Roasted Beet, Endive, Orange, and Watercress Salad with Kimberly Williams-Paisley image

6 large beets (about 2 pounds), scrubbed and stems removed
1 tablespoon olive oil
Coarse salt and freshly ground pepper
6 navel oranges
1 tablespoon red-wine vinegar
1 1/2 tablespoons canola oil
1 cup chopped fresh flat-leaf parsley
3 heads Bibb lettuce (1/2 pound), or 1 head Boston lettuce, cut into 1/2-inch strips
2 heads Belgian endive (about 1/2 pound), cut into 1/2-inch pieces
1 bunch watercress
1/4 pound ricotta salata, or feta cheese, crumbled
Olive-oil, cooking spray

Steps:

  • Heat oven to 450 degrees. Place beets onto a sheet of parchment paper-lined foil; drizzle with olive oil and season with salt and pepper. Wrap to enclose. Roast until tender, 45 to 55 minutes. Allow beets to cool.
  • Rub cooled beets with paper towels to remove skins. Reserve half a peeled beet, cutting the rest into 3/4-inch pieces; set aside.
  • Using a paring knife, remove peel, pith, and outer membranes from oranges. Working over a medium bowl to catch juices, carefully cut out each segment between membranes. Squeeze membrane to extract juice; discard. Set aside 1/4 cup juice, reserving the rest for another use.
  • In a blender jar, combine reserved half beet, reserved orange juice, red-wine vinegar, salt, and pepper; puree until smooth. With blender on, add canola oil, and process until combined. Stir in 2 tablespoons parsley.
  • Place lettuce, endive, watercress, chopped beets, oranges, and remaining parsley on a large platter. Just before serving, add vinaigrette; toss to combine. Garnish with ricotta salata, and serve.

1 large, ripe but firm Comice or Bartlett pear
2 teaspoons fresh lime juice
2 tablespoons pecans 1 ounce, lightly toasted
1 bunch watercress, trimmed about 4 ounces
2 endives, broken into leaves
2 ounces Roquefort, Stilton or another blue cheese, crumbled
2 teaspoons chopped fresh tarragon
1 tablespoon sherry or Champagne vinegar
1/2 to 1 teaspoon Dijon mustard, to taste
Salt
freshly ground pepper
3 tablespoons extra virgin olive oil
1 tablespoon walnut oil

Steps:

  • Peel, core and thinly slice the pear. Cut the slices in half so they're not too long. Toss with the lime juice.
  • Combine the pears, pecans, watercress, endive, blue cheese and tarragon in a large bowl. Whisk together the vinegar, mustard, salt, pepper, olive oil and walnut oil. Toss with the salad, and serve.

1 large bunch watercress
2 heads Belgian endive
1 tablespoon lemon juice
1 tablespoon red-wine vinegar
2 teaspoons Dijon-style mustard
Salt and freshly ground pepper to taste
3 tablespoons olive oil

Steps:

  • Cut off the tough stems of the watercress and discard.
  • Cut off the end of the endive and cut the head into bite-size pieces.
  • Rinse watercress and endive and drain or spin dry. Put in a salad bowl.
  • Put the lemon juice, vinegar, mustard, salt and pepper in a small bowl. Using a wire whisk, beat in the oil. Pour the dressing over the salad greens and toss.

6 ounces soft fresh goat cheese (such as Montrachet)
3/4 cup fresh breadcrumbs from sourdough bread (about 2 ounces)
1/2 cup white wine vinegar
1 large garlic clove
1 tablespoon chopped shallot
1 tablespoon Dijon mustard
1/2 cup walnut oil or olive oil
2 tablespoons vegetable oil
2 pears, cored, thinly sliced
4 heads Belgian endive, thinly sliced
2 bunches watercress, trimmed
2 cups walnuts, toasted

Steps:

  • Slice goat cheese into 6 equal portions; form each into ball. Flatten cheese balls into 2-inch-diameter rounds. Place breadcrumbs in shallow dish. Coat cheese rounds completely with breadcrumbs. Cover and chill at least 1 hour.
  • Mix vinegar, garlic clove, shallot and Dijon mustard in blender. With machine running, gradually add walnut oil. Season dressing to taste with salt and pepper. Set dressing aside.
  • Heat 2 tablespoons vegetable oil in large nonstick skillet over medium-high heat. Add cheese rounds to skillet and sauté until golden, about 2 minutes per side. Transfer cheese rounds to paper towels; let drain completely.
  • Toss pears, endive and watercress in large bowl with enough dressing to coat. Divide salad among 6 plates. Sprinkle walnuts over salads. Place 1 goat cheese round in center of each salad and serve.

POTATO AND ROASTED GARLIC SOUP WITH WHEAT BERRY, WATERCRESS, AND ENDIVE SALAD



Potato and Roasted Garlic Soup with Wheat Berry, Watercress, and Endive Salad image

This sophisticated soup and salad combination makes a cozy winter lunch for friends.

