2 cups seedless watermelon cubes
1 lime wedge
1 pinch kosher salt
ice cubes
1 ½ fluid ounces silver tequila
¾ fluid ounce orange-flavored liqueur (such as Cointreau®)
¾ fluid ounce lime juice
1 thin slice jalapeno slice, plus more for garnish
1 watermelon wedge

Steps:

  • Puree watermelon in a blender. Wipe the rim of a margarita glass with a lime wedge; dip rim in salt.
  • In a cocktail shaker half-filled with ice, add tequila, orange liqueur, lime juice, jalapeno, and 2 ounces of the watermelon puree. Shake until very cold.
  • Strain into prepared glass. Garnish with watermelon wedge and jalapeno slice.

2 cups diced watermelon
1/4 cup Simple Syrup, recipe follows
Juice of 1/2 lime
1 cup sugar
Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

Steps:

  • In a blender, puree the watermelon with the Simple Syrup and lime juice. Pour into a silicone ice cube tray and freeze about 8 hours.

2 cups watermelon pieces (no rind, no seeds)
1 tablespoon honey
1 ounce fresh lime juice
3/4 cup sugar
4 ounces neutral-flavored vodka
2 ounces fresh lime juice
12 to 14 fresh mint leaves, torn
Club soda, for topping cocktail

Steps:

  • For the watermelon ice cubes: Puree the watermelon, honey and lime juice in a blender until smooth. Pour into a square ice cube tray. Freeze until firm, 3 to 4 hours.
  • For the simple syrup: Combine the sugar and 3/4 cup water in a small saucepan. Bring to a simmer and shut off the heat. Stir until the sugar dissolves. Cool.
  • For the cocktails: Mix the vodka, lime juice, mint leaves and 2 ounces simple syrup in a pitcher filled with ice. Top with club soda. Put 3 watermelon cubes in each of 2 highball glasses and pour the cocktail over.

3 tablespoons lime juice, plus lime wedges for garnish
2 tablespoons sugar, depending on the sweetness of the watermelon
3/4 cup silver tequila or your preferred liquor, such as vodka or rum, optional
2 tablespoon orange liqueur, optional

Steps:

  • Combine the watermelon, lime juice and sugar to taste in a blender and blend until very smooth. Strain through a fine-mesh strainer into a small pitcher. Stir in the tequila and orange liqueur if using.
  • Fill 4 glasses with ice. Pour the cocktail into the glasses and garnish with watermelon and lime wedges.

1 1/2 ounces blanco tequila, such as Espolon or Casamigos (about 1 shot)
3 ounces watermelon juice (about 2 shots)
Squeeze of lime juice (from one wedge)
Sparkling rosé, Prosecco, or sparkling water
Watermelon wedge and mint for garnish (optional)

Steps:

  • Fill a wine glass with ice.
  • Add tequila and watermelon juice. If unable to purchase locally, simply place about 1 cup of seedless watermelon cubes into a blender and pour through a fine-mesh sieve. (For bigger batches, put 3 or 4 cups of watermelon cubes into blender. Stir before using for refills.) We recommend then including a squeeze from one large lime wedge to offset any sweetness and compliment the tequila, if desired.
  • Top with your chosen bubbles. We recommended sparkling rosé, Prosecco, or Topo Chico. (If serving just one portion, sparkling water might be the most efficient choice. If making multiple, pop a bottle!)
  • Garnish with a watermelon wedge and mint, if desired. Enjoy!

Note that "cooking time" involves no cooking; however, 2 hours (minimum) freezing time is needed prior to mixing the drinks to make the tequila-spiked watermelon ice cubes.

1/4 cup granulated sugar
2 teaspoons thyme, fresh, finely chopped
6 cups seedless watermelon, diced into 1/2-inch cubes
1 cup ice
1/2 cup tequila
2 tablespoons orange liqueur (such as Cointreau)
1/2 cup sugar (regular)

Steps:

  • Make simple syrup: Bring granulated sugar and 1/4 cup water to a boil, stirring to dissolve sugar. When boiling, add thyme and stir for 1 minute. Let cool.
  • In a blender, put 3 cups watermelon, 1 cup of water and the ice, and blend for 2 minutes until finely pureed. Add syrup and blend for 1 more minute. Serve.
  • MAKE TEQUILA-SPIKED WATERMELON ICE CUBES AT LEAST 2 HOURS AHEAD (See below):.
  • To add tequila-spiked watermelon ice cubes: Place 3 cups watermelon cubes on a large baking sheet. Bring tequila, 1/2 cup water, orange liqueur and regular sugar to a boil, stirring constantly. Let cool to room temperature. Brush watermelon with mixture and freeze for 2 hours.
