Steps:
- Using a sharp knife, cut off the top and bottom of the watermelon to reveal the red flesh and create flat surfaces on both sides. Stand the watermelon upright, and slice off the remaining peel so only the red core remains.
- Cut the watermelon into roughly 1-inch (2-cm) cubes and transfer to a large bowl.
- In a small bowl, whisk together the lemon juice, water, honey, salt, and pepper.
- While whisking, gradually add the oil in a very slow, steady stream to create an emulsification. Set aside.
- Add the spinach, mango, almonds, and lemon vinaigrette to the large bowl with the watermelon.
- Toss the salad until well-combined, then divide between serving bowls.
- Enjoy!

- For the oregano vinaigrette: In a medium bowl, whisk together the olive oil, vinegar, Dijon, honey, dried oregano and some salt and pepper to combine.
- For the salad: Set aside 2 tablespoons each of the feta and pistachios for serving, then add the remaining feta and pistachios to a large bowl. Add the spinach and watermelon, drizzle over the dressing and toss to coat. Transfer to a serving bowl and garnish with the reserved feta and pistachios.

- To make the dressing, combine olive oil, honey, balsamic vinegar, lemon juice, shallots and ginger. Mix well and place in the refrigerator in a sealed container for later.
- When ready to serve, prepare the salad by combining the watermelon, spinach, herbs and feta cheese. Add the dressing to taste. Toss and then add salt/pepper to taste. Serve right away.
