Roasted Sweet Potato Salad with Warm Chutney Dressing image

A blend of traditional and fanciful holiday flavors, this side dish is really delicious, all my favorite holiday flavors. I invented this recipe to bring to my in-laws at Thanksgiving time because they needed a new way to serve sweet potatoes. No overly sweet marshmallows in this. We love it!

4 medium-sized sweet potatoes, peeled and cut into 1-inch pieces
5 tablespoons olive oil
1 tablespoon finely chopped fresh rosemary
1 teaspoon salt, plus more as needed
1 teaspoon freshly ground black pepper, plus more as needed
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1 cup raw green pumpkin seeds (also known as pepitas)
1 cup dried cranberries
1 cup chopped scallions (green and white)
1 cup julienned roasted red pepper
6 tablespoons balsamic vinegar
1/3 cup mango chutney
2 tablespoons Dijon mustard
2 tablespoons honey
2 garlic cloves, minced
1/4 cup olive oil

Steps:

  • Make the Salad: Preheat oven to 425 degrees F.
  • In a roasting pan, combine the potatoes, 3 tablespoons of the olive oil, rosemary, salt, pepper, cumin and ginger. Stir to combine and bake until the potatoes are fork-tender and golden brown, about 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a skillet over medium-high heat. Add the pumpkin seeds and cook, stirring, until toasted. Transfer the seeds to a plate and season with salt and pepper. In a small bowl, combine the cranberries, scallions, and red pepper and set aside.
  • Make the Dressing: Prepare the dressing by combining all the ingredients (except for the olive oil) in a small saucepan and heat. Remove from heat and whisk in the olive oil.
  • Assemble salad by gently tossing the roasted potatoes with the red pepper mixture. Add enough of the dressing to coat and garnish with toasted pumpkin seeds. Serve with extra dressing on the side.

6 slices bacon, medium dice
1 red onion, finely sliced
3 cloves garlic, finely chopped
3/4 cup white wine vinegar
1/2 cup olive oil
2 tablespoons granulated sugar
4 sweet potatoes, peeled, cooked and cut into 1-inch dice, kept warm
Salt and freshly ground pepper
4 green onions, finely sliced
1/4 cup chopped parsley

Steps:

  • Heat pan over high heat. Add bacon and cook until just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 tablespoons of the fat. Add onions and garlic and cook until soft. Remove pan from heat, add vinegar, olive oil, sugar and reserved bacon. Place the potatoes in a large bowl, pour the dressing over and season with salt and pepper. Fold in the green onions and parsley. Serve at room temperature.

1 cup water
1 pinch salt
1 lb sweet potato, peeled, halved lengthwise, then cut crosswise in 1/4 inch thick slices
8 ounces green beans, ends trimmed, beans cut in half
2 teaspoons vegetable oil
8 ounces Canadian bacon, thick sliced, stacked and cut in strips
1 red onion, cut in thin wedges
1/3 cup honey Dijon salad dressing

Steps:

  • Line a serving plate with baby spinach leaves.
  • Add water and salt to skillet. Bring to a boil.
  • Add sweet potatoes and green beans to skillet and cook until sweet potatoes are tender, about 7 minutes.
  • Drain potatoes and green beans in colander.
  • Wipe skillet and add vegetable oil. Heat over medium heat.
  • Add Canadian bacon and onion to hot oil and sauté 5 minutes or until bacon is lightly browned and onions are tender.
  • Spoon sweet potatoes, green beans, bacon and onions over spinach leaves.

