FRIED CABBAGE WITH BACON AND ONION image

I LOVE FRESH CABBAGE AND MY FRIENDS HAVE HAD A BUMPER CROP THIS YEAR. I love it fried and this is a great recipe. Hope you enjoy this Southern Recipe.

Number Of Ingredients 7

1 lb good bacon, finely chopped
1 medium onion, chopped
2 lb cabbage, finely diced
1/4 tsp red pepper flakes
1/2 tsp salt
1/2 tsp black pepper
2 small pinches of sugar

Steps:

  • 1. Fry bacon in large fry pan until it is crisp and brown. Drain and set aside. Keep bacon drippings to use later.
  • 2. With adequate amount of bacon drippings in fry pan (about 1 cup), Add onion to bacon drippings and stir until translucent. ADD: Chopped cabbage, pepper flakes, salt, and black pepper. Stirring until all of cabbage is coated, more drippings may be necessary to prevent sticking. ADD: Crumbled bacon bits, pinches of sugar (optional) but the sugar brings out the flavor. COVER and cook over LOW heat until cabbage is tender.
