WATERMELON SLICE JELLO SHOTS

- Use a large spoon or ice cream scoop to scoop out the inside of the watermelon and set aside (to later eat, of course!). You want to scoop out most of the red flesh but still leave about 1/2" of the red part above the white rind. Place the hollowed out watermelon on a cookie sheet with paper towels folded/stuffed on either side to keep it from tipping over.
- Mix your two boxes of jello with the 4 packets of unflavored gelatin. Add in 2 cups of boiling water and stir until dissolved. Once dissolved, add in two cups of vodka and stir to combine. Pour the liquid into the halved watermelon (fill to the top!) and place into the fridge for 3-4 hours until the jello is set. Probably the hardest part of this recipe is carrying the tray to the fridge without spilling it!
- Once the jello is set, use a large knife to cut the slices like you normally would. The jello fills into the watermelon some so the top level shrinks a bit. Just use the knife to even out any rind that sticks up higher than your slices, and you're ready to serve your shots!

SOUR WATERMELON JELL-O SHOTS IN A WATERMELON RIND
You've probably seen watermelon rinds filled with Jell-O; our version takes the idea a bit further. Here we use the watermelon juice from the scooped-out watermelon, spike it with a splash of vodka, and give it a sour flavor so it tastes just like your favorite candy. The result is an adult-friendly summer party pleaser.

- Using a large chef's knife, cut the watermelon in half lengthwise through the stem. Trim a small portion from the underside of each half so it can sit on the work surface without wobbling. Transfer to a rimmed baking sheet. Scoop out most of the flesh with a large spoon into a medium bowl, leaving about 1/8 inch of flesh above the white part of the rind (this will help the gelatin to adhere).
- Transfer the watermelon flesh and any juice from the bowl and rind to a blender and puree until very smooth, about 2 minutes. Strain through a fine-mesh sieve lined with cheesecloth (or a coffee filter). Discard the solids and reserve the juice; you should have about 5 cups total.
- Measure 3 cups of the juice into a medium saucepan (save any remaining juice for another use). Bring to a simmer over medium-high heat.
- Meanwhile, whisk the watermelon-flavored and unflavored gelatin with the citric acid together in a large bowl, then whisk in the warm watermelon juice until all of the gelatin has dissolved, about 2 minutes. Whisk in the vodka until combined. Pour the gelatin mixture into the hallowed-out watermelon halves. Transfer to the refrigerator and chill until completely set, about 4 hours and up to 24 hours.
- Slice the watermelon in half lengthwise, then crosswise into small wedges. Serve chilled.
WATERMELON LIME JELLO SHOTS

- 1. Prepare limes by cutting them in halves and hollowing out the peel. This may sound easier than it is. The trick is to take a paring knife and score around the insides carefully to loosen the citrus. Then spoon it out saving the fruit.
- 2. Boil one cup of water and add it to jello mix in a large bowl, stirring until it dissolves. Slowly add one cup of vodka and stir.Pour mixture into a cup with a spout (for an even pour). I use a measuring cup. Line up limes on a cookie sheet so they are secure and upright. Pour in jello mixture. Refrigerated over night.
- 3. Carefully (gingerly) quarter the halves with a sharp knife.
WATERMELON GELATINS
Watermelons are made up almost entirely of water, so they're filling and refreshing without being heavy on calories. It is a good source of lycopene.

- In a small bowl, sprinkle gelatin over 1/4 cup cold water. Set aside to soften, about 5 minutes.
- Meanwhile, in a small saucepan, combine sugar, salt, and 1/4 cup water. Heat over high, stirring occasionally, just until sugar is dissolved, 2 to 3 minutes; remove from heat. Stir in gelatin mixture until dissolved; set aside.
- In a blender, combine lemon juice and half the watermelon chunks; puree. Add remaining watermelon chunks; puree. Pour puree through a fine-mesh sieve into a large bowl or glass measuring cup, and discard solids. (You will need 3 cups of puree; reserve any extra for another use.)
- Stir gelatin mixture into puree; skim off and discard any foam on the surface. Divide mixture among 6 serving cups. Cover and refrigerate until set, at least 3 hours and up to 3 days. Serve gelatins, garnished with diced watermelon.

- Add 1/2 cup boiling water to lime gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in 1/4 cup cold water. Pour into 9-inch square pan sprayed with cooking spray. Refrigerate 20 to 25 min. or until gelatin is set but not firm.
- Meanwhile, add 1/2 cup of the remaining boiling water to unflavored gelatine in medium bowl; stir until completely dissolved. Stir in milk. Cool until ready to use.
- Pour unflavored gelatine over lime gelatin layer. Refrigerate 25 to 30 min. or until gelatine is set but not firm. Meanwhile, add remaining boiling water to watermelon gelatin mixes in separate medium bowl; stir 2 min. until completely dissolved. Stir in remaining cold water. Cool until ready to use.
- Pour watermelon gelatin slowly over gelatine layer in dish. Refrigerate 2 hours or until firm.
- Cut dessert into 36 squares; top with chocolate chips to resemble watermelon pieces as shown in photo.

WATERMELON JELLO BITES
Jello shots have grown-up into adulthood with us! Gone are those little plasic cups we all had in college. Now these little bundles comes out looking sophisticated and almost too good to eat

Steps:
- Cut your limes in half. Scoop out the lime pulp just leaving the rind. Set aside. Dissolve jello in 1c boiling water and whisk 2 minutes. Add 1c chilled vodka.
- Pour jello mixture into the hollowed out limes. Place in refrigerator 4-5 hours or overnight until completely set.
- Remove from refrigerator. Cut each half lime in half, thus having 4 wedges. Repeat with all the limes you have. They will then ressemble watermelon slices