Number Of Ingredients 18

2 large heads garlic, unpeeled
2 tablespoons olive oil
2 medium onions, chopped
4 pounds boiling potatoes (preferably yellow-fleshed, such as Yukon Gold)
8 cups water
2 tablespoons Sherry vinegar*
1/2 cup scallion purée (recipe to follow)
6 cups water
1 cup wheat berries**
1 teaspoon salt
1 bunch watercress, coarse stems discarded, washed well and spun dry (about 3 cups)
4 Belgian endives, leaves separated and cut crosswise into 1/2-inch-thick slices
Garnish: 1/4 cup scallion purée
1/2 cup olive oil
2 cups chopped scallion greens (about 1 bunch), patted dry
Accompaniment:crusty bread
*available at specialty foods shops and some supermarkets

Steps:

  • Preheat oven to 400°F.
  • On a flat surface smash garlic heads, root ends up, with palm of hand to break up cloves, leaving peels intact. Put garlic on a sheet of foil and drizzle with 1 tablespoon oil. Sprinkle garlic with salt and pepper to taste and wrap tightly in foil. Bake garlic in middle of oven 40 minutes, or until very tender. Unwrap garlic carefully and let stand until cool enough to handle. In a bowl squeeze roasted garlic out of cloves by squeezing one end, discarding skin.
  • In a kettle cook onions in remaining tablespoon oil over moderate heat until softened. Peel and cut potatoes into 1/2-inch pieces and add to kettle with water. Bring water to a simmer and cook potatoes, covered, stirring occasionally, until very tender, about 20 minutes.
  • Transfer half of potatoes with cooking liquid to a bowl and in a blender, in batches, purée with garlic until smooth. Transfer mixture as puréed to kettle, stirring, and season soup with salt and pepper. Soup may be made 1 day ahead, cooled completely, and chilled, covered.
  • In a large bowl whisk together vinegar, scallion purée, and salt and pepper to taste.
  • In a saucepan bring water with wheat berries and salt to a gentle boil. Cook wheat berries, uncovered, adding more water if necessary, 1 1/4 hours, or until just tender. Drain wheat berries in a sieve and add to vinegar mixture, tossing to combine well. Let mixture cool. Wheat berry mixture may be made 1 day ahead and chilled, covered. Bring wheat berry mixture to room temperature before proceeding.
  • In a kettle heat soup over moderate heat, stirring, until hot. In a large bowl toss watercress and endives with wheat berry mixture and season with salt and pepper. Pour soup into 8 serving bowls and garnish each with 1/2 tablespoon scallion purée. Serve soup and salad with bread.
  • In a saucepan heat 1/4 cup oil over moderate heat and cook scallions just until tender and bright green in color (do not let brown). In a blender purée scallion mixture with remaining 1/4 cup oil until smooth. Season scallion purée with salt and pepper and let cool. Makes about 3/4 cup.

1 medium-size orange, peeled and sectioned
2 tablespoons chopped parsley

Steps:

  • Trim off and discard the stems of the watercress and the endives. Cut the endives into 2-inch lengths.
  • To make the dressing, put the mustard in a salad bowl. Add the vinegar. Start beating with a wire whisk while adding the oil. Add salt and pepper. Add the chopped onion. Blend well.
  • Add the watercress, endive, orange slices and parsley and toss well. Serve.

1 1/2 Red Delicious apples

3 tablespoons crumbled sliced almonds

Steps:

  • In a bowl whisk together the cider, the vinegar, the lemon juice, the mustard, the shallot, the Worcestershire sauce, the thyme, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Let the dressing stand at room temperature for 30 minutes to let the flavors develop. In another bowl toss the apples, cored and cut into 1/2-inch pieces, with 2 tablespoons of the dressing. In a large bowl toss together the endive slices and the watercress with the remaining dressing and divide the watercress mixture among the 6 salad plates. Top the watercress with the apples and the almonds and garnish the plates with the reserved endive tips.

1 cup soft goat cheese
1 1/4 cups riced or mashed potatoes
1/2 cup fresh bread crumbs
3/4 cup grated aged goat cheese
2 tablespoons minced scallion tops
1/4 cup minced flat-leaf parsley
3/4 teaspoon nutmeg
Salt and finely ground pink peppercorns
2/3 cup ground pecans
1 tablespoon safflower oil
1 tablespoon champagne vinegar
3 tablespoons olive oil
2 teaspoons minced shallots
1/2 teaspoon salt
A few grinds pink peppercorns
2 bunches watercress, washed and tough stems removed
2 heads Belgian endive, sliced into strips

Steps:

  • To make the cakes, place the soft goat cheese in a food processor and process until smooth. Transfer the cheese to a large bowl and add the potatoes and bread crumbs; mix until smooth. Add 1/4 cup of the grated cheese, scallions, parsley and nutmeg and toss with a fork until combined. Season to taste with salt and a few grinds of pink peppercorns.
  • Using your hands, form the mixture into balls about the size of golf balls. (You should have about 12.) Flatten the balls into disks about 1/2-inch thick. Place the ground pecans on a plate and coat each disk with pecans. Heat a large skillet over medium heat and add the oil. Add the potato cakes and cook until nicely browned (lower the heat if the nuts begin to burn), about 2 minutes per side. Transfer to a plate and keep warm.
  • To make the salad, whisk together the vinegar, olive oil, shallots, salt and pepper in a large bowl. Place the watercress and endive in the bowl and toss to coat. Add the remaining grated cheese and toss again.
  • Divide the salad between 4 plates and top each with a few warm potato cakes and serve immediately.

