MOM'S ZUCCHINI BREAD

Really, really good and moist- my kids eat it as quickly as I can make it. Bread will freeze well, and keep in refrigerator for weeks.

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
3 eggs
1 cup vegetable oil
2 ¼ cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts

Steps:

  • Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  • Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  • Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  • Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

I toyed around with ingredients while making Zucchini Bread, until I came up with a recipe my entire family could enjoy. I hate Zucchini Bread! But I love this bread, and when I sell it in the farmer's market, people say its the best they've ever tasted! I like to make a fair amount of it, but because of the rounded-off ingredients, this is easy to halve.

Number Of Ingredients 10

4 cups grated zucchini (approximately 2 medium sized zucchinis)
4 eggs
1 cup fat (butter, margarine or vegetable oil, etc)
2 cups sugar
4 cups flour
3 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Grate the zucchini, and measure out four cups. Add to large mixing bowl.
  • Add eggs, fat, cinnamon, salt, baking soda, vanilla and sugar. Stir together well.
  • Add flour to the mixture, a bit at a time. Stir until all ingredients are mixed. The mixture should resemble thick pancake batter. If it is too thick, add another egg. Add nuts, if desired.
  • Lightly grease and flour your bread pans, or spray them with nonstick cooking spray.
  • Carefully spoon the mixture into bread pans, stopping when the mixture is about 3/4 of the way to the top.
  • Bake for 35 minutes, or until a golden brown. Take out loaves, and let them cool five minutes before removing the bread from the pans to finish cooling on a wire rack.

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon grated lemon zest
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded zucchini (about 2 medium)
1/2 cup chopped walnuts or pecans

Steps:

  • Preheat oven to 350°. Grease two 8x4-in. loaf pans. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, salt, baking soda, lemon zest, cinnamon and baking powder; gradually beat into sugar mixture, mixing just until moistened. Stir in zucchini and walnuts., Transfer to prepared pans. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool.
