This recipe was given to me by my siser over 15 years ago, and I have many requests for it. When layered in a glass dish, it's very colorful for holiday parties. For a more casual get together with a festive look, such as a BBQ, layer it in a 10" iron skillet, and tie a bandana around the handle.

1 (15 ounce) can refried beans or 1 (15 ounce) can fat-free refried beans
1 package taco seasoning
1 (8 ounce) container single cream or 1 (8 ounce) container nonfat sour cream
1 medium onion, finely chopped
jalapeno pepper, sliced,from jar
shredded lettuce
1 large ripe tomatoes, , chopped in small chunks
sharp cheddar cheese, shredded
1 can black olives, sliced

Steps:

  • Mix taco seasoning with beans and spread in a 13x9 inch glass dish.
  • Layer sour cream, onion, peppers, lettuce, tomatoes, cheese& olives in that order.
  • Serve with tortilla chips or scooper size Fritos.

2 (9 ounce) cans bean dip
2 cups guacamole
1 cup sour cream (low fat ok)
1/2 cup mayonnaise (low fat ok)
1 (1 1/4 ounce) packet taco seasoning
2 green onions, minced fine
1 (4 1/4 ounce) can chopped black olives, drained
2 medium tomatoes, diced
1 cup salsa
3/4 cup shredded cheddar cheese (low fat ok)

Steps:

  • Spread each layer, one on top of the next, on a large serving plate or glass pan.
  • 1st layer- bean dip 2nd layer- guacamole*see my recipe* 3rd layer- (combined) sour cream, mayonnaise, taco seasoning 4th layer- (combined) green onions, black olives, tomatoes 5th layer- salsa 6th layer-cheddar cheese Refrigerate for a couple hours.

Low-fat Hot Mexican Bean Dip image

This is a great-tasting no-guilt bean dip recipe. Serve with reduced fat chips and you have a delightful snack.

1 (1 lb) can pinto beans, rinsed and drained
1/4 cup nonfat sour cream or 1/4 cup light sour cream
2 -3 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 cup shredded fat-free cheddar cheese or 1/2 cup low-fat cheddar cheese
1/4 cup thinly sliced scallion
1/4 cup sliced black olives
2 tablespoons finely chopped jalapeno peppers (optional)

Steps:

  • Place the beans, sour cream, chil powder and cumin in a food processor or blender; process until smooth.
  • Spread the mixture over the bottom of a 9-inch glass pie pan.
  • Top with the cheese, followed by the scallions, olives and jalapenos.
  • Serve at room temperature or hot.
  • If using a microwave oven, heat on high (100 percent power) for 5 to 6 minutes or until the edges are bubbly and the cheese is melted.
  • If using a conventional oven, bake at 400 degrees for 20 minutes.
  • Serve with reduced fat tortilla chips.

This is totally addictive! Based on a Jean Pare recipe. Serve with crackers, tortilla chips or Fritos. You could cut down on the chili powder if you wanted to.

Number Of Ingredients 10

8 ounces cream cheese, softened
1 cup sour cream
1 (14 ounce) can refried beans
1 tablespoon chopped chives
1 -2 tablespoon chopped fresh parsley
1 tablespoon onion flakes (optional)
2 tablespoons chili powder
1 1/2 cups grated medium cheddar or 1 1/2 cups old cheddar cheese
1 1/2 cups grated monterey jack cheese
2 tablespoons chili powder

Steps:

  • Mix first seven ingredients in a bowl and spread in a 3 quart casserole.
  • Sprinkle with Cheddar, then Monterey Jack.
  • Top with second amount of chili powder.
  • Can chill ahead of time.
  • Bake, uncovered in a 350 oven for 20 minutes or until hot and cheese is melted.