4 eggs
2 large sweet potatoes , skin left on, cut into slices on the diagonal
85g chorizo , cut into long slices on the diagonal
3 tbsp olive oil
1 garlic clove , crushed
juice ½ lemon
130g bag mixed salad leaves
100g pack cherry tomato , halved, use vine if you can

Steps:

  • Put the eggs and potatoes into a pan of cold water and bring to the boil. (Covering the pan with a lid will speed this up.) Uncover and boil for 6 mins, then lift out the eggs and cool in cold water. Leave the potato in the pan for another 4 mins, or until just tender when pricked in the middle with the tip of a knife. Drain and tip into a bowl.
  • Heat a griddle pan until very hot. Toss the potato and chorizo in 1 tsp oil and season well. Griddle the potato for 2 mins on each side until charred. Meanwhile, peel and quarter the eggs - the yolks should still be a little soft in the middle.
  • Tip the potato back into the bowl, then griddle the chorizo for a couple of mins until it crisps up and releases its red oil. Lift into the bowl, leaving the juices behind. Take the pan off the heat, then add the garlic and the rest of the oil, then sizzle for 30 secs. Squeeze in the lemon juice. Scatter the salad and tomatoes over 4 plates, top with the potato, egg and chorizo, then drizzle over the hot dressing.

4 large sweet potatoes, peeled and diced into bite size pieces
1 large red pepper, rough chopped in bite size pieces
1 large onion, rough chopped in bite size pieces
4 scallions, diced (white and green parts)
8 slices smoked bacon, I like the thick cut for this dish
1/2 cup celery, diced
1/2 cup pecans, rough chopped
1 tablespoon fresh parsley
1 tablespoon fresh thyme

olive oil, to roast the vegetables in
salt and pepper
3 tablespoons white wine vinegar
3 tablespoons maple syrup
1 tablespoon Dijon mustard
2 tablespoons vegetable oil or 2 tablespoons canola oil
1 tablespoon of the bacon fat
1 small shallot, fine diced

Steps:

  • After dicing the red pepper, onion and sweet potatoes; toss with a little olive oil, salt and pepper in a large bowl. Roast in a 400F oven on a cookie sheet, covered with parchment paper or foil for easy clean up. They will take about 20 minutes. While your vegetables cook, dice your bacon and saute on medium heat until nice and crisp. Remove and drain on a paper towel and reserve 1 tablespoon of the bacon dripping for the salad dressing.
  • As the vegetables and bacon cook, lets make the dressing. In a small bowl combine all the ingredients and whisk in the oil to make a nice vinaigrette.
  • Toss the roasted vegetables (except the potatoes), with the scallions, celery, bacon, pecans fresh herbs and vinaigrette and mix well. Now add the potatoes in and toss lightly.
  • This is a great potato salad and great for BBQs.

1 cup orange juice (preferably freshly squeezed)

  • Bring a large pot of salted water to a boil over high heat. Add the sweet potato pieces. 2 tablespoons mango chutney
2 teaspoons olive oil, preferably extra-virgin
1 teaspoon fresh lemon juice
2 1/2 cups (packed) watercress
1/2 cup sliced red onion

Steps:

  • 1. In a small saucepan, whisk the orange juice and cornstarch until blended. Bring to a boil over medium-high heat, stirring constantly, until the mixture is smooth and thickened, 4 to 5 minutes. Pour the hot orange juice into a glass measuring cup, stir in the raisins, and refrigerate until chilled (put the mixture in the freezer, if desired, to speed up the process). 2. Place the sweet potatoes in a medium saucepan, add water to cover, and bring to a boil covered over high heat. Reduce the heat to medium-low and simmer until tender, about 12 minutes. 4 medium shallots, quartered, root ends left intact
2 medium sweet potatoes, cut into 1/2-inch chunks (about 1 pound)
5 tablespoons grapeseed oil
Kosher salt and freshly ground black pepper
1/3 cup sliced almonds
2 tablespoons unseasoned rice vinegar
1 tablespoon natural almond butter
1 tablespoon grated fresh ginger
1 tablespoon white miso
1 tablespoon soy sauce
2 teaspoons honey or agave
1 tablespoon toasted sesame oil
2 heads frisee, trimmed and torn into bite-size pieces (about 8 cups)
8 ounces sliced Boar's Head Ichiban Teriyaki¿ Style Chicken, cut into strips

Steps:

  • Put a baking sheet on the lower rack of the oven and preheat the oven to 400 degrees F.
  • Toss the shallots and sweet potatoes with 1 tablespoon of the grapeseed oil and some salt and pepper in a large bowl. Transfer the vegetables to the hot baking sheet and roast, tossing once about halfway through, until tender, 20 to 22 minutes.
  • Meanwhile, spread the almonds on a small baking sheet and toast until golden, 4 to 5 minutes. Set aside to cool.

