Turn this recipe into tacos or wraps! Shred or slice the chicken and serve in Boston lettuce leaves or small tortillas with the salsa spooned over top. Swap in 3 large boneless, skinless chicken breasts for the thighs, if you prefer.

6 thigh(s) Uncooked boneless skinless chicken thigh(s)
0.25 cup(s) Jamaican jerk seasoning
1.5 item(s) Mango(es) diced
0.5 medium Sweet red pepper(s) diced
0.5 small Uncooked red onion(s) diced
2 Tbsp Cilantro fresh, chopped
0.5 medium Jalapeño pepper(s) seeded and minced
2 Tbsp Fresh lime juice
0.125 tsp Kosher salt or to taste

Steps:

  • Trim any excess fat from chicken. Place chicken in a large bowl and cover with jerk seasoning. Turn chicken to coat, cover bowl, and refrigerate for at least an hour.
  • Preheat oven to 375℉.
  • Remove chicken from bowl and place in a single layer on an ungreased baking sheet. Bake until chicken is cooked through and reaches an internal temperature of 165℉, 15 to 30 minutes (will vary depending on thickness).
  • Meanwhile, to make salsa, in a medium bowl, combine mango, red pepper, onion, cilantro and jalapeño. Drizzle with lime juice and stir to combine. Season to taste with salt, stir again, and chill for 10 minutes.
  • Serve chicken topped with salsa.
  • Serving size: 1 chicken thigh and about ½ cup salsa

I am an idiot. Last year I GLUED all my weight watchers recipes out of weight watchers magazines into an exercise book. Come this year when I am given not one but two recipe folders to hold snippets out of magazine I have to try and unglue them. The result is not successful. So I am putting them on recipezaar to print them out to organise them, damn last years OCD. I'm not sure what issue they are from but this is definitely from weight watchers magazine

8 medium skinless chicken drumsticks
2 teaspoons jamaican jerk spice
1 lime, juice and zest of
100 g small macaroni noodles
200 g salsa (fresh)
25 g fresh coriander
198 g sweetcorn, drained

Steps:

  • preheat oven to gas mark 4. ut chicken drumsticks into a plastci freezer bag and add jerk seasoning and lime zestv and juice. close bag and massage the drumsticks to coat them
  • remove drumsticks and place on a baking tray cook in oven for 320 minutes or until cooked through (juiceds shoul run clear).
  • meanwhile cook the pasta accvoridng to pack instructions, drain then rinse with cold water until cool. put into bowl with salsa, corrainder and sweetcorn season with black pepper and stir to combine. serve 2 chicken drumsticks with a quarter of the salsa.

This was in a 1993 WW magazine. Looks like approximately 4 points per serving (184 calories per serving) I had the recipe in my stash which I am slowly cleaning out. Prep time includes marinating time.

2 ounces dry red wine
1/2 jalapeno pepper, minced
2 tablespoons scallions, minced
1 tablespoon oil
1 teaspoon oil
1 tablespoon allspice
1 garlic clove, minced
1 1/2 teaspoons coriander
1/2 teaspoon low sodium soy sauce
1/4 teaspoon nutmeg
16 ounces boneless chicken breasts
1/2 teaspoon cinnamon

Steps:

  • In a small bowl, combine all ingredients except chicken until mixture forms a paste (or in a food processor).
  • Rub chicken evenly with spice mixture; cover and refrigerate at least 8 hours, preferably overnight.
  • Preheat broiler. Broil chicken on rack 10-15 minutes, turning once, until cooked through.
