OPEN-FACED SEARED TUNA BURGER WITH WASABI MAYONNAISE



Open-Faced Seared Tuna Burger with Wasabi Mayonnaise image

These tuna burgers are best eaten very rare, so buy your sushi-quality tuna from a reputable fishmonger. The fish should be glistening and jewel-toned, with no trace of cloudiness. Wasabi paste, or Japanese horseradish, is distinctive not only for its bright green color, but also for its head-rushing heat. Combined with a little mayonnaise and low-fat sour cream, it becomes a perfect condiment for the tuna burgers. Wasabi is available in powder form, too, and can be mixed into a paste with a little water.

Number Of Ingredients 7

1 1/2 pounds sushi-quality tuna, coarsely chopped
Kosher salt and freshly ground black pepper
1/4 cup plus 1 tablespoon low-sodium soy sauce
3 tablespoons low-fat sour cream
1 tablespoon mayonnaise
2 teaspoons wasabi paste
4 sourdough rolls, bottoms only

Steps:

  • In a medium bowl, combine the tuna, salt and pepper, and 1 tablespoon of the soy sauce, and combine gently. Divide the mixture into 4 equal parts and shape each into a patty. Set aside.
  • In a small bowl, combine the sour cream, mayonnaise, and wasabi paste. Stir to combine thoroughly and set aside.
  • Spray a large nonstick skillet with nonstick cooking spray and heat over medium-high heat. Add the tuna burgers and sear for 2 minutes on each side. Remove from the heat, add the soy sauce, return to the heat, and sear for 1 more minute per side.
  • Place each on the bottom half of each roll, top with a tablespoon of dressing, and serve.

1 ½ lbs (750g) Ground turkey
2 cloves Garlic, minced
1 T (15ml) Ginger, fresh, grated
¼ cup (60ml) Teriyaki sauce (thick)
3 Green onions, finely chopped
¼ cup (60ml) Sesame seeds, toasted
½ cup (125ml) Dry bread crumbs
½ cup (125ml) Light mayonnaise
1 t (5ml) Wasabi paste

Steps:

  • ·In a large bowl, combine, ground turkey, garlic, ginger, teriyaki sauce, green onions, sesame seeds, and bread crumbs. ·Shape into 6 burger patties. ·Broil or grill burgers 4-6 inches (10-15cm) from broiler grill or over medium bbq for 10-12 minutes, turning once. ·Mix mayonnaise and wasabi paste; spread on 6 lightly toasted buns. ·Serve with sliced cucumber and watercress or arugula.

2 teaspoons hoisin sauce
2 teaspoons wasabi mustard
1/2 teaspoon rice vinegar or cider vinegar
1/8 teaspoon sugar
1/2 cup shredded napa cabbage
1 tablespoon shredded carrot
1 tablespoon chopped red radish
1 6- to 7-inch fat free flatbread or flour tortilla

Steps:

  • 1. Cook MORNINGSTAR FARMS GRILLERS ORIGINAL veggie burger according to package directions, except brush top with hoisin sauce halfway through cooking time.
  • 2. Meanwhile, in small bowl stir together mustard, vinegar and sugar. Add cabbage, carrot and radish. Toss until coated.
  • 3. Serve burger and cabbage mixture wrapped in flatbread.

TURKEY BURGER WITH WASABI MAYO



Turkey Burger with Wasabi Mayo image

2 1/4 pounds ground turkey
6 scallions (white and green parts), finely chopped
3 tablespoons soy sauce
1 tablespoon mirin
1 1/2 teaspoons dark sesame oil
1 teaspoon kosher salt, plus additional for seasoning
Vegetable oil, for brushing
Freshly ground black pepper
6 sesame seed hamburger buns
1 1/2 ripe Hass avocados, halved, pitted and thinly sliced
6 slices ripe tomato
1 1/2 cups alfalfa sprouts
13 cup pickled ginger
4 teaspoons water
4 teaspoons wasabi powder
1/2 cup mayonnaise

Steps:

  • Heat grill.
  • Mayonnaise: Stir water into the wasabi powder in a small bowl and let stand for 5 minutes. Stir in mayonnaise.
  • Burgers: Using your hands, gently mix turkey with scallions, soy sauce, mirin, sesame oil and 1 teaspoon of the salt in a large bowl. Divide turkey mixture into 6 equal portions, then into balls by gently tossing from hand to hand. Shape into 6 loosely packed 1-in. thick patties. Press the center of each patty so it is slightly thinner than the edges. Brush with oil and season the outside with salt and black pepper to taste.
  • Grill burgers, turning once, until cooked through, about 14 minutes total. Set burgers aside to rest while grilling the buns until lightly toasted. Season the avocado and tomato with salt to taste. Serve the burgers on the buns with the wasabi mayonnaise, avocado, tomato, sprouts and pickled ginger.
