- In a food processor, puree the watermelon flesh. Pour the pureed watermelon into empty ice cube trays and freeze for at least 4 hours. Also, freeze 4 martini glasses.
- In a blender combine the frozen watermelon cubes, simple syrup, lemon juice, vodka, and melon liqueur; blend until smooth. Pour into 4 frozen martini glasses and garnish each with a lemon twist.

- In a blender purée the watermelon pieces and strain the purée through a very fine sieve set over a pitcher, discarding the solids. (There should be about 2-1/3 cups juice). Stir in the vodka, the Triple Sec, and the lime juice, pour the cooler into long-stemmed glasses filled with ice cubes, and garnish each drink with a watermelon slice.

This is a really funny thing I saw an American friend of mine make. Great for a barbie or party. Wish I'd known about this when I was going to school parties-I could have walked in with my watermelon and got all my mates completely sloshed! Needs to be started a few days-even a week-before you can plan to eat it.

- Simply cut a hole in the top of the melon, wide and deep enough to insert a funnel. Pour some of your chosen alcohol into the melon through the funnel, leave to sit for a day and pour in some more. - Set aside a few watermelon chunks for garnish and pass remaining watermelon pieces through a juicer. Measure out 1/2 cup and 3 ounces of watermelon juice separately. Reserve remaining watermelon juice for a different use.
- Combine 1/2 cup fresh watermelon juice, sugar, and water in a saucepan and bring to a boil over medium-high heat. Remove from heat and allow watermelon-infused simple syrup to cool, about 30 minutes.

- First, use a serrated knife to cut around the flesh of your watermelon halves. Use an ice cream scoop or large spoon to remove all the flesh, including the pips, into a large bowl. Transfer to a blender or food processor and blitz until smooth.
- Strain the pulp through a fine sieve into a large bowl to extract all the juice. You should be left with about 800ml of watermelon juice. Meanwhile, put the watermelon halves in a medium roasting tin lined with kitchen paper. Make sure the watermelon fits in snugly so it's easily transferable to the fridge.
- Pour 50ml of the juice into a small saucepan and bring to the boil. Once boiling, add the sugar and leave to dissolve for 2 mins. Once cooled a little, squeeze out the soaked gelatine leaves and stir through the warm watermelon juice to dissolve. Once fully dissolved, combine with the rest of the watermelon juice and add the vodka.
- Ladle equal amounts of the juice into each watermelon half. Transfer to the fridge to set for at least 4 hours, preferably overnight. When ready to serve, use a serrated knife to cut the watermelon into about 15 wedges. Serve with a warning: these contain lots of vodka!

- Stand the watermelon on end in a bowl, stem end up, and cut a 3 inch diameter plug out around the stem like a Jack-o'-lantern lid. Remove the plug, scoop out about 2 inches of flesh, and pour out any excess liquid. With a long skewer pierce the flesh inside to the bottom in all directions without penetrating the rind and pour out any excess liquid.
- Pour equal amounts of peach schnapps and vodka into the watermelon gradually until it cannot absorb any more and replace the plug.
- Refrigerate watermelon on its end, plug end up, for at least 15 hours and up to 2 days.
- Serve the watermelon cut into wedges.

- In a blender or food processor, puree the watermelon. Strain through a fine-mesh sieve and discard solids. In a medium bowl, a pitcher, or a medium-size mason jar, stir together the watermelon juice, lime juice, and sugar. Taste and add additional sugar if you'd like and depending on the sweetness of your watermelon; you want it to be fairly sweet, but still refreshing. Add vodka and mint leaves. Cover with plastic wrap or an airtight lid and refrigerate for at least two hours and up to 24 hours.
- Remove mint leaves. Fill four glasses with ice and fill halfway with watermelon mixture. Top off with club soda. Serve with a straw.

- Place the piece of watermelon cut up into blender or food processor. Add the agave nectar and orange juice. Pulse for about 30 seconds.
- Pour into shaker with ice. Add the vodka. Shake and strain into glass. Garnish with a piece of melon!

- Dissolve the sugar in the lemon juice. Pour out 1/4 cup vodka and add the lemon mixture and the mint sprigs to the bottle. Cap, shake, and let sit from 1 hour to overnight for the flavors to develop.
- Cut a plug from the watermelon about 3-inches deep and as big around as the top of the bottle. Upend the bottle into the hole and let it sit for a couple of hours or until most of the vodka lemonade has been absorbed into the watermelon. Re-plug the watermelon and refrigerate it for a few hours. Slice and serve.

VODKA WATERMELON
We've been having a lot of boozy sweet-stuff this month at work (tequila choccies, boozy cakes, etc.) and my boss mentioned that his missus used to make vodka watermelon. I've not yet tried this but apparently it's great fun and fab for a party! Please note that servings are approximate and you can make this as boozy (or not) as you wish, but it's probably prudent to allow for a small bottle of vodka. You may need to turn the watermelon occasionally as my boss did comment that sometimes when they have it the vodka all falls to the bottom and some slices don't taste very alcoholic at all. I've heard you can inject the vodka into the melon as well, but if you're anything like me then you don't have a whole lot of needles lying about your house!
