This recipe comes from a 5 Ingredient 15 Minute Weight Watchers book from about six years ago. It is so easy and so yummy! It is my boyfriend's absolute favorite. It serves four and has four points each.

1 lb 93% lean ground beef
1/2 cup barbecue sauce, divided
1/4 cup frozen chopped onions, pressed dry
1/4 cup Italian seasoned breadcrumbs
2 large egg whites

Steps:

  • Preheat oven to 375°F.
  • Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and seasons of your choice in a large bowl; stir well.
  • Shape mixture into a loaf pan. Spread remaining 1/4 cup barbecue sauce over loaf.
  • Bake at 375°F for 40 minutes or until desired degree of doneness.

Adding sauteed vegetables to ground turkey breast adds both flavor and moisture to this Tex-Mex-inspired meatloaf. It's a great cooking hack for making low-fat turkey and chicken burgers, too. If you have leftover roasted or grilled peppers and onions in your fridge, you can chop them up and add them to the turkey mixture instead of the sauteed veggies.

0.75 cup(s) Uncooked onion(s) finely chopped
0.25 cup(s) Green pepper(s) finely chopped

0.25 cup(s), shredded 50% reduced fat sharp cheddar cheese
0.25 cup(s) Seasoned breadcrumbs
1.5 tsp Italian seasoning
1 tsp Ketchup
0.5 tsp Table salt
0.5 tsp Black pepper
1 large egg(s) Egg(s) lightly beaten
1.25 pound(s) Uncooked 99% fat-free ground turkey breast
0.5 cup(s) Ketchup
1 Tbsp Unpacked light brown sugar
1 tsp Mustard

Steps:

  • Preheat the oven to 350°F. Coat an 8-X4-inch loaf pan with cooking spray.
  • In a large nonstick skillet, heat the oil over medium-high heat. Add the onion, bell pepper and garlic; sauté for 3 minutes. Remove from heat; let cool.
  • In a large bowl, combine the cooled onion mixture, cheese, breadcrumbs, Italian seasoning, ketchup, salt, pepper, and egg; toss to moisten the breadcrumbs. Add the turkey; stir just until blended.
  • Pack the turkey mixture into the prepared pan; smooth into an even layer. Bake for 35 minutes.
  • In a small bowl, combine the ketchup, sugar, and mustard; spread over the meatloaf and bake to an internal temperature of 165°F, 10 to 15 minutes more. Remove the meatloaf from the oven; let stand 10 minutes. Remove the meatloaf from that pan; slice it into 6 equal pieces.
  • Serving size: 1 piece

1 lb ground turkey
1 box chicken flavored Stove Top stuffing mix
1/2 cup egg substitute
1 cup water

Steps:

  • In a bowl mix stuffing mix, egg beaters and water and stir to miosten.
  • Add turkey and mix well.
  • Divide mixture amongst 12 pam sprayed muffin tins.
  • Bake at 350 degrees for 35 minutes.
  • Enjoy!

From "Everyone Loves Chicken" by Weight Watchers. I borrowed my friend's book and I'm posting what sounds interesting for future reference. 3 points per slice. No liquid is needed to cook this in the crock pot, the foil does the trick and the glaze makes it look less pale in color.

1 1/4 lbs ground turkey
1/3 cup seasoned dry bread crumb
1/4 cup reduced-fat cheddar cheese
1/4 cup onion, minced
1 egg, lightly beaten
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
2 tablespoons ketchup
2 teaspoons brown sugar, packed
2 teaspoons Worcestershire sauce
1 teaspoon spicy brown mustard

Steps:

  • Fold a 24 inch length of foil in half lengthwise and fit it into the bottom and sides of a 5-6 quart slow cooker insert.
  • Put the turkey, bread crumbs, cheese, onion, egg, oregano, salt and pepper in a medium bowl; mix well with hands and shape into a loaf.
  • Place loaf on foil in slow cooker.
  • Cover the slow cooker and cook until the meatloaf juices run clear and an instant read thermometer registers 165°F in the center.
  • It needs 3-4 hours on high or 6-8 hours on low heat.
  • Combine ketchup, sugar, Worcestershire sauce, and mustard in a small bowl.
  • Spoon mixture over meatloaf in the slow cooker, spreading it smooth and cover the slow cooker and cook until the glaze is heated through, about 30 minutes longer.
  • With the help of the foil, lift the meatloaf from the slow cooker and transfer it to a platter.
  • Discard the foil and cut the loaf into 6 slices.

1/2 cup plain bread crumbs
1 cup onions, chopped
1 cup barbecue sauce, divided
2 tablespoons Worcestershire sauce
2 egg whites
1/4 teaspoon salt
Fresh ground pepper, to taste

Steps:

  • Preheat oven to 350°F. Line a baking pan or cookie sheet with foil. In a large bowl, combine the turkey, bread crumbs, onions, ½ cup barbecue sauce, Worcestershire sauce, egg whites, salt and pepper and mix well until thoroughly combined. Place meatloaf mixture in the center of the baking pan and shape into a 12 x 4 inch loaf by hand. Spread the remaining ½ cup barbecue sauce evenly over the top of the loaf. Add more if desired. Bake 1 hour and let stand for 5 minutes before slicing.