1 medium-size red onion, very thinly sliced (about 1 cup)
2 tablespoons fresh lemon juice
Kosher salt and freshly ground black pepper
2 large endives (about 2 cups)
2 small bunches of baby watercress, tough stems removed (about 4 cups)
1 tablespoon extra-virgin olive oil
2 ounces fresh goat cheese, crumbled

Steps:

  • In a small bowl, combine the onion, lemon juice, and a pinch of salt and pepper and set aside.
  • Meanwhile, chop the endives in a cross-hatched fashion, beginning at the base and working to the point. Place the endive and watercress in a large bowl. With a slotted spoon, transfer the onion to the bowl of greens. Whisk the oil in a steady stream into the lemon juice, pour over the greens, and toss, until coated well.
  • Divide the salad among 4 plates and crumble the goat cheese on top.

1 bunch watercress
2 large, compact heads Belgian endive
1/2 pound fresh, unblemished mushrooms
3/4 cup finely grated Gruyere or Swiss cheese
1/2 teaspoon finely chopped garlic
1 tablespoon imported mustard
1/2 cup sour cream
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons red-wine vinegar
1/4 cup corn, peanut or vegetable oil

Steps:

  • Trim off and discard the tough stem ends of the watercress. Put the tender leaves and remaining stems in a salad bowl.
  • Cut off the bottoms of each head of endive. Cut each head into 1-inch lengths and separate the leaves. There should be about 2 cups. Add it to the salad bowl.
  • Rinse the mushrooms and pat dry. Cut them into thin slices. There should be about 1 1/2 cups. Add to the salad bowl.
  • Sprinkle the greens with the cheese.
  • Blend in a separate bowl the garlic, mustard and sour cream. Add salt and pepper. Stir in the vinegar and the oil.
  • Pour the sauce over the salad greens and toss to blend.

5 large heads of Belgian endive, trimmed, sliced crosswise into 1-inch pieces (about 6 cups)
2 bunches watercress, thick stems trimmed
1 tablespoon apple cider vinegar
2 teaspoons Dijon mustard
6 tablespoons olive oil
1 teaspoon mustard seeds
1/2 cup walnuts, toasted
1/2 cup dried cranberries

Steps:

  • Place endive and watercress in large bowl. Mix vinegar and mustard in small bowl; slowly whisk in oil. Add mustard seeds. Season dressing with salt and pepper. Pour dressing over endive and watercress; toss to coat. Transfer salad to platter. Sprinkle with walnuts and cranberries and serve.

enough Italian bread cut into 1/2-inch cubes to measure 1 cup
1/4 cup olive oil
1 1/2 tablespoons fresh lemon juice, or to taste
1/2 teaspoon Dijon-style mustard
1 teaspoons minced fresh thyme leaves or 1/4 teaspoon crumbled dried
3 cups loosely packed watercress, the coarse stems discarded and the sprigs rinsed and spun dry
1 small Belgian endive, trimmed and sliced thin crosswise
2 ounces mild goat cheese such as Montrachet, crumbled (about 1/2 cup)

Steps:

  • In a small bowl toss the bread cubes with 1 tablespoon of the oil and salt to taste and on a baking sheet toast them in the middle of preheated 350°F. oven for 10 minutes, or until they are golden. Transfer the croutons to a salad bowl and let them cool. In another small bowl whisk together the lemon juice, the mustard, the thyme, and salt and pepper to taste, add the remaining oil in a stream, whisking, and whisk the dressing until it is emulsified. To the croutons add the watercress, the endive, the goat cheese, and the dressing and toss the salad well.

Watercress, Endive, and Grilled Peach Salad image

2 peaches, halved and pitted
1 tablespoon melted unsalted butter
2 tablespoons fresh lemon juice
2 tablespoons olive oil
Coarse salt and fresh ground pepper
2 Belgian endives, trimmed and cut crosswise into 1-inch pieces
2 bunches stemmed watercress (about 8 cups)
6 ounces bocconcini (small fresh mozzarella balls), halved, or sliced fresh mozzarella

Steps:

  • Heat a grill to medium-low. Brush both sides of the peaches with the melted butter.
  • Place the peaches on the grill; cover the grill, and cook until the peaches are charred and softened, 4 to 5 minutes per side. Quarter each half, and set aside.
  • In a large bowl, whisk the lemon juice and olive oil; season with salt and pepper.
  • Add the endives, watercress, and bocconcini. Toss to coat. Divide among 4 plates; arrange the peaches next to the salad.
