices
2 sweet onions, peeled and cut into 1/2-inch slices

Steps:

  • Heat grill to medium direct heat.
  • In a snall bowl, combine melted butter, oil, cinnamon, salt, pepper, and cloves. Mix and set aside.
  • Place apple and onion slices on the hot grill. Brush tops with half of butter/oil mixture. Cover and grill for 5 minutes.
  • Turn apple and onion slices CAREFULLY with a meatal spatula so that onion rings do not seperate. Brush with remaining butter/oil mixture. Cover and grill for 5-7 more minutes.
  • Remove from grill CAREFULLY so that onion rings do not seperate. Layer apple and onion slices on a serving platter.