  • Place the diced sweet potatoes and potatoes in a Dutch oven, cover with water, and bring to a boil. Boil until the potatoes are fork tender, but not mushy, about 20 minutes. Drain and cool the cooked potatoes slightly.
  • Meanwhile, mix together the mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt and pepper in a large bowl. Add the bacon, green onions, red onion and cooked potatoes and toss to coat. Serve garnished with extra chives or green onion.

Sweet Italian Sausage With Warm Potato Salad for One. image

Ok. This one's more for the methods involved than the actual meal which is nothing spectacularly diffrent but very tastey and quick. I'm touting the tricks/shortcuts involved as much as the actual recipe. You'll want a Microwave, plus one small bowl and a small skillit. The warm potato salad will stand on it' own as a side. It's quick and dirty but sets well in the tummy.

2 links italian sweet sausage, much pierced with a knife point
1 medium russet baking potatoes
3 tablespoons very finely diced onions (red is nice)
2 tablespoons bell peppers, finely diced or 2 tablespoons smoked red bell peppers (from a jar)
1 1/2 tablespoons sweet pickle relish
1 teaspoon celery seed
2 -3 tablespoons Miracle Whip or 2 -3 tablespoons mayonnaise, plus
1 dash lemon juice
salt and pepper
water, for steaming/cooking the links
1 tablespoon dehydrated onion (optional)
1/2 teaspoon fennel seed (optional)

Steps:

  • Microwave the potato untill it's soft when squeezed, Mine took 8 minute.
  • Let it cool a bit.
  • Put the well punctured links in the skillet with water to about 1/2 inch deep.
  • Add the optional dehydrated onions and fennel seed to the water and bring to a slow boil, for about 15 minute.
  • Add a bit more water if it gets dry but let it evaporate as much as it can.
  • In the bowl put the diced onion, relish, bell pepper, and celery seed.
  • Scoop the cooked potato out of the skin into the bowl.
  • Add a couple TBS of the Miracle whip or{You know whose} Real Mayonaise and the splash of lemon juice.
  • Mash together in the bowl adding more Mayo as needed to moisten.
  • Don't over mash, you'll like it better with some texture.
  • Salt N pepper to taste.
  • Refrigerate only for the time it takes the links to cook through.
  • Plate up everything with a salad and maybe some chutney.
  • I used my onion jam (#54605,hint hint).
  • The leftover potato salad is great cold Enjoy.

50g salted capers
700g waxy yellow fleshed new potatoes , such as Charlottes, cut into medium chunks
1 large onion , thinly sliced
6 tbsp extra-virgin olive oil
100g large unpitted green olives
2 tbsp caster sugar
4 tbsp white wine vinegar

Steps:

  • Rinse the capers to remove the salt crystals then leave them in fresh cold water for 30 minutes, changing the water frequently, until they no longer taste salty.
  • Mix the potatoes and onion and gently fry in the olive oil in a deep non-stick sauté pan for about 7 minutes. Season with salt and freshly ground black pepper, then take off the heat and cover while you prepare the olives. That way the potatoes continue to soften without overcooking.
  • Cut strips from the olives, working round the stone to remove all the flesh, then add to the potatoes with the capers and 200ml/7floz water. Return to the heat, cover and leave to cook for 10-15 minutes until the potatoes are almost done.
  • Dissolve the sugar in the vinegar and add to the potatoes in the pan. Bring to the boil, cook for a minute, then remove from the heat. Serve lukewarm.

