Yield 24 meatballs.

Number Of Ingredients 10

2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

I am a cook that cooks out of her head with the help of recipes. I was in a hurry to make a dish for our pot luck and because I love to cook, I am always having a hard time choosing what to make. Welllll... at the last minute all I had to work with was Ground Beef. So this is what I came up with and it was a hit. I was hoping to bring some home for the hubby but they were all gone. Hope you enjoy too!

Number Of Ingredients 10

2 lbs. - ground beef
2 can(s) pineapple chunks with juice
2 - red bell peppers cut in chunks
2 cup(s) sweet baby ray's bar b que sauce
1 package(s) lipton onion soup mix
3/4 cup(s) italian bread crumbs
2 - eggs
3/4 cup(s) water
1/3 cup(s) ketchup
2 cup(s) white rice

Steps:

  • Mix all ingriedients with Ground Beef except for the pineapple, red bell peppers and bar b que sauce. Make into balls (size is optional) but I use about a 1 inch ball. Brown all of the meatballs.
  • Combine Pineapple and juice in a pot. Cut the red peppers into chunks and add the the pineapple juice. Bring to a boil and then lower heat to simmer. Add bar b que sauce and mix well. Add browned meat balls and simmer about an hour. Serve over cooked white rice.
  • Just a hint....you can add more bar b que sauce to your liking. I started out with two cups. Bon Appetite!
