This is a drink served throughout Mexico. It is made with several different fruits. This is a watermelon drink.

4 cups cubed seeded watermelon
½ cup water
½ cup white sugar, or to taste
4 slices lime
24 fresh mint leaves
ice

Steps:

  • Puree the watermelon and water in a blender until smooth. Add sugar to taste. Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves. Crush with a cocktail muddler, then fill each glass with ice. Pour in the watermelon agua fresca, and stir before serving.

1 small watermelon (12 to 14 pounds), peeled and chopped
1 teaspoon apple cider vinegar
Handful fresh mint
1 liter sparkling water
Pinch flakey sea salt
Pinch chili powder

Steps:

  • Add the watermelon, vinegar and mint to a blender and blend to combine. Strain the mixture through a sieve into a pitcher. Add the sparkling water, a pinch of salt and chili powder and ice.

Serve this refreshing mint-infused watermelon juice as cooling refreshment in the summer sun.

Yield Makes about 6 cups

Number Of Ingredients 5

1/4 cup (packed) fresh mint leaves
1/4 cup sugar or agave syrup
5 cups peeled, seeded, coarsely chopped watermelon (from about a 2 1/2-pound watermelon)
1/4 cup fresh lime juice
Mint sprigs (for serving)

Steps:

  • Combine mint leaves, sugar, and 1/4 cup water in a small pot. Bring to a boil and stir until sugar has dissolved. Transfer mixture to a heatproof container and chill, uncovered, until cool, about 30 minutes.
  • Strain mint syrup into a blender; discard mint leaves. Add watermelon and lime juice and blend until very smooth. Using a fine-mesh sieve, strain into a pitcher; discard solids. Add 2 cups water and stir well to combine. Serve with mint sprigs.

  • Aqua fresca can be stored in an airtight container and chilled for up to 1 day.
