WARM RUM RAISIN CIDER
This sweet and soothing beverage makes a nice after dinner drink. Recipe is from The Ski Country Cookbook, by Barbara Scott-Goodman.

Steps:
- In large saucepan, heat butter over medium heat.
- Add sugar, raisins, cloves and cinnamon sticks.
- Cook, stirring, until sugar has caramelized, 5 minutes.
- Remove from the heat; stir in cider.
- Return to heat, and bring just to simmer, stirring.
- Remove from heat, stir in rum; ladle into cups.
- Garnish each drink with an apple slice and a cinnamon stick.

HOT APPLE CIDER WITH RUM

- Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes. Remove from the heat and add the rum. Discard the apple. Ladle into mugs and garnish each with a cinnamon stick. Serve immediately.

Here's a tart fruity rum raisin sauce from Elizabeth Halls in Courtenay, British Columbia that can make an ordinary ham steak or slice something to celebrate!

- In a large saucepan, combine the raisins, 4 tablespoons water, orange juice and pineapple. Bring to a boil. Combine cornstarch and remaining water until smooth; gradually stir into raisin mixture. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in extract if desired. , Cut the ham steak into four pieces. In a large skillet coated with cooking spray, cook ham over medium heat for 1-2 minutes on each side or until browned. Serve with raisin sauce.

CHILLED RUM & RAISIN RICE PUDDING

- Combine the milk, cream, rice, vanilla, sugar and lemon zest in a heavy-based saucepan. Bring gently to a boil, stirring continuously. Once bubbling, turn the heat to low and gently simmer for about 45 mins, stirring frequently to stop it sticking, until the rice is just tender. Lay a sheet of cling film directly on the surface of the rice, cool to room temperature, then chill until cold.
- To serve, combine the syrup ingredients in a small pan. Melt together, then bubble until syrupy for 4-5 mins. Cool for a few mins while you loosen the chilled rice pudding with some single cream (it will have become more solid) - just gently stir in a splash at a time until it's spoonable. Divide between serving bowls and top with some warm rum & raisin syrup.