1 australian leg of lamb, butterflied (see tip)
fresh ground pepper, to taste
sea salt, to taste
2 lbs sweet potatoes (2 large or 3 medium)
2 tablespoons olive oil
2 bunches arugula, torn
1 small red onion, halved and thinly sliced
6 ounces feta cheese, crumbled
1/2 orange, juice and zest of
2 tablespoons red wine or 2 tablespoons sherry wine vinegar
1/3 cup extra virgin olive oil
salt & freshly ground black pepper, to taste

Steps:

  • Trim lamb and season with salt and pepper.
  • Preheat oven to 375°F.
  • To start salad peel and dice the potatoes into ½ inch pieces and toss with the olive oil to coat.
  • Place on a baking sheet and cook for 20-30 minutes, until tender and golden brown.
  • Heat a barbecue or grill pan to medium high heat and cook lamb for 5 minutes on each side.
  • Cover barbecue or transfer lamb to the oven and cook for 8-10 minutes or until medium-rare and internal temperature reaches 130-140°F.
  • Cover loosely with foil and allow to rest for 15 minutes.
  • To finish the salad, while lamb is resting, whisk the dressing ingredients together and season to taste.
  • Toss the arugula, onion and warm potatoes together in a bowl, add half the dressing and mix well.
  • Place on a platter or individual plates.
  • Slice lamb thinly across the grain and arrange over the salad.
  • Scatter with the feta cheese and drizzle with remaining dressing.
  • TIP: To butterfly lamb, remove netting from boneless leg and open as flat as possible. Pound or use a knife to open out to desired thinness.

3 tablespoons maple syrup
2 teaspoons Dijon mustard
3 tablespoons olive oil
2 pounds sweet potatoes, peeled and cut into 1-inch pieces
1 large onion, thinly sliced
1 slice ham, 1/2 inch thick (about 8 ounces), cut into 1/2-inch pieces
3/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped walnuts, toasted

Steps:

  • 1. Heat oven to 400 degrees F. Stir together vinegar, maple syrup and mustard. Slowly whisk in 2 tablespoons of the olive oil; set aside. 2. Place sweet potatoes, onion and ham in a large bowl. Drizzle with remaining 1 tablespoon olive oil; stir until coated. Spread on a rimmed baking sheet; sprinkle with thyme, salt and pepper. Roasted Sweet Potato Salad with Warm Chutney Dressing image

A blend of traditional and fanciful holiday flavors, this side dish is really delicious, all my favorite holiday flavors. I invented this recipe to bring to my in-laws at Thanksgiving time because they needed a new way to serve sweet potatoes. No overly sweet marshmallows in this. We love it!

4 medium-sized sweet potatoes, peeled and cut into 1-inch pieces
5 tablespoons olive oil
1 tablespoon finely chopped fresh rosemary
1 teaspoon salt, plus more as needed
1 teaspoon freshly ground black pepper, plus more as needed
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1 cup raw green pumpkin seeds (also known as pepitas)
1 cup dried cranberries
1 cup chopped scallions (green and white)
1 cup julienned roasted red pepper
DRESSING:
6 tablespoons balsamic vinegar
1/3 cup mango chutney
2 tablespoons Dijon mustard
2 tablespoons honey
2 garlic cloves, minced
1/4 cup olive oil

Steps:

  • Make the Salad: Preheat oven to 425 degrees F.
  • In a roasting pan, combine the potatoes, 3 tablespoons of the olive oil, rosemary, salt, pepper, cumin and ginger. Stir to combine and bake until the potatoes are fork-tender and golden brown, about 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a skillet over medium-high heat. Add the pumpkin seeds and cook, stirring, until toasted. Transfer the seeds to a plate and season with salt and pepper. In a small bowl, combine the cranberries, scallions, and red pepper and set aside.
  • Make the Dressing: Prepare the dressing by combining all the ingredients (except for the olive oil) in a small saucepan and heat. Remove from heat and whisk in the olive oil.
  • Assemble salad by gently tossing the roasted potatoes with the red pepper mixture. Add enough of the dressing to coat and garnish with toasted pumpkin seeds. Serve with extra dressing on the side.
